1/2 cup grated Parmesan

Steps:

  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.

1 (4-ounce) piece of Parmesan Reggiano cheese (without the rind)
1 tablespoon all-purpose flour
1 teaspoon minced fresh thyme leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
  • Grate the Parmesan using the large grating side of a box grater, as you might use to grate carrots. Combine the Parmesan, flour, thyme, salt, and pepper in a bowl and mix well. With a measuring spoon, spoon level tablespoons of the mixture onto the prepared sheet pans, spreading each round into a 3-inch disk. Toss the mixture each time and scoop from the bottom of the bowl to be sure you get some flour in each spoonful. Bake in the middle of the oven for 8 to 10 minutes, until golden brown.
  • Cool on the pans for 5 minutes, loosen with a metal spatula, then cool completely on a baking rack. Serve at room temperature.
  • Note: This recipe was doubled for this episode.

2½ pounds Tyson® Crispy Chicken Strips
1 tablespoon vegetable oil
3 cloves garlic or 1½ tablespoons minced garlic
1 cup onion, diced
4 Roma tomatoes, seeded, chopped
15 ounces diced tomatoes, canned, with juice
16 ounces tomato sauce
2 tablespoons tomato paste
1½ teaspoons salt
½ teaspoon pepper
¼ cup fresh basil, chopped
8 ounces fresh mozzarella cheese, sliced
8 ounces vermicelli pasta

Steps:

  • 1.Preheat oven to 400°F. 2.Heat oil in a large skillet over medium heat and saute garlic and onion for 5-7 minutes. Add tomatoes and heat for an additional 5 minutes. Stir in the cans of diced tomatoes and sauce and bring to a boil. Boil for 5 minutes. Reduce heat to low and stir in tomato paste, salt, pepper and basil and continue to heat for 10 minutes. 3.Prepare Crispy Chicken Strips according to package directions on a foil-lined baking pan. 4.Prepare pasta according to package directions. 5.When Crispy Chicken Strips are cooked, remove from oven and leave on same baking pan. Place 1 piece of mozzarella cheese on each Chicken Strip and cover with ¼ cup of the basil tomato sauce. Return to the oven and heat for 5-7 minutes or until cheese has melted. 6.Serve over prepared pasta. - Remember to wash hands and surfaces before preparing food

  • Prepare oven broiler. On an ungreased baking sheet, toast each side of bread until crisp, 1 to 3 minutes per side. Sprinkle tops with Parmesan, marjoram, and pepper. Return to broiler until cheese melts and begins to bubble, 1 to 3 minutes. Serve warm.

1 thin, crusty baguette
2 tablespoons unsalted butter (optional)
1 clove garlic, peeled
1 cup coarsely grated Parmesan

Steps:

  • Heat oven to 400 degrees. Cut baguette at a sharp angle into 1 1/2-inch slices. Spread both sides with butter, if desired, and place on a baking sheet.
  • Toast in oven until golden brown, 3 to 4 minutes on each side.
  • Rub garlic clove on one side of each toast and top with a sprinkling of cheese. Return to oven and toast until cheese is crisp and golden brown, 8 to 10 minutes. Turn heat down to 350 degrees if toast begins to brown too fast. Serve warm or at room temperature.

2 tablespoons olive oil
1 small shallot, sliced
4 cups sliced mixed mushrooms (oyster, shiitake, cremini and white)
2 teaspoons chopped fresh marjoram
2 cloves garlic, minced
Kosher salt and freshly cracked black pepper
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
Zest and juice of 1/2 lemon
Four 1/2-inch-thick slices rustic Italian bread, toasted
1 cup baby arugula leaves

Steps:

  • Heat the olive oil in a large sauté pan over medium-high heat. Add the shallot and cook until translucent, about 1 minute. Add the mushrooms and cook, stirring, until they give off their liquid and are golden brown, about 6 minutes. Add the marjoram, garlic and some salt and pepper. Stir and cook for 1 minute more.
  • Meanwhile, add the ricotta, Parmesan, lemon zest and juice and salt and pepper to taste to a food processor and process until very smooth.
  • Spread the whipped ricotta on the toasted bread. Toss the arugula with salt and pepper. Arrange the mushrooms on the ricotta mixture, then top with the arugula.
