These Sugar Cookies are marvelous! Light, Crispy, Yummy and so easy. I got this recipe from a co-worker many years ago. Dieters beware--it is hard to eat just one. Tip-I have tried to substitute margarine in place of the butter, and the cookies were not as good. I have also used colored sugars for dipping the glass into for the holidays and that worked very well. Not recommended for rolled out cookies as the dough is too delicate.

1 cup granulated sugar, divided
1/2 cup powdered sugar
1/2 cup butter, no substitutions (softened)
1/2 cup vegetable oil
1 large egg
1 teaspoon almond extract or 1 teaspoon butter flavor extract
2 1/3 cups flour
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, cream together 1/2 cup granulated sugar, powdered sugar, butter, and vegetable oil.
  • Beat in egg and extract.
  • Add next 4 ingredients and mix together. The dough will be somewhat soft. Refrigerate a few minutes if too soft to work with.
  • Shape into 1-inch balls and roll in reserved 1/2 cup of granulated sugar.
  • Place on an ungreased cookie sheet and flatten with the bottom of a glass that has been dipped in granulated sugar (or colored sugar if you prefer).
  • Bake at 350°F for 10-12 minutes.
  • Note: Cookies should be only very slightly browned. They will be a more of a light golden color.

1 teaspoon vanilla extract

3/4 cup superfine sugar

Steps:

  • For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the superfine sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. 1 cup granulated sugar
2 eggs, lightly beaten
1 teaspoon vanilla
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Colored sugar and milk, for decorating, or Royal Icing, recipe follows
2 pounds confectioners' sugar
1/2 cup plus 2 tablespoons meringue powder (egg white powder)
Food coloring, as desired

Steps:

  • Cream the butter and sugar in a large bowl with an electric mixer. Beat in the eggs and vanilla.
  • Combine the flour, baking powder and salt in a second large bowl and mix well. Stir the flour mixture into the butter mixture 1 cup at a time. Chill the dough for 3 to 4 hours.
  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment. Roll out the dough and cut it into shapes with cookie cutters or a knife. Place the shapes on the prepared cookie sheet. If decorating with colored sugar, brush the cookies with milk and sprinkle with colored sugar (if using royal icing, leave unfinished). Bake until the cookies are just beginning to brown around the edges, 10 to 15 minutes, depending on the size of the cookies.
  • Remove the cookies to a rack to cool completely. If using royal icing, decorate the cookies as desired.
  • Combine the confectioners' sugar, meringue powder and 3/4 cup water in a large bowl. Mix slowly with an electric mixer until stiff enough to form peaks; the icing should be pure white and thick, but not fluffy and bubbly. If the frosting is over-beaten, it will get aerated which makes it harder to work with. If this happens, let the frosting sit to settle, and then use a rubber spatula to vigorously beat and smooth out the frosting.
  • Add up to 1 tablespoon food coloring and mix with a rubber spatula until the color is uniform. Gels are best with royal icing. You don't want to thin them with liquid colors. Be careful of adding too much color, which reduces the sheen of the frosting and can break down the consistency of the frosting over a couple of days. Store the icing at room temperature, covered, with plastic wrap on the surface.
  • Yield: 3 1/2 cups icing

From Food and Wine Magazine When I lived on the island of Hawaii, every Sunday I would buy cookies at the farmers' market from an elderly woman everyone called Tutu, or "Grandmother." She would sell only one bag per person until she ran out, which took about 30 minutes. Before I moved away, I asked her for the recipe. She gave it to me on the condition that I couldn't share it with anyone for 25 years. 3/4 teaspoon kosher salt
3/4 teaspoon baking soda
2 cups all-purpose flour
1 tablespoon pure vanilla extract
1 1/2 cups rice krispies cereal
3/4 cup sugar
1 cup unsalted butter, at room temperature

Steps:

  • Preheat the oven to 300°. In a large bowl, using an electric mixer, beat the butter with the sugar and salt until smooth and fluffy. Mix the baking soda with the vanilla, then add to the butter mixture. Add the flour, 1 cup at a time, mixing well between additions. Gently stir in the Rice Krispies.
  • Lightly butter 2 baking sheets. Spoon 2-tablespoon-size mounds of cookie dough onto the prepared baking sheets, spacing them about 3 inches apart. Bake for 15 minutes, then remove the pans from the oven. Gently flatten the cookies with a spatula. Rotate the pans from top to bottom and front to back and continue baking until the cookies are lightly cracked on the top and golden brown on the bottom, about 25 minutes longer. Let cool slightly, then transfer to racks to cool completely.

I found this recipe in Yankee magazine in an article they used to feature called "Recipe with a History." This is my adaptation. Prep time includes chilling time, as well as time to roll out and cut the dough. Bake time is 12-15 per baking sheet.

1 1/2 cups granulated sugar
1 cup sweet unsalted butter
2 large eggs, beaten
1/2 cup heavy cream
1 teaspoon vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Cream together the butter and the sugar.
  • Beat in the eggs, cream, and vanilla.
  • Combine flour, baking powder, and salt, then stir into the creamy mixture.
  • Cover and chill until firm.
  • Roll out on a very lightly floured surface very thin.
  • Cut with lightly floured cookie cutters and set onto lightly greased cookie sheets (or line cookie sheets with parchment paper).
  • Bake in a preheated 350°F oven for 12-15 minutes (or until light brown).

I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

5 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cream of tartar
¼ teaspoon salt
1 cup butter
2 cups white sugar
2 eggs
1 cup vegetable oil
1 teaspoon vanilla extract
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. Stir together the flour, baking soda, cream of tartar, and salt; set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in eggs, vegetable oil, and vanilla. Gradually stir in flour mixture until smooth. Stir in nuts. Drop dough by rounded teaspoonfuls onto the prepared cookie sheets. Flatten cookies with a fork.
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges begin to brown. Cool on baking sheets for a minute before transferring to wire racks to cool completely.
