ASIAN MEATLOAF IN THE SLOW COOKER RECIPE
This twist on meatloaf is made even easier in the slow cooker.

- Line a 3-quart or larger oblong slow cooker with aluminum foil. Spray with no-stick cooking spray. In large bowl, combine first 7 ingredients, ¼ cup Honey Teriyaki Sauce and 1½ teaspoons Sriracha sauce; salt and pepper as desired. Mix until just combined. Form into a loaf in slow cooker. In small bowl, combine remaining 2 tablespoons Honey Teriyaki Sauce, 1½ teaspoons Sriracha sauce and toasted sesame oil. Spread over top of loaf. Cook on LOW 5-6 hours. Serve drizzled with cooking juices, if desired. Makes 6 servings. Serve with mashed potatoes or rice and steamed green beans. Alternate Baking Directions: Preheat oven to 375°F. Prepare as directed in a greased 9x5-inch loaf pan. Bake 60-75 minutes or until internal temperature reaches 165°F on an instant-read food thermometer. Make Ahead & Freeze: Prepare step 2 and place in a gallon freezer bag. Place step 3 ingredients in a quart freezer bag. Place both bags in a gallon freezer bag. Seal well, label and freeze. SLOW-COOKER MEATLOAF

Steps:
- Combine the meatloaf mix, panko, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, the scallions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper in a large bowl; mix with your hands until just combined. Form into a 5-by-9-inch loaf.
- Transfer the meatloaf to a 6-quart slow cooker. Scatter the potatoes and carrots over and around the meatloaf. Pour in the chicken broth. Cover the slow cooker and cook 8 hours on low or 4 hours on high.
- When the meatloaf is done, skim off any excess fat from the juices in the slow cooker. Combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce and the brown sugar in a small bowl, then whisk in 1/4 cup juices from the slow cooker. Brush the top of the meatloaf with the ketchup mixture. Cover the slow cooker and let the meatloaf rest, 10 minutes.
- Remove the meatloaf from the slow cooker and slice in half. Serve half with the vegetables; top with more parsley. Reserve the remaining half for Meatloaf Quesadillas.
CROCK POT ASIAN MEATLOAF
Meat loaf with an Asian taste. I normally double the batch and after mixing it up I will freeze in individual portions to be cooked in the crock pot as needed. My Small Crock pot will hold two coffee cups so each person can put their main dish and side dish in the crock pot, each in a separate cup, and put on low so that when they get home it is ready for them.

MEATLOAF - CROCK-POT
I have 3 kids on 3 different sports teams, so during baseball season I do a lot of crockpot cooking since it seems like I'm always on the run. I was intrigued by the idea of cooking meatloaf in the crockpot but the couple of recipes I tried were very greasy and fell apart too easily. I came up with this recipe that my family really enjoys. I think the potatoes on the bottom are really key to the success of the result because they keep the meat up off the bottom and let it cook out of the liquid. I know the recipe is going to seem like too little liquid to start with, but the crockpot retains all the liquid inside and really is enough. Let me know what you think.

- Spray crockpot with non-stick cooking spray to help make clean up easier. Layer sliced potatoes and onions on bottom.
- Mix all the meatloaf ingredients together really well. I use an electric mixer to make sure everything is evenly mixed.
- Shape into an oval loaf and lay on top of the potatoes and onions - try to not let it touch the sides of the crock to prevent the heat of the crock from overcooking the meatloaf.
- Mix all the topping ingredients together and spoon on top of the meatoaf. Cook on high for an hour, then turn the crockpot down to low and cook an additional 4-5 hours or till its done all the way through.
- Add a salad and dinner is complete! Enjoy.

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. CROCK POT MEATLOAF

- To remove loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock.
- In a large bowl combine eggs, milk, bread crumbs, and soup mix. Mix well, then add meat. Mix thoroughly, then shape into a rectangle or oval that won't touch sides of crock. Place in crock. Cover and cook on low for 6 hours or high for 3 hours.

Steps:
- Place the milk and the bread in a large mixing bowl, and let stand until the bread has adsorbed all the milk.
- With two forks, break the bread into crumbs.
- Beat the ground beef into the crumbs until well mixed.
- Make a hollow in the center of the meat and break the eggs into it.
- Beat the eggs a little; then grate the onions into the eggs.
