1 3/4 cups plain flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 large eggs, well beaten
4-16 tablespoons unsalted butter, melted
1 1/2 cups milk

Steps:

  • In a large bowl whisk together flour, baking powder, sugar and salt. In another bowl, whisk together eggs, butter (the more you use the crunchier they will be), and milk. Warm melted butter may separate into flaky clumps when mixed with milk. Stick the bowl into the microwave for a minute then stir. The lumps should go away. Make a well in the center of the dry ingredients and pour in the liquid mixture. Gently whisk together just until combined. Baking time and amount of batter will depend on your individual waffle maker. I use about 2/3 cup and they cook in about 3-4 minutes. No need for cooking spray or oil because of the butter in the mix.

For a long time I tried to find a recipe for waffles that would make them crunchy on the outside, not limp and soggy. These are great, I got the recipe from "The Joy of Cooking"

1 tablespoon sugar
1/2 teaspoon salt

4 -16 tablespoons unsalted butter, melted
1 1/2 cups milk

Steps:

  • In a large bowl whisk together flour, baking powder, sugar, and salt.
  • In another bowl whisk together eggs, butter (the more butter you use the crunchier they'll be, I find that 8 tbsp is perfect), and milk.
  • Warm melted butter may separate into flaky clumps when mixed with milk. I just stick it in the microwave for 1 minute then stir and the lumps will go away.
  • Make a well in the center of the dry ingredients and pour in the egg/milk mixture.
  • Gently whisk together just until combined.
  • Baking time and amount of batter will depend on your individual waffle maker. I use about a cup of batter for 2 waffles and mine take about 3 1/2 minutes to bake. I like to bake mine until they are a dark golden brown. Cooking spray usually isn't needed if you use 8 tbsp or more butter in the batter.

This is the most delicious waffle imaginable. I will never buy frozen waffles or use instant mix again. These are so buttery and crunchy, I ate them plain. I wanted to keep it simple so I got this from Joy of Cooking. Never fails. I promise you won't be disappointed. If I can stop eating them (which I doubt), I will freeze them for later. Enjoy!!!!!

  • Ladle the batter into a waffle iron.

  • Serve immediately.

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter, shortening and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Serve with maple syrup, butter, sugar or fruit preserves.
