This is a wonderful recipe. Throw it in the crock pot in the morning and let it slowwww-cook all day. It fills the air with such a mouth-watering aroma. I added a package of chicken-flavored ramen noodles the last 5-10 min, which just added to the heartiness.

3 boneless skinless chicken breasts
2 medium potatoes, chunked
3 small cooking onions, chunked
1 (16 ounce) bag baby carrots
3 stalks celery, chunked
2 tablespoons prepared low-fat Italian salad dressing
29 ounces low sodium chicken broth
1 (3 ounce) package chicken-flavored ramen noodles
2 tablespoons seasoned flour, seasoned with
salt and pepper
1 teaspoon garlic powder
2 teaspoons italian seasoning
salt and pepper

Steps:

  • Put chicken breasts with Italian dressing in a large zip bag to marinate over-night.
  • Layer potato, celery, carrots and onion in crock-pot.
  • Dredge marinated chicken breasts in seasoned flour and set them on top of vegetables. Add the garlic powder, Italian seasoning and salt-n-pepper to taste.
  • Pour chicken broth over-all, and cook 8-10 hours on low.
  • During the last 5-10 min of cooking time, add package of ramen noodle dinner with seasoning, giving it a stir.
  • This is good served with crusty bread or warm dinner rolls.

1 tablespoon olive oil
2 pounds boneless skinless chicken thighs (cut into 1 1/2 inch pieces)
salt and pepper to taste
1 onion (diced)
3 carrots (halved and sliced into 3/4 inch chunks)
1/2 cup celery (sliced)
2 teaspoons minced garlic
1/4 cup butter
1/4 cup flour
5 cups chicken broth
3/4 pound small yellow potatoes (halved or quartered)
1 teaspoon dried Italian seasoning
3 sprigs fresh thyme
1 bay leaf
1/2 cup frozen peas
1/2 cup frozen cut green beans
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pot over medium high heat. Season the chicken generously with salt and pepper.
  • Cook the chicken in a single layer for 4-5 minutes on each side or until golden brown. You may need to cook in batches.
  • Remove the chicken from the pot; cover to keep warm.
  • Add the onions, carrots and celery to the pot. Cook for 4-5 minutes or until vegetables are softened.
  • Add the garlic to the pot; cook for 30 seconds. Remove the vegetables from the pot.
  • Melt the butter in the pot. Add the flour and whisk until combined. Cook for 1 minute.
  • Slowly pour the broth into the pot, whisking constantly.

2 lbs chicken breasts (Can use boneless thighs or 1 whole chicken cut up into 8 pieces)
1 lb carrots (cut into circles or into sticks)
3 cups potatoes (peeled and diced)
2 cups celery (about 4 celery ribs, sliced)
1 white or yellow onion (diced)
32 oz chicken stock (Can use chicken broth.)
1 tbsp fresh rosemary (chopped)
1 tbsp thyme (chopped)
1 tbsp minced garlic
1 1/2 tsp salt
1 tsp pepper
1 tsp garlic powder
1/2 tsp onion powder
3 tbsp arrowroot flour (Can omit.)
3 tbsp cold water
Additional salt and pepper to taste

Steps:

  • Add everything except the arrowroot flour, water, and optional additional fresh herbs to your slow cooker. Cook on high for 4 hours.
  • Use tongs to take the chicken out of the slow cooker. Use a fork to shred meat into pieces. If you used a whole chicken, remove skin and bones from chicken and discard.
  • To thicken, add arrowroot flour and cold water to jar. Shake until well combined. Pour into the slow cooker and stir. (Skip this step if you're making this stew in advance. If you're not eating it until the next day you may not need the arrowroot flour as the stew will thicken quite a bit as it refrigerates overnight.)
  • Place shredded chicken into the slow cooker. Stir.
  • Taste. Add extra salt and pepper if desired. (I like to add a little extra salt at the end but that's totally up to you.) Serve with optional additional fresh herbs.

2 Tbsp butter
1 onion (diced)
4 red potatoes (quartered)

1 packet of dry ranch dressing mix
1/2 cup heavy cream
1/2 cup sour cream

Steps:

  • PRESSURE COOKER DIRECTIONS:
  • Select the Brown or Sauté button on your unit. Sauté the onion, carrots, celery, beans, potatoes and chicken in 2 tbsp of butter for 20 minutes. Stir in the soup, ranch, cream, sour cream and salt & pepper to taste.
