This is a very easy and flavorful pasta dish. I love cooking in the crockpot, and coming home to the smell of dinner when I've been gone all day!

3-4 frozen chicken breasts, sliced
1 lb pasta of choice
1 stick butter
8 oz cream cheese
1 can(s) (10.5 oz) cream of chicken soup
1 envelope (0.7 oz) dry italian dressing mix (i used good seasons brand)

Steps:

  • 1. Place sliced, frozen chicken in the bottom of a crockpot. Cut butter and cream cheese into pieces, and add them, along with the cream of chicken soup and Italian seasoning mix, to the crock pot. Cook on low for 8 hours, or high for 6 hours, stirring periodically to mix sauce together.
  • 2. When ready to serve, boil pasta until it's cooked to your liking. Drain (don't rinse) and toss the pasta and chicken/sauce mixture together.
  • 3. Note** you can also use full chicken breasts. Just shred the chicken after cooking time, add it back into sauce, then mix with the cooked pasta.

1 can cheddar soup (14 ounce)
1 can chicken broth (14 ounce)
1/2 teaspoon salt
¼ teaspoon Cajun seasoning
¼ teaspoon garlic salt
1 Cup sour cream
1 bag frozen broccoli florets (12 oz., or 4 cups fresh broccoli lightly steamed)
1 Cup cheddar cheese (shredded)

Steps:

  • Spray crockpot with cooking spray and put cream of chicken soup, cheddar soup, chicken broth, salt, cajun seasoning, and garlic salt into the crockpot. Stir the soups and seasonings together until smooth. Place the chicken in the bottom of the crockpot.
  • Cover and cook on low for 4-6 hours or high 3 hours. The last 30 minutes of cooking, shred the chicken with two forks and add the broccoli, sour cream, and cheese. Cook for about 30 more minutes until the broccoli is tender and heated through.
  • Serve over white rice and garnish with more shredded cheese if desired.

Steps:

  • Heat oil in a medium saucepan over medium heat. Add garlic and saute for about a minute, until fragrant.
  • Add the cream and chicken broth. Bring to a gentle simmer, then set heat to low and simmer for about 10 minutes. The sauce will still be thin, but thicken enough to coat the back of a spoon.
  • Meanwhile, place the chicken at the bottom of a slow cooker. Season lightly with Italian seasoning, sea salt, and black pepper. Top with sun-dried tomatoes.
  • When the sauce is ready, keep it at low heat, but not simmering. Whisk in the Parmesan cheese, 1/4 cup at a time, until smooth. Adjust salt to taste if desired.
  • Pour the sauce evenly over the chicken in the slow cooker. Try to get as much sauce as possible on top of the chicken and less on the bottom.
  • Cook for 3-4 hours on High or 6-8 hours on Low.

  • Turn the slow cooker on High, if it isn't already. Add the chopped spinach and stir for a few minutes, until the spinach wilts.
