SLOW COOKER BROCCOLI CHEESE POTATO SOUP
A family favorite, this Slow Cooker Broccoli Cheese Potato Soup is so comforting and creamy even without the heavy cream! Throw it in the crockpot for 4 hours, then dig in!

Steps:
- Spray a slow cooker with nonstick spray. Add onions, potatoes and broth into slow cooker. Cook on high for 4 hours.
- With 30 minutes remaining add broccoli to slow cooker and stir.
- In a small bowl mix cornstarch and milk together. With 15 minutes remaining add cornstarch mixture to slow cooker.
- When 4 hours is up, add shredded cheese and mix until melted.
- Serve in bowls. Enjoy!

Steps:
- In a 3 quart saucepan, melt butter and saute onions.
- Add potatoes, water, and bouillon cubes. Cover and bring to a boil then reduce heat to medium. Cook just until potatoes are tender.
- Meanwhile, Place frozen broccoli and cheddar cheese in crock pot on low to start melting and thawing.
- Once the potatoes are done, using a hand blender, blend contents of saucepan to desired consistency and then pour into the crock pot.
- Heat on low until warmed.
- (If you don't want to use a crock pot for this, after blending potatoes to desired consistency, mix in thawed broccoli and heat on medium low. Gradually add cheese, stirring until cheese melts).

This is a nice, creamy, comforting soup- and it's very easy to throw it all together in the crock pot. Add a sandwich or some dinner rolls, and you'll have a great dinner for cold nights! I made a few changes to a recipe taken from the "Fix It and Forget It Cookbook" to come up with this.

I wanted some nice warm soup but I have so many food allergies & sensitivities that none of the recipes I found would work for me. So I came up with this one for my crock pot, I love cooking soups & stews in the crock pot.

Steps:
- 1. Bring a large pot of water to boil, add a few pinches of salt & the chopped potatoes. Boil potatoes until tender, drain, reserving 2 cups of liquid.
- 2. Mix together soup, milk, & seasonings, pour in crock pot. Add butter & reserved cooking liquid.
- 3. Add remaining ingredients, stir to combine.
- 4. Cook on high 3-4 hours, or on low for 6-8 hours. If cooking on high, stir half way through cooking.

- To a 6-quart crock pot add hash browns, broccoli, carrots, shallot and chicken broth then stir to combine, cover, and cook on low for 4-5 hours or until broccoli is very tender.
- To a blender add Arla Herbs & Spices cream cheese, milk, and roughly 1/3 of the cooked vegetables. Blend until very creamy then stir back into the crock pot, cover, and cook on low for 10 minutes. NOTE: may need to blend in batches if your blender is small.
- Sprinkle cheddar cheese into soup about 1/2 cup at a time, stirring until cheese is completely melted before adding another batch. Add salt and pepper to taste then serve.
