AIR FRYER "SHAKE 'N BAKE" STYLE FISH
The boxes say to moisten the fish fillets first and we added more options to do this: ice water, milk, egg or mayo.Lots of factors influence how the fish fillets cook. They all vary in size and thickness, so you'll have to adjust timing. All air fryers are different and some cook much hotter than others. Once you cook your first batch, you'll know more of what works for your model of air fryer and size of food. Steps:
- Preheat Air Fryer at 380°F/195°C for 4 minutes.
- Cut fish fillets in half if needed. Make sure they are even sized so they'll cook evenly. (The thicker they are, the longer they will take to cook). Moisten the fish based on seasoned coating instructions (or by using ice water, beaten egg, milk, or mayo). Coat with the seasoned coating mix.
- Spray air fryer basket/tray with oil or place a perforated parchment sheet in the air fryer basket/tray & lightly coat with oil spray (this helps keep the seasoned coating from sticking to the surface & coming off).
- Place the coated fish in a single layer (cook in batches if needed). Make sure the fish is not touching or the coating may flake off when you flip them. Lightly coat with oil spray.
- Air Fry at 380°F/193°C for 8-14 minutes, depending on the size and thickness of your fillets. After 6 minutes, flip the filets. Lightly spray any dry spots than then continue cooking for the remaining time or until they are crispy brown and the fish is cooked through. Serve with your favorite dip: tartar sauce, mustard, aioli, etc.

BAKED FISH AND CHIPS

- Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F using the convection setting, if available. Place a baking sheet on one of the racks to preheat.
- Prepare the chips: Cut the potatoes into 1/4-inch-thick sticks. Toss with the olive oil and cayenne in a bowl. Carefully remove the hot baking sheet from the oven, add the potatoes and spread in an even layer. Use a rubber spatula to scrape any oil from the bowl over the potatoes. Bake on the top oven rack, turning once, until browned and crisp, 25 to 30 minutes. Season with salt.
- Meanwhile, make the fish: Set a wire rack on a baking sheet and coat with cooking spray. Lightly crush the cereal in a bowl with your fingers. Add 2 teaspoons salt, and black pepper to taste. In another bowl, whisk the egg whites and a pinch of salt until frothy.
- Dip the fish in the egg whites, then roll in the cereal crumbs to coat. Place the fish pieces on the rack (position them on their sides so that the majority of the crust is exposed) and mist with cooking spray.
- Bake the fish on the bottom oven rack until crisp and just cooked through, about 12 minutes. Season with salt and black pepper. Serve the fish and chips with tartar sauce and/or malt vinegar, if desired.
CRISPY SHAKE N BAKE FISH
Steps:
- MIX dressing, lemon juice and seasonings until well blended.
- SPREAD dressing mixture evenly onto both sides of fish, then coat both sides evenly with coating mix. Discard any remaining coating mix. Place in single layer in greased shallow baking pan.
- BAKE at 375°F for 12 to 15 minutes or until fish flakes easily with fork.
