SLOW COOKER MARINARA SAUCE
My best friend showed me this slow cooker marinara recipe, and I just had to share it. The spices in here can all be adjusted to taste (and eyeballed), but this is how I learned to do it. The best flavor calls to cook it all day, but it can be made in a pinch if you have to! Serve over your favorite pasta or with crispy chicken. Can also be used in lasagna or ravioli.

CROCK POT MARINARA SAUCE (VEGETARIAN AND FAT-FREE)
If possible sauté the onions and garlic in about 3 tablespoons oil in a small skillet before adding to the crock pot, if not then just omit the oil, which will make this marinara sauce pretty much fat-free! You will need a minimum of 4-quart crockpot for this recipe. The longer you cook this sauce on low heat the thicker and richer it will be! but it can also be cooked on high-heat setting for about 5 hours if you want a quicker sauce, I strongly suggest to cook it for a longer time! If desired you can double the recipe, this sauce freezes very well!

- Place the onion, garlic, tomatoes, tomato paste, olive oil, bay leaves, basil, oregano, brown sugar, salt, pepper, and crushed red pepper in the slow cooker. Stir and put the lid on. Set the slow cooker to low and cook for 8 hours.
- Remove the lid on the slow cooker, stir the sauce, and remove the bay leaves. If you don't like a chunky sauce, use a hand blender to puree the sauce. You can also transfer the sauce to a blender if you don't have a hand blender. Just be careful if the sauce is hot. Taste and season with additional salt and pepper, if necessary. This sauce is great with your favorite pasta, vegetables, layered between lasagna, with meatballs, on top of chicken or eggplant parmesan, or served as a dipping sauce for garlic knots or pizza rolls.
- Note-you can cook on high for 2-4 hours, but I think the sauce is best cooked on low. It allows the sauce time to simmer and develop a rich flavor. This sauce freezes beautifully! Cool completely and pour the sauce into freezer bags or freezer containers. Freeze for up to 3 months.

- Add the olive oil to a skillet over medium heat. Sauté the onions for 5-7 mediums until they turn translucent in color but do not allow the onions to brown. Add the garlic and let cook for another 30 seconds. Add the red pepper flakes, parsley, dried oregano, and thyme and allow the oils to bring out the natural flavors, about 30 seconds.
- If using whole tomatoes, place in a large bowl and crush with hands so they break down just a little bit. Add the tomatoes, sugar, bay leaf, basil, and salt and pepper to the slow cooker, give it a stir to combine the ingredients. Let the sauce cook on the low setting for 6-6 ½ hours.

- Place blended tomatoes, fresh basil (if using dried basil-add in the last hour), onions, garlic, and oil in the crock-pot, cover with the lid, and cook on high for 8 hours (crushed tomatoes may cook quicker, so check after 4 hours and every hour after or cook them on low and check after 6-8 hours).
- In the last hour of cooking stir in the Italian seasonings, salt, pepper, and cook with the lid off or partially open to thicken the sauce.
- Continue cooking sauce as needed with the lid slightly ajar until desired consistency is reached. This might take hours depending on how watery your tomatoes were (I've cooked overnight in this step before). To expedite this process you can just boil your sauce in a pan on the stove top, too if you need the sauce faster. I've boiled part of it so I could use it then and there, and kept the rest cooking in the crock-pot for later use.

- Stir all of your ingredients in a 6 quart slow cooker. Cook on low for 8-10 hours to really get all of those lovely flavors to mingle and fall in love with each other. Salt and Pepper to taste when finished.
- For smoother sauce: use an immersion hand blender, or put in a blender. Blend on low until desired consistency. For thicker sauce: tilt the lid off of the crockpot and cook on high for about 30-60 minutes. This will reduce the sauce some so that it's thicker. Depending on the canned tomatoes sometimes the sauce can be a bit more "water-y". *If using a blender make sure the sauce is cool or blend in small batches*
- Freezing instructions: Let cool completely. I usually add about 2 cups to each freezer bag, press as much air out as possible, close the bag, and then stack on top of eachother in the freezer to save space.

- Cut the onion into a small dice and mince the garlic (or use pre-minced garlic from a jar). Place both in the slow cooker. Also add the crushed tomatoes, tomato paste, brown sugar, balsamic vinegar, bay leaves, basil, oregano, and freshly cracked pepper. Stir well to combine. If your slow cooker tends to lose moisture and dry things out, add 1/2 to 1 cup of water as well.
- Remove the lid on the slow cooker, stir the sauce, and remove the bay leaves. Season with salt to taste (I added about 1 tsp). Enjoy over your favorite pasta!
