Steps:
- Place the pork loin in the crock pot. In a small bowl mix all the other ingredients except the corn starch. Pour over the pork loin.
- Cook on low for 8 hours or until the pork loin is tender.
- Remove and slice the pork loin.
- Meanwhile in a small bowl whisk 3 tablespoons of cornstarch with ¼ cup water.
- Pour the sauce from the crock pot into a small pan. Whisk the cornstarch mixture into the cooking liquid.
- Cook over medium heat until the sauce thickens and turns into a gravy.
- Serve the pork with green beans and mashed potatoes and spoon the gravy on top.

- 1. Place potatoes in slow cooker.
- 2. In a small bowl combine fennel seeds, oregano, paprika, garlic powder, salt and pepper. Mix well.
- 3. Rub mixture onto pork tenderloin. Tenderloin might have to be cut in half in order to fit into the slow cooker. (The rub can be applied to the tenderloin the night before and refrigerated to save time and add extra flavor.).
- 4. Place tenderloin on potatoes.
- 5. Pour broth over pork and potatoes.
- 6. Cover; cook on low setting for 8-9 hours.

- Trim the visible fat from the loin. If necessary, cut the roast to fit into a 3 1/2-, 4- or 5-quart slow cooker. In a small bowl, combine the garlic powder, ginger, thyme and 1/4 teaspoon pepper. Rub the spice mixture over the entire surface of the loin.
- In a large skillet, heat the oil over medium to medium-high heat and brown the loin slowly on all sides. Drain off the fat. Transfer the loin to the slow cooker. Combine the chicken broth, lemon juice and soy sauce in a small bowl; pour over the loin. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. When the roast is done, transfer the meat to a serving platter and cover to keep it warm.
- To make the gravy, pour the juices from the slow cooker into a glass measuring cup. Skim off the fat. Measure 2 cups of liquid, adding water to the juices if necessary to make 2 cups. Transfer the juices to a saucepan, reserving 1/2 cup. Stir the cornstarch into the reserved 1/2 cup of juices until dissolved, then stir into the juices in the saucepan. Heat over medium heat, stirring frequently, until the gravy is thickened and bubbly, 2 to 3 minutes. Cook and stir 2 minutes more. Season the gravy to taste with salt and pepper. Slice the roast and serve it with the gravy.

- Lay the pork chops on a rimmed baking sheet and sprinkle both sides of each chop with salt and pepper. Put the flour on a small plate. Coat both sides of the chops with the flour and put back on the baking sheet to come to room temperature while you prepare the remaining ingredients.

Bring to a boil over high heat and cook, whisking occasionally, until the sugar dissolves, about 1 minute. Pour the mixture over the red onions and set aside until cooled to room temperature. BBQ PORK TENDERLOIN IN THE CROCK POT
I wanted to make BBQ pork tenderloin in the slow cooker, but not pulled pork. This worked out nicely so I thought I'd post the recipe so I can make it again. Hope you enjoy it too. This was easy to slice, though could have easily been shredded as well. Served with rice to put the extra sauce on, along with a veg (I used peas and carrots). I only cooked 1 pork tenderloin and had lots of sauce leftover so you might only want to double the sauce if you do 3 or more tenderloins I would guess?!?

- Using a strainer separate the dried onions from the dry powder; place the dry onions in a small bowl.
- Heat about 3 tablespoons oil in a skillet over medium heat.

This recipe came out of a need to serve leftover pork tenderloin in a completely different way - my kids hate to eat leftovers of the "exact" same thing they ate the night before.
