CRISPY POTATOES WITH BACON, GARLIC, AND PARSLEY



Crispy Potatoes with Bacon, Garlic, and Parsley image

Number Of Ingredients 7

1 1/2 pounds red-skinned potatoes, quartered with skin (about 1 1/2-inch pieces)
Kosher salt, plus 1 teaspoon
3 pieces bacon, cut into 1-inch pieces
1 to 2 tablespoons unsalted butter or oil
2 tablespoons chopped flat-leaf parsley leaves
1 to 2 large cloves garlic, minced
Freshly ground black pepper

Steps:

  • Put the potatoes and salt in a medium saucepan and cover with cold water. Bring to a boil over high heat and simmer for 1 minute, then drain. Pat dry.
  • Meanwhile, put the bacon in a well-seasoned cast iron skillet or a saute pan over medium-low heat, and cook until nearly all the fat has rendered and the bacon is crispy, aromatic, and browned, about 5 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel lined plate.
  • Add the 1 to 2 tablespoons of butter or oil to the remaining bacon fat. Increase the heat to medium. Add the potatoes, positioning them in the pan so the cut sides get nice and brown. Cook turning only as needed until the potatoes are golden brown, about 15 minutes. Stir in the parsley, garlic, and bacon and stir until fragrant and lightly browned. Season with 1 teaspoon of salt and pepper. Serve.

Clam, Garlic, and Bacon Flatbread image

3 Tbsp butter, melted
2 cloves of garlic, minced
2 1/2 Tbsp parmesan cheese, grated
Olive oil
Store bought pizza dough, rolled out as thin as possible into an 11 inch circle
5 slices of bacon, cooked and chopped
8 oz can of clams, drained
Parsley, for garnish

Steps:

  • Begin by combining the butter, garlic, and parmesan cheese together in a small bowl. Pre heat an oven to 450 degrees.
  • On a baking sheet, drizzle a little olive oil on the bottom and spread to coat to make a thin layer. Place the pizza dough circle on top of the olive oil. Place the dough in the oven and bake for about 5 minutes or until the dough is starting to brown slightly. Remove from oven and brush the butter, garlic, and parmesan mixture over the crust. Add the bacon and clams and place back in the oven for 3-5 minutes to warm everything and finish cooking the dough.
  • Remove from the oven, garnish with parsley, and serve immediately.

1/4 cup tomato sauce
2 Tbsp. KRAFT Grated Parmesan Cheese
1 cup KRAFT Shredded Italian* Five Cheese with a TOUCH OF PHILADELPHIA
4 slices cooked OSCAR MAYER Bacon, crumbled
1/4 tsp. pepper
1/4 tsp. dried oregano leaves

Steps:

  • Heat oven to 425ºF.
  • Spray both sides of flatbread with cooking spray; place on baking sheet.
  • Spread with tomato sauce; top with remaining ingredients.
  • Bake 7 min. or until flatbread is crisp and cheese is melted.
