4 skinless, boneless chicken breast halves, pounded to an even thickness

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Whisk bread crumbs, Parmesan cheese, paprika, salt, and black pepper together in a shallow bowl. Stir butter, white wine, mustard, and garlic together in another bowl.
  • Dip each chicken breast half into melted butter mixture; press into bread crumb mixture to evenly coat. Place breaded chicken in a single layer on the prepared baking sheet. Pat any leftover bread crumb mixture onto chicken breasts.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 Breasts Chicken (sliced in half)
6 Tablespoons butter (divided)
1/2 cup Italian Bread Crumbs
1/2 cup grated parmesan
1/4 cup flour
8 ounce pasta of choice (I used thin spaghetti)
1/2 cup heavy whipping cream
1/2 cup grated parmesan cheese
juice of one lemon
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Chopped fresh parsley for garnish (if desired)

Steps:

  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. (It shouldn't take too long because the chicken should be thin).
  • Meanwhile cook the pasta according to package directions and drain. In a medium sized skillet add the heavy whipping cream, parmesan cheese, lemon juice, garlic powder, salt and pepper. Whisk together and cook over medium high heat until it starts to thicken. Remove from heat and add the pasta to coat in the sauce.
  • Serve the chicken with the pasta and garnish with chopped fresh parsley if desired.

1 tablespoon vegetable oil
3 cloves garlic or 1½ tablespoons minced garlic
1 cup onion, diced
4 Roma tomatoes, seeded, chopped
15 ounces diced tomatoes, canned, with juice
16 ounces tomato sauce
2 tablespoons tomato paste
1½ teaspoons salt
½ teaspoon pepper
¼ cup fresh basil, chopped
8 ounces fresh mozzarella cheese, sliced
8 ounces vermicelli pasta

Steps:

  • 1.Preheat oven to 400°F. 2.Heat oil in a large skillet over medium heat and saute garlic and onion for 5-7 minutes. Add tomatoes and heat for an additional 5 minutes. Stir in the cans of diced tomatoes and sauce and bring to a boil. Boil for 5 minutes. Reduce heat to low and stir in tomato paste, salt, pepper and basil and continue to heat for 10 minutes. 3.Prepare Crispy Chicken Strips according to package directions on a foil-lined baking pan. 4.Prepare pasta according to package directions. 5.When Crispy Chicken Strips are cooked, remove from oven and leave on same baking pan. Place 1 piece of mozzarella cheese on each Chicken Strip and cover with ¼ cup of the basil tomato sauce. 1 1/2 cups seasoned croutons (whichever kind you like)
1/3 cup parmesan cheese
1 teaspoon parsley
1/4 teaspoon garlic salt
2 egg whites
1 tablespoon water
1 lb boneless chicken breast
ranch dressing

Steps:

  • Cut the chicken breast into strips--the size is your choice.
  • Crush the seasoned croutons and place in a dish.
  • Add the Parmesan cheese, parsley, and garlic salt--mix well.
  • In a separate bowl whisk the egg whites and water together.
  • Dip the chicken into the egg wash and then into the crumbs.
  • Place on sprayed pan and bake at 450 degrees for 14-16 minutes.
  • Serve with Ranch Dressing.

Okay, so sometimes being out of something turns out to be a good thing! When I went to make my traditional fried chicken tenders I realized that I was out of bread crumbs and was also out of bread to make bread crumbs. Looking around I discovered a box of parmesan/garlic crackers and crushed them up in place of the crumbs. Absolutely, positively DELICIOUS! The kids now claim this is the only way to make chicken tenders! Hope you enjoy!

1 lb chicken tenders
1 cup flour
1 teaspoon garlic powder
1 teaspoon pepper (we like to use white pepper but regular black will work fine too)
2 eggs, beaten
1/2 cup parmesan cheese, grated
3/4 cup cracker, crushed (I used Parmesan Garlic Cheez-its)
oil, for frying

Steps:

  • Combine flour with garlic powder & pepper in a bowl.
  • Crack eggs and beat till throughly combined in a seperate bowl.
  • Combine parmesan cheese and crushed crackers in a third bowl.
  • Start by coating the chicken pieces in flour, then dip in egg wash and then dip into cracker mix.
  • Set coated chicken onto a plate. When finished coating all the chicken, put the plate in the fridge for at least 30 minutes to let the coating "set-up".
  • In a large fry pan, heat 1/2" of oil to medium high heat (I don't use a thermometer but I'm guessing 350 degrees).
  • Pan fry in small batches till golden brown on all sides - depending on size of your tenders, 5-6 minutes per side.
  • Remove to a paper towel lined plate till all the chicken is done.
  • We served it with pasta and spaghetti sauce but i'm guessing it would go with about anything.

4 boneless skinless chicken breast halves
2 egg whites (beaten with a fork until frothy)
1 cup regular breadcrumbs
1/3 cup grated parmesan cheese (freshly grated prefered)
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
ground black pepper (to taste)
olive oil (to fry in)
12 ounces linguine (cooked according to pkg directions)
1/3 cup olive oil
1 teaspoon minced garlic
1/2 lemon, juice of
1/2 cup grated parmesan cheese (freshly grated prefered)
3/4 teaspoon salt
3/4 teaspoon red pepper flakes

Steps:

  • Place chicken breast pieces between plastic wrap and pound flat to approx 1/4 inch thickness.
  • Place egg whites in a dish and the remaining dry ingredients in a seperate dish.
  • Dip chicken in egg to coat and then in dry ingredients (Do one piece at a time).
  • Fry coated chicken pieces in olive oil until cooked through and golden brown and crispy on the outside.
  • Drain pieces on paper towel or grate.
  • While linguine is hot, mix it together with all the other ingredients thoroughly- taking care to sprinkle in the cheese as not to have it all melt together in a lump.
  • Serve individual portions of linquine with a chicken piece on top.
