This Crock Pot Hawaiian Pineapple Chicken will surely be a hit with anyone who tries it! Tender chicken is cooked with a sweet and salty marinade that contains delicious pineapple for a tropical twist. Serve over rice for a well-rounded meal you'll make again and again.

2 lbs boneless, skinless chicken thighs ((cut into 1" pieces))
1 (20 oz) can pineapple chunks with juice ((do not drain)
¼ cup brown sugar
¼ cup orange juice
1 red bell pepper ((chopped into 1" pieces))
1 yellow bell pepper ((chopped into 1" pieces))
1 yellow onion ((chopped into 1" pieces))
2 tsp garlic
½ tsp ground ginger
½ cup ketchup
2 tbsp low sodium soy sauce
¼ cup water
3 tbsp cornstarch

Steps:

  • Add the cut-up chicken thighs to the Crock-Pot. Then, add pineapple chunks with juice, brown sugar, orange juice, bell peppers, onion, garlic, ginger, ketchup, and soy sauce. Mix until well combined.
  • Cover and cook on LOW for 7-8 hours, or HIGH for 3-4 hours.
  • Thirty minutes before cook time is up. Add water and cornstarch to a small bowl. Whisk together until there are no lumps. Pour into the Crock-Pot and mix until well combined. Cover and continue to cook for 30 minutes.
  • Serve over rice and garnish with diced green onion.

I got creative what can I say. I wanted something sweet and with veggies, kind of oriental, and maybe a little Hawaiian thrown in. I served mine with Lavender rice.

CHICKEN AND VEGGIES PUT IN AT THE BEGINING OF COOKING
1 - whole chicken cut into quarters (2 breast with wings, 2 thigh leg )
1/3 cup(s) lawry's terriaki marinade
1/2 cup(s) brown sugar or 1/2 cup white sugar and 2 tablespoons moleasses
1 cup(s) dole orange peach mango juice (refridgerated section juice section)
1 tablespoon(s) jar diced garlic
ADD AT THE LAST
1 - head broccoli
1 medium onion cut in chunks
1 can(s) water chestnuts sliced
LAVENDER WILD RICE FOR EVERY 1 CUP UNCOOKED RICE DO THIS
1 cup(s) wild rice
2 cup(s) water (to cook rice in)
1/2 teaspoon(s) lavender flowers

Steps:

  • Mix the first 5 ingredients together and put in a crock put, cut up chicken and place skin side down for 3 hours hours on high or or 6 on low.
  • turn the chicken over and mix evough cornstarch with a little water to thicken the juice in the crock pot. mix in and add veggies cook 1/3 hour on high or 1 hour on low, stir and serve.
  • Lavender Rice for every 1 cup uncooked wild rice use two cups water and 1/2 teaspoon Lavender flowers. Put the flowers in the water as you start to boil the water and leave in the finished product.

This is not sweet like other polynesian chicken recipies. The recipe is low in fat and the original recipe came from AHA Meals in Minutes. It felt like it needed something so I made a few tweaks. I spoon the chicken and sauce over rice and cooked veggies like broccoli and zucchini). The sauce is not thick, but the rice soaks it up and it is so flavorful! Delicious and healthy!

4 boneless skinless chicken breasts, halved
6 ounces pineapple juice
3 tablespoons vinegar
3 tablespoons light soy sauce
1 tablespoon fresh ginger, grated
1 -2 garlic clove, minced
1 teaspoon sesame seeds (or more if desired)
1/4 teaspoon crushed red pepper flakes
4 cups rice, cooked
nonstick cooking spray

Steps:

  • Spray inside of slow cooker with non-stick cooking spray.
  • Place chicken on the bottom of the slow cooker. Add all other ingredients into slow cooker, cover.
  • Cook on high heat for 4 - 6 hours (or until chicken is cooked through). As slow cooker temperatutres can vary, you may need to cook for more or less time.
  • Chicken pieces will break apart durring cooking. Spoon chicken and sauce over rice (and veggies if desired).

2 -3 chicken breasts, cut in pieces
2 tablespoons vegetable oil
1 onion, chopped
2 celery ribs, chopped
1 cup ketchup
1/2 cup water
2 tablespoons lemon juice
2 tablespoons vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 (8 ounce) pineapple tidbits (drained well)
1/2 teaspoon salt

Steps:

  • In a skillet lightly brown chicken pieces slowly in vegetable oil. Remove from skillet and place in bottom of crock pot.
  • In same skillet cook onion and celery just until tender, but not browned.
  • Add remaining ingredients and simmer about 1 minute. Pour sauce over chicken in crock pot.
  • Turn crock pot on high for 1st hour and then to low for 3-4 hours.
  • Note: If you want sauce thicker, add 1 tablespoon of cornstarch during last 30 minutes.
  • Wonderful served over buttered rice!
  • Enjoy!
