APPLE-CINNAMON CRUMBLE BARS

These very simple but impressive bars use boxed cake mix for the base, streusel on top and apple butter in between for a sweet snack that's not too sugary.

Cooking spray
1/2 cup (1 stick) unsalted butter
1 box yellow cake mix for two 9-inch rounds
1 large egg
1 cup apple butter
1/2 cup unsweetened instant or quick-cooking oats
1/4 teaspoon ground cinnamon
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square pan with a piece of aluminum foil (about 17 inches long), leaving a 2-inch overhang on each side. Lightly coat the bottom and sides of the lined pan with cooking spray.
  • Melt half the butter (4 tablespoons) in a medium bowl in the microwave, about 45 seconds. Set aside 1 cup of the cake mix, and add the remaining mix to the melted butter. Add the egg and 1 tablespoon water, and mix with a spatula until well blended. Let stand a few minutes until the mixture is no longer tacky to the touch. Pat the dough in an even layer in the pan. Bake until the edges are lightly set to the touch and the crust is lightly browned all over, about 20 minutes. Let cool for 5 minutes.
  • Meanwhile, melt the remaining butter in a medium bowl in the microwave, about 45 seconds. Add the reserved cake mix, oats and cinnamon, and mix with a fork until crumbly.
  • Spread the apple butter over the cooled crust, spreading it to the edges. Scatter the crumb mixture over the apple butter. Return the pan to the oven and continue to bake until the crumbs are golden brown and firm, about 30 minutes more. Cool completely in the pan.
  • Using the foil overhang, lift the bars out of the pan and peel the foil away from the edges. Dust with confectioners' sugar, and cut into 16 bars.

3/4 cup (1 1/2 sticks) butter, softened
1 3/4 cups all-purpose flour
1/3 cup granulated sugar
1/4 teaspoon salt
1 2/3 cups (10-oz. pkg.) NESTLE® TOLL HOUSE® Dark Chocolate Morsels, divided
1 can (14 oz.) NESTLE® CARNATION® Sweetened Condensed Milk
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)

Steps:

  • PREHEAT oven to 350°F. Grease 13 x 9-inch baking pan.
  • BEAT butter in large mixer bowl until creamy. Beat in flour, sugar and salt until crumbly. With floured fingers, press 2 cups crumb mixture onto bottom of prepared baking pan; reserve remaining mixture.
  • BAKE for 10 to 12 minutes or until edges are golden brown.
  • COMBINE 1 cup morsels and sweetened condensed milk in small, heavy-duty saucepan. Warm over low heat, stirring until smooth. Stir in vanilla extract. Spread over hot crust.
  • STIR nuts and remaining 2/3 cup morsels into reserved crumb mixture; sprinkle over chocolate filling. Bake for 25 to 30 minutes or until center is set. Cool in pan on wire rack. Cut into bars.

1 cup butter, softened
1 1/2 cups firmly packed light brown sugar
1 egg
2 cups flour
3/4 teaspoon baking soda
3/4 teaspoon cinnamon, divided
2 cups quick oats
1 cup chopped walnuts
2 cups semi-sweet chocolate chips, divided
1 (14 ounce) can sweetened condensed milk
1 tablespoon instant coffee

Steps:

  • Preheat oven to 350°F Line a 15x10x1-inch baking pan with foil.
  • In a medium bowl, using an electric mixer set on high speed, beat butter and brown sugar until light and creamy.
  • On medium speed, beat in egg.
  • In another bowl, combine flour, baking soda and 1/2 teaspoon cinnamon.
  • Gradually add flour mixture to butter mixture and mix until dough is smooth. Stir in oats and walnuts.
  • Reserve 1 cup dough for topping. Press remaining dough into bottom of prepared pan.
  • In a medium saucepan, heat 1 1/2 cups chocolate chips, condensed milk, instant coffee and remaining cinnamon over medium heat; stir until smooth.
  • Spread mixture evenly over the dough in the pan, smoothing the surface with a spatula; crumble reserved dough on the top.
  • Sprinkle with the remaining chocolate chips. Bake until lightly browned, about 20 minutes. Cool completely on a wire rack. Lift foil to remove from pan; cut into 2-inch bars.

S'MORES COOKIE CRUMBLE BARS

8 sheets graham crackers, finely ground, or 1 cup store-bought graham cracker crumbs
1 1/2 cups all-purpose flour
2/3 cup confectioners' sugar
1/2 teaspoon kosher salt
1 1/2 sticks (6 ounces) unsalted butter, softened
1 large egg, at room temperature
1/2 teaspoon vanilla extract
One 4.4-ounce bar milk chocolate, such as Hershey's, broken into pieces
1 cup marshmallow creme

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking dish with aluminum foil or parchment, leaving a 2-inch overhang on the ends of the pan for lifting out the finished bars.
  • Stir together the ground grahams, flour, sugar and salt in a small bowl. Cream the butter, egg and vanilla in a medium bowl with an electric mixer on low speed until creamy and combined; you are not trying to beat a great amount of air into the mixture. Add the graham mixture and continue to beat on low speed until just combined and large crumbles form.
  • Place about two-thirds of the mixture in the prepared pan and firmly press down. Reserve a few pieces of the chocolate for garnish (about 1/2-ounce), and then scatter the rest of the chocolate pieces over the base. Drop spoonfuls of the marshmallow creme over the chocolate, stretching the creme so it covers more of the base. Drop the remaining cookie batter in small clusters over the chocolate and creme so the creme is mostly covered.
  • Bake until the dough is golden brown and the cookie in the center of the pan feels firm, about 40 minutes. The marshmallow creme will puff through the crumble and brown, and it will deflate as it cools. Cool in the pan at least 15 minutes.
  • Using the foil overhang, lift the crumble bars out of the pan. Melt the reserved pieces of chocolate in the microwave in 30-second intervals until smooth, and then drizzle over the cookies. Cut into sixteen 2-by-2-inch squares. Serve warm or at room temperature.

1/4 cup granulated sugar
1 tablespoon ground cinnamon
1 tablespoon instant yeast
2 teaspoons fine sea salt
1 3/4 cups whole milk, at room temperature
1 tablespoon vanilla extract
2 large eggs, at room temperature
4 tablespoons unsalted butter, cut into pieces, at room temperature, plus more for greasing the baking pan
Nonstick cooking spray
1 cup granulated sugar
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, melted and cooled to room temperature
Crumble, frozen, recipe follows
2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
5 cups all-purpose flour
1 pound unsalted butter, melted
1 cup brown sugar
1 cup granulated sugar
1/2 teaspoon salt

Steps:

  • For the dough: Whisk together the bread flour, mashed potato flakes, granulated sugar, cinnamon, yeast and salt in a large bowl. In the bowl of a stand mixer fitted with the dough hook, add the milk, vanilla and eggs; whisk to break up the eggs. Add the dry ingredients to the wet ingredients and mix until the dough just comes together.
  • Add the butter, one piece at a time, mixing until incorporated. Continue to mix until the dough comes together in a ball. If the dough is sticking a lot to the sides of the bowl, add a little more flour, 1 tablespoon at a time, until most of the dough no longer sticks. (A little sticking to the bottom of the bowl, beneath the hook, is fine. Adding too much flour will make the buns dry, so use a light hand.)
  • Transfer the dough to a lightly floured work surface and knead by hand until shiny and smooth, 5 to 10 minutes. (The dough should be very soft but not wet and sticky; a little tacky is OK.) Place the dough in a large bowl sprayed with nonstick spray; lightly spray the top of the dough. Cover with plastic wrap and let rise in a warm corner of your kitchen until doubled in size, 45 to 60 minutes.
  • For the filling: Stir together the granulated sugar and cinnamon in a small bowl.
  • Roll the dough out into a long rectangle, about 10-by-21 inches. Brush with the melted butter, then sprinkle with the cinnamon sugar, followed by 4 cups of frozen Crumble. Starting from a long side, roll the dough into a jelly roll.
  • Cut the log into 2-inch pieces and place, cut-side down, in a buttered 10-inch square baking pan. Sprinkle 1 cup of Crumble over the top. Cover with plastic wrap and let rise until puffy and nearly doubled in volume, 30 to 45 minutes
  • Preheat the oven to 350 degrees F. Bake the buns, loosely wrapped in foil, for 15 minutes. Remove the foil and bake until golden brown on top, about 5 more minutes.
  • For the glaze: Meanwhile, combine the confectioners' sugar, milk and vanilla in a small bowl and stir until smooth.
  • While the buns are still warm (but not hot), drizzle with the glaze. Serve warm.
  • Combine the all-purpose flour, melted butter, brown sugar, granulated sugar and salt in a large bowl. Stir together and then work with a spoon or your fingers until the butter is absorbed and the mixture forms clumps. Place in a resealable plastic bag and freeze until needed.
