SLOW COOKER PINEAPPLE PORK LOIN
Slow Cooker Pineapple Pork is so delicious and all you need is just 5 ingredients. A great dinner with a tasty tropical twist.

Steps:
- Trim pork loin of excess fat, season with salt and pepper. Set aside.
- Heat a large pan over medium-high heat. Add oil, once the oil is hot, add the pork loin and brown on each side for about 2-4 minutes or until golden.
- Add the pork to the slow cooker, rub with garlic. Add soy sauce and pineapple chunks with pineapple juice to the slow cooker. Distribute the brown sugar evenly over the top of the pork.
- Put the lid on the slow cooker and cook on low for 4-6 hours, for a soft pork loin, that can still be sliced.
- NOTE: If you want the pork extra soft, to make shredded pineapple pork, cook it on low for 8-10 hours, making sure during the cooking process, to lift the lid a few times and using a ladle pour the juices over the pork in order to keep it moist. After you shred the pork, add it back to the slow cooker and cook it on low for another hour.

- Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

- Place your roast in your 4 quart slow cooker (I used Mr. Big, my 4-quart Crock Pot) with the fat side up
- Pour your pineapple chunks, juices and all, over your roast
- Sprinkle your brown sugar all over the top of your roast
- Cover and cook on low for 4-6 hours, use a meat thermometer to ensure that the center of your roast reaches safe cooking temperature
- Serve your roast with the cooking juices

This is a recipe my mother made a lots of time. It was one of my favorite recipe. I made it on Sunday when I didn't know what to do with a pork loin roast. It's from Qu'est-ce qu'on mange volume 1.

Steps:
- Preheat oven to 425°F.
- In an overproof saucepan, heat oil. Brown the pork on all sides.
- Let drain the pineapples and keep the juice.
- In a bowl, mix pineapple juice and water. Incorporate the molasses, mustard, salt and pepper. Pour on the pork. Cover. Cook in oven for 1 hour. Baste with the cooking juice each 15 minutes. Remove the lid for the last 15 minutes of cooking.
- Put the pork roast in a serving dish. Keep it warm.
- In a bowl, mix the cornstarch with the chicken stock. Set aside.
- Skim the cooking juice. Add vinegar and the cornstarch with chicken stock. Bring to boil stirring constantly. Add the pineapple chunks. Adjust seasoning. Pour on the slices of pork.

- Salt and pepper pork roast to taste.
- Combine all ingredients, except flour and water, pour over roast.
- Put on lid and cook on low for 8 to 10 hours.
- Once done, remove roast.
- Drain and reserve liquid.
- Return meat and pineapple to crockpot.
- Add water to liquid to make 1 3/4 cups.
- In saucepan, blend flour and cold water together to form a smooth paste.
- Add hot reserved liquid and stir.
- Cook on medium until thickened, stirring continuously.

PINEAPPLE CRANBERRY PORK ROAST
This is a great recipe for guests. Pineapple and cranberry really add to the flavor of pork. This probably could be done in the crock pot as well.

Steps:
- Pierce meat with a knife in several places.
- Mix all of spices together and sprinkle over entire roast.
- Place onions in the bottom of a roasting pan coated with cooking spray. Place roast on top of onions.
- Mix cranberry sauce and pineapple together.
- Pour over roast. Cover and bake at 350 about 1 to 1 1/2 hours or till internal temp reads 155.
- Remove from oven for about 10 mins before slicing.
- The last step is crutial. This brings the meat to proper temperature and allows for perfect slicing.

- Combine salt, pepper, onion powder, garlic powder, thyme and ginger in a small bowl. Sprinkle all over pork tenderloin and rub in well.

- Season roast with salt and pepper and rub with minced garlic.
- Pan sear (on top of stove) roast about 3 minutes on each side.
- Place onion in bottom of crock-pot.
- Place roast on top of onion.
- Top roast with remaining ingredients, except Pineapple, cornstarch, and water.
- Mix water and cornstarch and pour onto top of all ingredients.

Steps:
- Drain pineapple and reserve ¾ cup juice.
- In medium bowl, stir together corn syrup, reserved pineapple juice, soy sauce, green onion, ginger, garlic and mustard.
- Add pork and turn to coat well.
- Cover and refrigerate at least 6 hours or overnight, turning occasionally.
- Drain and reserve marinade.
- Place pork on rack in foil-lined roasting pan.
- Roast in 375 degrees oven, brushing frequently with reserved marinade about 1-½ hours or until temperature in meat thermometer reaches 170 degrees.
- PINEAPPLE SAUCE: In small saucepan, bring 1 cup reserved marinade to boil.
- In small bowl, stir together 1 tbsp cornstarch and 2 tbsp water until smooth and stir into marinade.
- Stirring, bring to boil over medium heat and boil 1 minute.
- Add 4 pineapple slices and heat until pineapple is hot and glazed.
- Arrange remaining pineapple slices on a platter.
- Place pork roast on pineapple and pour pineapple sauce over pork.
- Serve warm.

- In a small bowl, combine the salt, paprika and onion and garlic powders. Set the pork fat side down on a work surface. Using a boning knife, cut between the natural separations in the meat in about 4 places. Sprinkle the spice mixture all over the pork, then rub all over with the Sriracha. Roll up the roast and tie it at 1-inch intervals with kitchen twine; let marinate at room temperature for 2 hours.
- Preheat the oven to 325°. In a roasting pan, toss the pineapple with the brown sugar and vinegar. Spread the pineapple in the pan and set the pork roast on top, fat side up. Roast for 4 hours, basting every 30 minutes, until an instant-read thermometer inserted in the thickest part of the meat registers 165°. Transfer to a carving board to rest for 20 minutes.
- Set the roasting pan with the pineapple over high heat and boil the pan juices until slightly thickened, 2 minutes. Remove the strings from the pork, carve into 1/2-inch-thick slices and arrange on a platter. Add carving juices to the pan and season with salt. Serve the pork with the pineapple and pan juices.
