Sugar Snap Peas with Bacon and Parmesan image

4 bacon strips (I used a low-salt thin-cut pork bacon)
1 lb. fresh sugar snap peas, stem ends and strings removed
½ cup (2 oz) red onions, finely diced
1 oz. parmesan cheese (parmigiano reggiano), shaved
1 tbsp fresh lemon juice
¼ tsp black pepper

Steps:

  • In a large cold frying pan, lay out the bacon strips without overlapping. Turn on the heat to medium and cook the bacon, flipping occasionally (using tongs) until golden-brown and crisp, about 7-10 minutes. Remove from the pan and place the bacon onto a paper-towel lined plate. Set aside.
  • Pour the excess bacon grease from the pan into a heat safe container for disposal, leaving a thin layer of oil behind. Set the stovetop temperature to medium-high heat and add the snap peas into the frying pan.
  • Sauté the snap peas until tender-crisp, about 3-5 minutes. Remove from heat and stir in the remaining ingredients (red onions, parmesan, lemon juice, and black pepper).
  • Place into a serving dish and top with chopped or crumbled bacon. Best served immediately.

3 tablespoons STAR Roasted Garlic Olive Oil ((see notes if using regular olive oil))
1/2 cup panko crumbs
1/4 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley
salt and fresh ground pepper (, to taste)

Steps:

  • Preheat oven to 400F.
  • Grease a baking sheet with cooking spray or line it with parchment paper and set aside.
  • Combine sugar snap peas and olive oil in a mixing bowl and toss to coat.
  • In a separate bowl mix together panko crumbs, parmesan cheese, parsley, salt and pepper.
  • Add the panko mixture to the sugar snap peas and toss to combine.
  • Arrange in previously prepared baking sheet in a single layer.
  • Roast for 15 to 20 minutes, or until crispy, turning once during cooking.
  • Remove from oven and serve immediately.

kosher salt
1 lb sugar snap pea, stem ends and strings removed
extra-virgin olive oil
1 garlic clove, minced
1 pinch crushed red pepper flakes
1/4 lb prosciutto, thinly sliced thin and cut crosswise into 1/4-inch strips (optional, pancetta, bacon or vegetarian bacon will work)
1/4 cup red wine vinegar
2 cups baby arugula
1/2 small red onion, julienned
1/4 cup pecorino cheese, shaved
8 -10 fresh mint leaves, thinly sliced (*fresh* mint only!)
cracked black pepper, to taste

Steps:

  • To blanch the peas, bring a large pot of well-salted water to a boil. Prepare a large bowl of well-salted ice water and set it nearby.
  • Add the peas to the boiling water, let the water return to a boil, then cook for 2 more minutes. Remove the peas from the boiling water and immediately plunge them into the ice water. When the peas are cold, drain them and lay on paper towels to dry.
  • Cut the peas in half lengthwise, then set aside.
  • Coat a medium saute pan with olive oil, then add the garlic and red pepper flakes. Set the pan over medium heat and cook for 2 to 3 minutes. Remove the garlic with a slotted spoon and set aside.
  • Add the prosciutto and cook for 3 to 4 minutes, or until crispy. Add the red wine vinegar. Turn off the heat.
  • In a large bowl, combine the arugula, snap peas, onion and garlic.
  • Scatter the crispy prosciutto on top and any juices from the pan.
  • Add the pecorino and mint.
  • Garnish with cracked black pepper.
