2 pounds chicken breasts (boneless, skinless) cut each breast into thick slices to cook, (once cooked cut into chunks)
1 (16 oz) can whole berry cranberry sauce
1 package Lipton's dry onion soup mix (each box has 2 packages inside and you'll use only 1 package)
½ cup apple juice
1 cup onions, chopped
1 cup celery sliced

Steps:

  • Add slices of chicken to the crock-pot. In a medium bowl, mix together the cranberry sauce, dry onion soup mix, apple juice, onions, and celery. Pour sauce over chicken and mix to coat.
  • Cover and cook on low heat for about 6 hours until chicken is cooked through or for 3 hours on high heat. When finished, cut each slice of chicken into chunks before serving. If you want the sauce a bit thicker, pour the sauce into a small pot. Stir in a little cornstarch or flour (about 1 tablespoon). Over medium heat, stir with a whisk or fork until the cornstarch or flour is dissolved and the sauce begins to thicken.
  • Serving suggestions: It's delicious just served in a bowl as a stew. Or, each serving can be served over 1 slice of whole wheat bread, over a small baked potato or on ½ cup brown rice.

12 skinless chicken thighs
1 cup whole berry cranberry sauce
1 tablespoon low-sodium beef bouillon cube
1 teaspoon apple cider vinegar
1 teaspoon prepared mustard
1 1/2 teaspoons salt

Steps:

  • Place onion in slow cooker, then arrange thighs over onion.
  • Combine remaining ingredients together and whisk well; spoon over chicken, making sure to get some on every piece.
  • Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

Boneless chicken thighs could be used also. EDITED TO ADD: The 6 hour cooking time is based on my very old crockpot, but I have noticed my newer crockpot cooks hotter, so 4 hours on low may be plenty.

6 boneless skinless chicken breast halves
1 small onion, chopped
1 cup fresh cranberries (may be frozen-don't thaw)
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
3 tablespoons brown sugar
1 cup orange juice
3 tablespoons all-purpose flour
2 tablespoons cold water

Steps:

  • Place all ingredients, except flour and water, in the crock pot.
  • Cover and cook on LOW 4-6 hours (depending on how hot your pot runs), until chicken is tender.
  • Mix flour with cold water and add to pot in the last 15 to 20 minutes and cook until thickened.
  • Taste and adjust seasonings.

A delicious recipe for the upcoming fall season. I like using chicken thighs rather than breasts in the crock pot as they stand up better to the longer cooking and add more flavor to the dish. Do not overcook the thighs. Six hours is about as long a cooking time as you'll need. I actually use a little less time. This recipe was posted by Wolverine on the TOHBB.

1 small onion, sliced thinly
1 cup fresh cranberries (may be frozen, if frozen, do not thaw)
2 1/2 lbs boneless skinless chicken thighs (remove large amounts of fat)
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard
2 teaspoons cider vinegar
1 1/2 tablespoons cornstarch
2 tablespoons cold water
salt

Steps:

  • Place onion slices and cranberries in the bottom of your crock pot. Arrange chicken on top.
  • In a small bowl, mix together the catsup, brown sugar, dry mustard and vinegar. Pour over the chicken.
  • Cover and cook on low setting about 6-7 hours or until the chicken is tender.
  • To serve: lift the chicken out and set on serving platter. Cover and keep warm in your oven on a low setting. Mix the cornstarch and water until smooth. Turn the crock pot to high setting and add cornstarch mixture. Cover and cook this for about 15 minutes more or until the sauce thickens. Season to taste with salt and pour the sauce over the chicken.

1 lb skinless chicken breast
2 -3 tablespoons curry powder
2 teaspoons butter
1 small onion, chopped
1 tablespoon yellow mustard seeds
1/4 teaspoon ground cloves
1 (15 ounce) can Del Monte crushed tomatoes with mild green chilies
0.5 (15 ounce) can reduced-sodium chicken broth
3 ounces dried sweetened cranberries
1 tablespoon minced ginger
1/4 teaspoon salt
1/8 garam masala

Steps:

  • Cut the chicken into small cubes.
  • Dice onions and mince ginger.
  • Use a generous spray of cooking oil in a pan.
  • Sprinkle oiled pan lightly with curry powder.

1 cup fresh cranberries
3/4 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon ground cinnamon

6 -8 chicken breasts or 6 -8 chicken thighs
1 cup orange juice
1 teaspoon orange peel, grated
3 tablespoons butter, melted
3 tablespoons flour
2 -3 tablespoons brown sugar
