LENTIL & SPINACH SOUP (SLOW COOKER STYLE)

A delicious, nutritious and filling soup with the optional but strongly recommended kick of spice!

2 cups dried green lentils (sorted & rinsed)
8 cups vegetable stock
2 stalks celery (small diced)
4 medium carrots (small diced)
1 medium onion (small diced)
1 shallot (small diced)
3 garlic cloves (minced)
1 14- oz can fire roasted petite diced tomatoes
1 dried bay leaf
1/2 t dried thyme
1 t ground cumin
1/2 t smoked paprika
1/4 t cayenne pepper (or to taste)
1/2 t ground black pepper
2 t kosher salt
9 oz-bag fresh spinach (roughly chopped)
1 T red wine vinegar

Steps:

  • In a 6 quart or larger slow cooker, add all of the ingredients except for the spinach and red wine vinegar. Stir and cover. Cook on low for 7 to 8 hours or high for 3 to 4 hours. About 15 minutes before the soup is finished cooking, remove the bay leaf. Add the spinach and red wine vinegar. Stir and allow just enough time for the spinach to wilt (about 10 to 15 minutes).
  • Serve with more ground black pepper or grated parmesan cheese.
  • Enjoy!

4 cloves garlic, finely chopped
1 tablespoon tomato paste

1 cup dried lentils (8 oz), sorted, rinsed
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 carton (32 oz) vegetable broth (4 cups)
4 slices bacon, chopped
2 dried bay leaves
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/2 teaspoon pepper
1 bag (6 oz) fresh baby spinach leaves

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 10-inch skillet, heat oil over medium-high heat. Cook onion in oil 2 minutes, stirring frequently, until tender. Add garlic and tomato paste; cook 1 minute. Spoon mixture into slow cooker. Stir in remaining ingredients except spinach.
  • Cover; cook on Low heat setting 9 hours. Discard bay leaves. Stir in spinach just before serving.

5 cloves garlic, minced
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon dried thyme, or more to taste
1 bay leaf

Steps:

  • Combine water, ham, tomatoes, lentils, onion, carrots, celery, garlic, pepper, salt, thyme, and bay leaf in a slow cooker.

2 onions, chopped
2 celery ribs, finely chopped

1 potato, peeled and grated
1 clove garlic, minced

  • Sort lentils and rinse under cold water.

2 lbs soup bones with meat
3 carrots, peeled &, chopped
3 medium potatoes, peeled &, chopped
1 large onion, peeled &, chopped
3 stalks celery, chopped
1 (28 ounce) can chopped tomatoes, undrained
6 cups water
6 beef bouillon cubes, crushed
1/2 lb lentils, rinsed
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon marjoram
3 cups shredded cabbage

Steps:

  • In slow cooker (4-1/2 quarts or larger) combine all ingredients except cabbage.
  • Cover& cook on low 8 hours or until lentils are tender.
  • Remove beef from bones, shred and and return to pot.
  • Add shredded cabbage, turn pot to high setting, and cook 30 to 45 minutes or until vegetables are tender.

2 tablespoons oil (preferably olive, or for authenticity -- clarified butter)
1/2 onion, chopped
1 1/2 teaspoons good curry powder (I like using more, but it is all to taste)
6 cups good vegetable stock (water or chicken stock can be substituted)
1 cup lentils
1 (14 ounce) can chopped tomatoes (with liquid)
salt

Steps:

  • Heat oil in skillet over medium high heat.
  • Add onion and cook until translucent.
  • Add curry, stir and cook for 1-2 minutes.
  • (you should be able to smell the curry flavors when it is ready) Add some of the stock to the pan to deglaze.
  • Pour the contents of the pan, and the rest of the stock into a crock pot.
  • Add the lentils to the pot.
  • Cover and cook on low for 6 hours.
  • Before serving, puree some of the lentils to give the soup some body, and add the tomato and any salt that you wish.

2 tablespoons extra virgin olive oil
1 large onion, chopped
3 celery ribs, sliced (on the diagonal is pretty)
2 tablespoons minced garlic cloves (or 3 cloves, finely chopped)
2 (1 lb) bags dried lentils, rinsed and sorted
2 lbs frozen vegetables (I like the broccoli, cauliflower, and carrot blend)
4 cups broth (I prefer vegetable)
2 (14 1/2 ounce) cans diced tomatoes
1 tablespoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (or to taste)

Steps:

  • Heat oil in non-stick skillet over medium heat. Add onion and celery; cook until crisp-tender (about 3-5 minutes). Add garlic and saute, being careful not to burn.
  • Combine this with remaining ingredients in a large Crock-Pot. Cook on Low 4 hours or on High 2 hours, or until lentils are tender.
  • Garnish with shredded mozzarella cheese and finely chopped roasted red peppers. You could also serve over or stir in your favorite pasta or rice.
  • NOTE: For more crisp-tender texture, add the frozen veggies during last 30-60 minutes of cooking time. My kids don't like the taste of celery, so I chop it very finely so that it "disappears" in the soup.
  • For Vegetarian you must use Vegetable Broth.
