Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

Number Of Ingredients 15

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

3 white corn tortillas, plus more for serving
4 dried ancho chile peppers, stemmed, seeded and cut into 2-inch pieces
1/3 cup sesame seeds, plus more for topping
1/4 cup raisins
1/2 onion, diced
2 cloves garlic, smashed
2 teaspoons Chinese five-spice powder
1 14.5-ounce can crushed fire-roasted tomatoes
1 cup roughly chopped fresh cilantro, plus more for topping
1 3-pound bone-in pork butt, trimmed of skin and excess fat
Kosher salt and freshly ground pepper
4 sweet potatoes

Steps:

  • Tear the tortillas into small pieces; toss with the chiles, sesame seeds, raisins, onion, garlic and five-spice powder in a bowl. Heat a large cast-iron skillet over medium-high heat. Add the tortilla mixture; cook, stirring, until the sesame seeds are toasted and the onion is slightly charred, about 5 minutes.
  • Add the tomatoes and cook, stirring and scraping up any browned bits, until the liquid evaporates and the tomatoes start browning, about 6 minutes. Add the cilantro and 1 1/2 cups water; bring to a boil, scraping up the skillet. Working in batches, transfer to a blender and puree until smooth, about 4 minutes. Transfer to a 6-quart slow cooker.
  • Season the pork all over with salt and pepper; add to the slow cooker. Cover and cook on low, 8 hours.
  • Before serving, pierce the sweet potatoes several times with a fork: microwave until tender, about 8 minutes. Remove the pork from the slow cooker and slice. Top with the sauce and more sesame seeds and cilantro. Serve with the sweet potatoes and tortillas.

A dark, rich, complex flavored Mole recipe. I generally shred the chicken so it will soak up the mole sauce and serve it with warmed tortillas. It is always a hit with those who like spicy foods. This recipe can be played with easily to tailor it to your own level of hotness and/or cocoa/peanut flavor. Mole is a sauce that has a lot of variations. I've even served it as a dip with corn chips!

1 large onion, chopped
½ cup raisins
3 cloves garlic, chopped
2 tablespoons toasted sesame seeds
1 finely chopped canned chipotle chile in adobo sauce
3 tablespoons peanut butter
1 (28 ounce) can crushed tomatoes
1 teaspoon sugar
1 teaspoon ground cinnamon
4 teaspoons chili powder
1 teaspoon ground cumin
½ teaspoon ground coriander
⅛ teaspoon ground nutmeg
3 tablespoons unsweetened cocoa powder
1 ½ pounds skinless, boneless chicken breasts

Steps:

  • Place onion, raisins, garlic, sesame seeds, chopped chipotle pepper, peanut butter and crushed tomatoes in slow cooker. Stir in sugar, cinnamon, chili powder, cumin, coriander, nutmeg, and cocoa powder. Place chicken in the sauce.
  • Cover; cook on Low until chicken is very tender, about 5 hours.

Okay there are a number of recipes for mole on this site already. Can it stand another? I hope so. This is an adaption of a recipe that I found in my newest cookbook, The Gourmet Slow Cooker. Making the sauce does take some time but it can be made ahead then warmed before adding to the crock pot with the chicken. Don't let the ingredients list scare you. Break this down into steps and it is well worth the effort.

1/4 cup blanched almond
1 cinnamon stick, broken into pieces (2 to 3 inch)
1/2 teaspoon coriander seed
1/2 teaspoon anise seed
1/4 cup sesame seeds
4 whole cloves
4 dried pasilla peppers, stemmed and seeded
6 dried New Mexico chiles or 6 dried ancho chiles, stemmed and seeded
1 -2 guajillo chilies, stemmed and seeded
3 -4 cups chicken stock
2 medium roma tomatoes
3 ounces mexican chocolate or 1/3 cup unsweetened cocoa powder
6 garlic cloves, minced
1 sweet white onion, coarsely chopped
1/4 cup raisins
salt
2 chicken, cut into serving pieces skinned (Use only the thighs, breasts and legs)

Steps:

  • Preheat oven to 350 degrees.
  • Combine the almonds, cinnamon stick, coriander, aniseed, sesame seed and cloves on a baking sheet.
  • Toast in the oven for 10 minutes or until fragrant and lightly browned; remove and set aside.
  • Place chiles on another baking sheet and toast at 350 degrees for 10 minutes; check and stir as needed to prevent burning.
  • Remove the chiles from the oven and allow to cool.
  • When cool, break chiles lightly, and place in in a large glass bowl.
  • Pour 2 cups of hot chicken stock over the chiles and allow to sit for about 30 minutes to 1 hour.
  • Preheat broiler and place the 2 tomatoes on a cookie sheet and broil for 5 to 7 minutes or until skin cracks and blisters lightly, turning about every 2 minutes.
  • Remove tomatoes from oven and set aside to cool before removing the skin and chopping.
  • Pour the chiles and stock into a blender and puree in batches until smooth.
  • Add the toasted almonds and spices, peeled and chopped tomato, chocolate, garlic, onion, raisins and salt to taste.
  • Blend until smooth, adding remaining stock as needed to make sauce proper consistency.
  • The sauce should be just thick enough to coat the back of a spoon.
  • Strain the sauce through a medium-meshed sieve to remove seeds and pieces of chile.
  • Arrange the chicken pieces in the crock pot and pour sauce over.
  • Cook on low for 3 to 4 hours or 6 to 8 hours.
  • At 3 to 4 hours the chicken will be firm and retain its shape.
  • At 6 to 8 hours, the meat will be falling off the bone.
  • Transfer to dinner plates and serve immediately with rice, salad and crusty bread.
  • Please Note: The back, neck and chicken wings can be used to make chicken stock.

1 (2 pound) beef chuck pot roast
3 cloves garlic
2 red bell peppers, cut into large wedges
2 green bell peppers, cut into large wedges
1 yellow onion, cut into wedges
1 sweet onion, cut into wedges
½ (6 ounce) can tomato paste, or to taste
¼ cup red wine vinegar
⅛ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Pierce the beef roast to tenderize it and let the flavors in, and place it into a slow cooker with the garlic, red bell peppers, green bell peppers, yellow onions and sweet onions. Stir in the tomato paste and red wine vinegar. Sprinkle with the garlic powder, seasoned salt, salt, and ground black pepper.
  • Cover, and cook on Low until the beef is tender, 7 to 8 hours. Remove beef, and shred into long strands using two forks. Return the meat to the slow cooker and combine with the vegetables.
  • Cook on Low until the meat and vegetables are very tender, about 30 minutes.

  • Heat a skillet over med-light heat. Add almonds and toast for 2-3 minutes or until fragrant. Add raisins, cook 1 to 2 minutes until raisins begin to plump. Place the mixture in a mixing bowl. In the same skillet add 1 tablespoon oil, add onions and garlic. Cook and stir 2 to 3 minutes until softened. Add to the almond and mixture set aside.
  • Heat remaining oil in same skillet, add pork roast and brown on all sides, about 5 to 7 minutes. Transfer to a 4-6 quart crock pot.
  • Combine the whole can of tomatoes, broth, Rodelle Cocoa, Cinnamon, chipotle peppers, and salt with the almond mixture. Puree in a blender in a couple of batches until smooth.
  • Pour puree over pork roast in crock pot, cover and cook on LOW for 7 to 8 hours or on HIGH 3 to 4 hours or until the pork is done.
