SLOW COOKER MARINARA SAUCE

My best friend showed me this slow cooker marinara recipe, and I just had to share it. The spices in here can all be adjusted to taste (and eyeballed), but this is how I learned to do it. The best flavor calls to cook it all day, but it can be made in a pinch if you have to! Serve over your favorite pasta or with crispy chicken. Can also be used in lasagna or ravioli.

2 tablespoons olive oil
¼ cup finely chopped onion
3 tablespoons minced garlic, or more to taste
3 (14.5 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon red wine
1 tablespoon balsamic vinegar
1 tablespoon ground basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried cilantro
1 teaspoon chili powder
1 teaspoon ground paprika
1 teaspoon ground oregano
2 large bay leaves
1 pinch white sugar
1 pinch ground cinnamon

Steps:

  • Heat olive oil in a skillet over medium heat. Saute onion and garlic in the hot oil until soft, about 5 minutes. Transfer to a slow cooker.
  • Add tomato sauce and tomato paste to the slow cooker and set temperature to Low. Cook and stir until the paste melts, 3 to 4 minutes. Add wine, vinegar, basil, salt, pepper, cilantro, chili powder, paprika, oregano, bay leaves, sugar, and cinnamon; stir until well combined.
  • Cover, and cook, stirring once in a while, until reduced, 6 to 8 hours. Remove bay leaves and serve.

4 bone-in chicken breast halves (12 to 14 ounces each), skin removed
2 cups marinara sauce
1 medium tomato, chopped
1/2 cup Italian salad dressing
1-1/2 teaspoons Italian seasoning
1 garlic clove, minced
1/2 pound uncooked angel hair pasta
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Place chicken in a 4-qt. slow cooker. In a small bowl, combine the marinara sauce, tomato, salad dressing, Italian seasoning and garlic; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender., Cook pasta according to package directions; drain. Serve chicken and sauce with pasta; sprinkle with cheese. Freeze option: Do not cook pasta. Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Cook pasta according to package directions. Place chicken mixture in a large skillet. Heat until a thermometer inserted in chicken reads 165°, stirring occasionally; add a little water if necessary. Serve as directed.

1 cup breadcrumbs (, fresh or dried [See Note 2])
1/4 cup milk
1/4 cup grated Parmesan cheese
1 finely chopped onion
1/4 cup minced fresh parsley
3 cloves garlic (, minced)
1 tsp salt
1/2 tsp freshly ground pepper
1 tablespoon poultry or Italian seasoning ((optional))
32 oz lean ((90% or leaner) ground beef)
6 cups (48 ounces) Spaghetti Sauce, Homemade or jarred marinara

Steps:

  • Lightly beat eggs in a large bowl. Stir in the breadcrumbs, milk, onion, cheese, parsley, garlic, salt and pepper.
  • Next add the beef and with your fingertips lightly mix the ingredients until just combined but try not to over mix or compact the meat. Make the meatballs into 1 ounce balls (about 1 to 1 1/2-inches) compressing them just enough to form a ball and place in a 6-quart slow cooker. Cover with sauce and cook on HIGH for 4 hours or LOW for 8 hours.

If possible sauté the onions and garlic in about 3 tablespoons oil in a small skillet before adding to the crock pot, if not then just omit the oil, which will make this marinara sauce pretty much fat-free! You will need a minimum of 4-quart crockpot for this recipe. The longer you cook this sauce on low heat the thicker and richer it will be! but it can also be cooked on high-heat setting for about 5 hours if you want a quicker sauce, I strongly suggest to cook it for a longer time! If desired you can double the recipe, this sauce freezes very well!

1 (28 ounce) can whole Italian-style tomatoes (cut up and undrained)
2 large carrots, peeled and coarsely chopped
3 stalks celery, diced
1 large onion, chopped (about 1 cup)
1 tablespoon minced fresh garlic (can use more)
1 large bell pepper, seeded and chopped
1 (6 ounce) can tomato paste
1/2 cup water
2 -3 teaspoons sugar
2 -3 teaspoons dried Italian seasoning (rubbed between fingers to release the flavors)
2 -4 teaspoons dried red pepper flakes (optional or to taste)
1 large bay leaf
salt and black pepper (I use quite a lot of salt to bring out the flavor!)

Steps:

  • Place ALL ingredients in a minimum 4-quart crock pot/slow-cooker; mix well cover and cook on low heat for about 8-10 hours.
  • Uncover and cook on high heat for the last 1-1/2 hours.
  • Season with more salt and pepper to taste.

  • Remove the lid on the slow cooker, stir the sauce, and remove the bay leaves. If you don't like a chunky sauce, use a hand blender to puree the sauce. You can also transfer the sauce to a blender if you don't have a hand blender. Just be careful if the sauce is hot. Taste and season with additional salt and pepper, if necessary. This sauce is great with your favorite pasta, vegetables, layered between lasagna, with meatballs, on top of chicken or eggplant parmesan, or served as a dipping sauce for garlic knots or pizza rolls.
  • Note-you can cook on high for 2-4 hours, but I think the sauce is best cooked on low. It allows the sauce time to simmer and develop a rich flavor. This sauce freezes beautifully! Cool completely and pour the sauce into freezer bags or freezer containers. Freeze for up to 3 months.
