1 cup fresh blueberries

Steps:

  • For the cake:
  • Preheat the oven to 350 degrees F. Butter and flour a 9-inch round baking pan.
  • For the streusel:
  • Combine the granulated sugar, brown sugar, cinnamon, and nutmeg in a bowl. Stir in the melted butter and then the flour. Mix well and set aside.
  • For the cake:
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed for 4 to 5 minutes, until light. Reduce the speed to low and add the eggs 1 at a time, then add the vanilla, lemon zest, and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, add the flour mixture to the batter until just combined. Fold in the blueberries and stir with a spatula to be sure the batter is completely mixed.
  • Spoon the batter into the prepared pan and spread it out with a knife. With your fingers,
  • crumble the topping evenly over the batter. Bake for 40 to 50 minutes, until a cake tester comes out clean. Cool completely and serve sprinkled with confectioners' sugar.

3/4 cup all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
2 teaspoons white vinegar
1/2 teaspoon salt
10 tablespoons cold unsalted butter, cut into small pieces
6 cups blueberries
3/4 cup granulated sugar
2 wide strips lemon zest
1 tablespoon fresh lemon juice
3 tablespoons whole-wheat flour
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
3/4 cup coarsely chopped almonds, walnuts or hazelnuts, toasted
1/2 cup packed light brown sugar
1/2 cup whole-wheat flour
4 tablespoons unsalted butter, melted
Pinch of salt

Steps:

  • Make the dough: Pulse the whole-wheat flour, all-purpose flour, granulated sugar, vinegar, salt and about one-third of the butter in a food processor until the butter is incorporated. Add the remaining butter and pulse until it is in pea-size pieces. Add 2 tablespoons ice water and pulse until the dough just comes together. Pinch a small piece of dough: If it doesn't hold together, add up to 2 more tablespoons ice water, pulsing, 1 tablespoon at a time. Turn the dough out onto a large piece of plastic wrap and press into a ball. Pat into a 1/2-inch-thick disk and wrap tightly. Refrigerate until firm, at least 1 hour.
  • Roll the dough into a 12-inch round on a lightly floured surface or between 2 pieces of lightly floured parchment paper. (If the dough becomes soft, refrigerate until firm.) Center the dough in a 9-inch pie plate. Fold the overhang under itself and crimp the edges; refrigerate 30 minutes. Meanwhile, preheat the oven to 350 degrees F.
  • Lightly pierce the bottom and sides of the crust with a fork, then line with parchment paper or foil and fill with pie weights or dried beans. Bake 20 minutes, then remove the parchment and weights and continue baking until lightly golden, about 10 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the filling: Bring 3 cups blueberries, 1/2 cup granulated sugar and the lemon zest to a simmer in a saucepan over medium heat, crushing the berries slightly with a wooden spoon. Cook, stirring occasionally, until reduced by half, about 20 minutes. Discard the lemon zest. Transfer the blueberry mixture to a bowl; stir in the remaining 3 cups berries and 1/4 cup granulated sugar, the lemon juice, whole-wheat flour, nutmeg and salt. Let cool completely.
  • Make the topping: Combine the nuts, brown sugar, whole-wheat flour, butter and salt. Squeeze the mixture into clumps with your hands and scatter on a baking sheet. Freeze 30 minutes.
  • Increase the oven temperature to 375 degrees F. Pour the blueberry filling into the crust and top with the frozen crumb topping. Transfer to a baking sheet and bake until the filling is bubbly and the topping is golden brown, 45 to 55 minutes. (If the topping browns too quickly, cover it with foil.) Transfer the pie to a rack and let cool overnight, or at least 4 hours, so the filling sets.

1 cup milk, I use 2 percent
2 eggs, beaten
1 1/2 cups fresh blueberries or 1 1/2 cups frozen blueberries
1 cup sugar
1/2 cup flour
1/4 cup butter

Steps:

  • Sift flour,sugar,baking powder and salt. Cut in butter using a pastry cutter or two knives. ( I pulsed it all in my food processor in the order listed).
  • Mix together milk and eggs and mix into to dry ingredients.
  • Fold in berries and spread in a 13x9 greased or sprayed pan. Cover and refrigerate overnight.
  • Mix together topping ingredients and keep in a small bowl until ready to bake.
  • In the morning or next day, Spread topping over batter and bake uncovered for about 25 minutes at 375 degrees until topping is lightly browned and a toothpick comes out clean when inserted in the center of the cake.

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 10-inch tube pan. Cream butter and sugar in large mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the vanilla extract and lemon juice. Beat very well.
  • Combine the flour, baking soda, baking powder and salt in a separate bowl. Alternately add the dry ingredients and the sour cream into the butter mixture. *Begin and end with the dry
  • Combine sugars, flour and cinnamon in a bowl. Cut in chilled butter with a pastry blender until mixture resembles coarse crumbs. You can also use an electric mixer with a paddle attachment. *You will have some extra streusel--keep in freezer for quick fruit tart another day!*

  • In a saucepan over medium low heat add blueberries, sugar mixed with cornstarch, vanilla bean seeds and lemon juice. Heat to a boil, stirring occasionally. Cool completely. Serve with cake, over ice cream.

1/2 c brown sugar
1/2 c flour
1/2 c butter
1/2 tsp cinnamon
1/2 tsp nutmeg

CAKE
2 c flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
3/4 c sugar
1/4 c butter, softened
1 large egg
1 tsp vanilla extract
1/2 c buttermilk
3 c fresh blueberries (or frozen, but do not thaw!)

Steps:

  • 1. Preheat the oven to 375 degrees. Grease a 9″ square pan and set aside. In a medium bowl, combine the first 6 ingredients, mixing together with a fork until crumbly; set aside.
  • 2. In another medium bowl, stir together the flour, baking powder, salt and cinnamon.
  • 3. In a large bowl, cream together the remaining butter and sugar. Blend in the egg and vanilla until smooth. Blend in the flour mixture and cream alternately, beginning and ending with the flour (flour, milk, flour, milk, flour). Fold in the blueberries. (The dough is quite stiff, so be patient as you're folding in the berries! Don't mush them up!)
  • 4. Spread the batter into the prepared pan and sprinkle with the crumble topping. Bake for 50-60 minutes, until a toothpick inserted in the center of the cake comes out clean. Cool, and cut into 9 large squares.

This is one of my absolute favorite summer recipes. With most blueberry coffee cakes that have a crumb topping, the crumbs never get 100% crunchy. I found a solution for getting juicy, sweet blueberries on top, moist cake in the middle, and a bottom layer of surprisingly crunchy crumbs.

2 teaspoons lemon juice
1/2 cup packed light brown sugar
1 1/3 cups blueberries
1 1/3 cups all-purpose flour

1 pinch Sea salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1 stick unsalted butter, melted
1 1/2 cups all-purpose flour
3/4 cup sugar

3 large eggs

Steps:

  • The fruit: Preheat oven to 350 F. Grease a 9-inch round cake pan with butter. Line with parchment paper and grease the top of the paper. In a small saucepan, melt 3 tablespoons butter over medium-low heat. When melted, add lemon juice and brown sugar. Stir until sugar has dissolved. Pour the liquid into the bottom of the prepared cake pan. Pour the blueberries into the bottom of the pan. This can be done in advance.
  • Crumb topping: Mix together flour, sugars, and spices in a medium bowl. Pour in the melted, cooled butter and mix until large crumbs form.
  • Cake: In the bowl of a standing mixer fitted with the paddle attachment, combine flour, sugar, baking soda, baking powder, and salt. In a mixing bowl, whisk together the eggs, sour cream, and vanilla. Attach the bowl with the dry ingredients to the standing mixer and mix for a few seconds. Add the softened butter and a few tablespoons of the egg mixture, and beat for 10 seconds to combine. Beat in the remaining egg mixture, continuing to beat until very smooth.
  • Pour the cake batter on top of the fruit and smooth the top. Use your fingers to create large crumbs from the topping and scatter evenly on top of the cake batter. Bake 55-65 minutes, until cake is set and the center springs back when very gently pressed with a finger. A cake tester will come out with crumbs attached, but it shouldn't be wet.
  • Remove cake from oven and transfer to a wire rack to cool completely, at least 2 hours.Use a flat-edged spatula or knife to loosen the sides of the cake from the pan. Flip cake onto the rack. Serve with the fruit either on the bottom or on top, whatever your preference.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter and flour a 9-inch cake pan.
  • Mix white sugar, brown sugar, cinnamon, and allspice together for the topping. Stir in melted butter. Beat in flour until well combined. Set aside.
  • Beat white sugar and butter for the cake together in a bowl until creamy. Add eggs one at a time, beating after each addition. Add sour cream, vanilla extract, and lemon zest.
  • Sift flour, baking powder, and baking soda together in a separate bowl. Mix into the wet ingredients. Fold in blueberries. Spoon batter into the prepared cake pan and sprinkle with topping.

confectioners' sugar, for dusting

Steps:

  • Crumb topping: In a medium bowl, combine cinnamon, salt, sugar, and flour; cut in the butter using your hands, 2 knives, or a pastry blender until well combined and crumbly.
  • Preheat oven to 350 degrees F.
  • Sift together flour, baking soda, baking powder, and salt into a bowl, set aside.
  • Butter a 9-inch square baking pan, set aside.
  • In the bowl of electric mixer fitter with the paddle attachment, cream butter and granulated sugar until light and fluffy, about 4 minutes.
  • Add eggs, 1 at a time until well combined.
  • Add vanilla, and beat until combined.
  • Add reserved flour mixture and the sour cream, and beat just until well combined.
  • Fold in 2 cups blueberries.
  • Spoon batter into prepared pan.
  • Toss remaining cup blueberries with the crumb topping.
  • Sprinkle the crumb topping over cake.
  • Bake until golden brown and cake tester comes out clean, 50 to 60 minutes.
  • Dust with confectioners' sugar before serving.

This recipe came around when I was craving blueberry cobbler and cinnamon crumb cake. I prefer to eat it the next day after everything has had time to set, but my husband prefers it fresh ooey gooey and soft. Either way it is good as a side to coffee for an early morning tailgate or tea and biscuits in the garden.

2 cups brown sugar
3 tablespoons gluten-free flour (I preferr Pamelas Baking Mix)
1 teaspoon cinnamon (heaping)
7 tablespoons cold butter (cubed)
1 regular box of gluten free yellow vanilla cake mix (Whatever brand you prefer)
3 1/2 ounces instant vanilla pudding
1 cup milk (I sometimes use buttermilk)
1/2 cup softened butter
4 large eggs
2 cups fresh blueberries
8 ounces cream cheese, softened
3 tablespoons sugar
1 teaspoon vanilla

Steps:

  • Preheat Oven to 350.
  • Brown Sugar Crumble Topping:.
  • Use mixer to blend brown sugar, GF Flour, cinnamon and butter until mixture forms large crumbles. Place bowl in fridge.
  • Cake:.
  • Stir the cake mix and instant pudding together and set to the side.
  • Separate 3 egg whites and 3 egg yolks into two bowls.
  • Cream the butter and egg yolks together.
  • Add the creamed butter/egg yolk to the cake mix and blend with the 1 cup of milk until you have a smooth cake batter.
  • In a separte bowl whip the egg whites until you see peaks.
  • Gently fold whipped egg whites in with the cake batter until blended.
  • Gently fold in the 2 Cups of Blueberries until all Blueberries are coated in mixture.
  • Line 9 x 13 baking dish parchment paper and coat with butter or cooking spray.
  • Gently spread the blueberry batter evenly in pan.
  • In separate bowl cream the cream cheese, 1 egg, 3 tablespoons sugar and 1 teaspoon vanilla together.
  • Use spoon to drop random dollops of cream cheese mixture onto blueberry batter. Use edge of butter knife to gently swirl into the mixtures slightly together.
  • Crumble the Brown Sugar topping on top of the batter.
  • Bake 350 degree oven for 60 minutes. Test center with toothpick.
  • Let cool to set ingredients.
  • Take out of oven and set on cooling rack to set the fruit mixture prior to eating.

This is one of my top five all-time favorites! Adapted from "Cook's Illustrated" this rich coffee cake is unique in that it does not contain milk, does not get soggy, despite the 4 cups of blueberries suspended in batter. Nearly identical to "Einstein Bagel's" Blueberry Crumb Cake. Note: I've made this on vacation several times by hand, creaming the butter with a spoon. Despite the lengthy directions it takes about 10 minutes to put together.

1/2 cup unbleached all-purpose flour (2 1/2 ounces)
1/2 cup light brown sugar (3 1/2 ounces)
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1 pinch table salt
4 tablespoons unsalted butter, cut into 8 pieces, softened but still cool (1/2 stick)
1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
1 1/2 teaspoons baking powder
10 tablespoons unsalted butter, softened but still cool (1 1/4 stick)
2/3 cup granulated sugar (about 4 3/4 ounces)
1/2 teaspoon table salt
1/2 teaspoon lemon zest
1 1/2 teaspoons vanilla extract
2 large eggs, room temperature
4 cups fresh blueberries, picked over (about 20 ounces)

Steps:

  • For the streusel:.
  • In standing mixer fitted with flat beater, combine flour, sugars, cinnamon, and salt on low speed until well combined and no large brown sugar lumps remain, about 45 seconds.
  • Add butter and mix on low until mixture resembles wet sand and no large butter pieces remain, about 2 1/2 minutes.
  • Transfer streusel to small bowl and set aside.
  • For the cake:.
  • Adjust oven rack to lower-middle position; heat oven to 350 degrees. Spray 9-inch round cake pan*(I used a shallow rectangle white dish and it cut neat squares) with 2-inch sides with nonstick cooking spray.
  • Whisk flour and baking powder in small bowl to combine; set aside.
  • In standing mixer fitted with flat beater, cream butter, sugar, salt, and lemon zest at medium-high speed until light and fluffy, about 3 minutes; using rubber spatula, scrape down bowl.
  • Beat in vanilla until combined, about 30 seconds.
  • With mixer running at medium speed, add eggs one at a time; beat until partially incorporated, then scrape down bowl and continue to beat until fully incorporated (mixture will appear broken). With mixer running on low speed, gradually add flour mixture; beat until flour is almost fully incorporated, about 20 seconds.
  • Disengage bowl from mixer; stir batter with rubber spatula, scraping bottom and sides of bowl, until no flour pockets remain and batter is homogenous; batter will be very heavy and thick.
  • Using rubber spatula, gently fold in blueberries until evenly distributed.
  • Transfer batter to prepared pan; with rubber spatula, using a pushing motion, spread batter evenly to pan edges and smooth surface.
  • Sprinkle streusel evenly over batter.
  • Bake until deep golden brown and toothpick or wooden skewer inserted into center of cake comes out clean, about 55 minutes.
  • Cool on wire rack 15 to 20 minutes (cake will fall slightly as it cools).
  • ool until just warm or to room temperature, at least 1 hour. Cut into wedges and serve.

Steps:

  • Preheat oven to 350 degrees. Make streusel topping: In a medium bowl, stir together flour, brown sugar, and salt. Cut in the butter using your hands or a pastry blender until large, moist crumbs form. Chill.
  • Butter and flour a 9-inch square baking pan. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, salt, and allspice. In a large bowl, beat the butter and granulated sugar with an electric mixer until fluffy. Add egg; beat well. Add flour mixture and buttermilk alternately until just combined. (Batter will be very stiff.) In a large bowl, toss the blueberries with remaining teaspoon flour. Fold blueberries into the batter; spoon into prepared pan.
  • Sprinkle cake evenly with streusel topping. Bake until golden brown and a tester comes out clean, 45 to 50 minutes. Let cool completely.
