SPICY AND TENDER CROCK POT PORK CHOPS
These are the most tender chops I have ever had! I usually cook some apples to go on top of the chops and use the sauce in this recipe to put over rice. I found this recipe in one of my favorite Cookbooks 'Fix It and Forget It.' Hope you enjoy!

Steps:
- Brown chops in oil in skillet.
- Transfer to slow cooker.
- Discard oil.
- Combine then add remaining ingredients to cooker.
- Cover.
- Cook on Low 8-10 hours.
- Serve over rice.
CROCK POT PORK CHOPS
An easy recipe that produces tender pork chops with a wonderful gravy, I used a 3/4-inch thick center cut pork chops and browned them first, you may increase the amount of pork chops and double the sauce recipe, this can also be made in the oven for a shorter time :)

Steps:
- Place the pork chops in the crock pot.
- Sprinkle with onions and garlic over and around the chops.
- In a bowl mix together all remaining ingredients except the salt; pour over the chops.
- Cook on low setting for about 7 hours or until the pork chops are cooked through and tender (cooking time will vary slightly depending on the size of your pork chops).
- Season with salt to taste if desired.
- Serve over rice.
CROCK POT PORK CHOPS WITH APRICOTS AND PRUNES
Dried fruits, such as apricots and prunes, have a lot of iron, and the iron is more readily absorbed when combined with vitamin C. This dish has it all. A nice dish to come home to.

Steps:
- In large skillet, heat oil over medium-high heat; brown pork chops.
- Transfer to crock pot.
- Add onions, garlic, apricots and prunes to pork chops.
- Whisk together orange juice, chicken stock, cumin, paprika, coriander, cinnamon, salt and pepper; add to crock pot.
- Cover and cook on LOW for 6 to 8 hours, or until meat is tender.
- Remove pork chops to plate and keep warm.
- Increase heat to High; cover and cook for about 5 minutes or until sauce is slightly thickened.
- Serve with chops.
PORK ROAST STUFFED WITH APRICOTS AND PRUNES

- Preheat oven to 350 degrees F.
- Clean pork loin removing any excess fat. butterfly the pork loin (1/2-inch thick). Lay the pork, cut-side up, season with salt and pepper, and rub liberally with the apricot chutney.
- Place a layer of apricots and prunes on the flattened loin. Roll tightly and tie with twine at 1/2-inch intervals. Place the pork in a roasting pan fitted with a rack and season with salt and pepper. Roast until the pork reaches an internal temperature of 145 to 150 degrees F, about 15 minutes per pound. Transfer the pork to a cutting board, cover loosely with foil, and let rest for 10 minutes before carving.
SWEET PORK WITH APPLES AND PRUNES (SLOW COOKER)
I haven't tried this yet. But it caught my eye because I often find forequarter chops on special and could use some new ideas on cooking them. It comes from my Sunbeam Slow Cooker Recipe Booklet.

Steps:
- Heat 1 Tablespoon of oil in a large fry pan over medium heat, cook chops for 1 minute each side or until lightly brown. Transfer to a plate.
- Heat remaining oil in fry pan, add onions and cook 2-3 minutes or until they have softened. Add apples and toss in pan, stirring frequently, until apple begins to color. Place in bottom of slow cooker. Add stock, prunes, 1 Tb of fresh sage and the browned pork.
- Cover and cook on high 3-4 hours or low 6-8 hours
- Season to taste, serve with a sprinkle of fresh sage.
PORK WITH PRUNES
Steps:
- Preheat oven to 350°F.
- Pat chops dry and season with salt. Dredge in flour, shaking off excess. Heat oil in a 3 1/2- to 4-quart wide heavy pot over moderately high heat until hot but not smoking. Brown chops in batches, turning over once, about 5 minutes per batch. Transfer to a plate. Add shallot to pot and sauté until golden, 2 to 3 minutes. Add vinegar and boil, scraping up brown bits, until reduced by half. Stir in water, broth, and allspice and bring to a simmer. Return chops to pot with prunes. Braise, covered, in middle of oven until chops are very tender, about 45 minutes. Transfer to a platter using a slotted spoon. Boil sauce until reduced to 1 cup, about 20 minutes. Season with salt and pepper and pour over chops.
CROCK POT PORK CHOPS WITH DRIED FRUIT
The pork chops are stacked in the crock pot, so I think you could substitute a small pork roast and get pretty much the same results. Have not tried this but have tried the pork chops and they are great! If you use a roast, please let me know how it turns out.

- Place pork in 4-5 quart crock pot slow cooker.
- Layer dried fruit evenly over pork.
- Mix brown sugar, marmalade, vinegar, ginger and nectar,.
- Pour evenly over pork and fruit in crock pot.
- Cover and cook on low heat setting 6-7 hours or until pork is slightly pink when cut near bone.
- Remove pork and fruit from crock pot with slotted spoon, Cover and keep warm.
- Pour juices from slow cooker into 1 quart saucepan.
- Mix cornstarch and water.
- Stir into juices in saucepan.
- Cook over high heat 4-6 minutes , stirring constantly, until thickened and bubbly Serve with pork and fruit.
