- Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell; invert onto paper towels to drain., In a small bowl, combine the spinach, sour cream, cheddar cheese, onions and salt. Spoon about 1/2 cup into each tomato., Place in a greased 13-in. x 9-in. baking dish. Sprinkle with Parmesan cheese and bread crumbs; top each with 1/2 teaspoon butter. , Bake, uncovered, at 350° until heated through, 40-45 minutes.

- Preheat oven to 400°F.
- Using a blender, food processor or Magic Bullet, process the bread into fresh breadcrumbs. (This took about 1 second in my Magic Bullet).
- In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, herbs, salt and pepper. Toss until well mixed.
- Place sliced tomatoes in a shallow baking dish, season with salt & pepper. Top with breadcrumb mixture.
- Bake for 10-15 minutes or until crumbs are lightly browned. Be sure not to over bake so the tomatoes don't become mushy.

- Toss tomatoes with 1 teaspoon oil and salt on prepared pan; flip tomatoes so they are cut-side up.

CRUMB & HERB TOPPED ROAST TOMATOES

- Finely chop the fresh herbs and combine in a mixing bowl with the breadcrumbs and olive oil. Mix thoroughly to moisten the crumb blend. This helps to brown but not burn the crumb topping during the roasting process.
- Core the stem end of each tomato. Slice off the top third from the round end, retaining the greater section for the recipe and putting aside the one-third for use in salads, pasta sauce, etc. Never waste a good tomato, or any food for that matter!
- With a sharp paring knife, slightly indent the sliced top of each tomato in order to better hold the crumb mixture.
- Sprinkle each tomato with the salt and pepper.
- Drizzle tomatoes with any remaining olive oil then heap with the pre-moistened crumb mixture.

- Preheat oven 375.
- Prepare casserole dish.
- Slice tomatoes into 1/2 inch thick slices, set aside.
- Crumble bread crumbs with finger tips, sit aside.
- In a 2 quart saucepan over medium heat, melt the butter.
- Add flour, dry mustard and salt.
- Cook together for 2 or 3 minutes.
- Add milk little by little and continue stirring until mixture thickens.
- Add cheese and stir until melted.
