EASY CREAMY CAJUN SALMON



Easy Creamy Cajun Salmon image

Cajun salmon cooked in creamy garlic herb sauce is the most delicious 15 minute, one pan dinner recipe. Weeknight dinner, sorted!

500 g (1lb) salmon fillets
1 tbsp olive oil
2 tbsp Cajun seasoning
1 tbsp butter
4 garlic cloves (crushed )
½ tsp chilli flakes
2 tbsp parsley (finely chopped )
1 tsp dill (finely chopped )
1 tsp thyme
1 cup cream
1 tsp lemon juice
salt and pepper (to taste)

Steps:

  • Pat the salmon fillets dry with paper towel. Drizzle over the olive oil then season generously with Cajun seasoning, salt and pepper.
  • Heat a large frying pan over medium high heat.
  • Add the salmon, skin-side down, and cook for 2-3 minutes until the skin is crisp.
  • Flip over and cook for another 2-3 minutes on the other side. Remove from the pan and set aside while you make the sauce.
  • In the same pan you cooked the salmon, melt the butter then add the garlic and herbs.
  • Sauté for a few minutes until fragrant then pour in the cream and lemon juice.
  • Allow to simmer for a few minutes then season with salt and pepper.
  • Add the salmon back to the sauce and allow to simmer for another 2 minutes. Serve immediately.

4 6-ounce salmon filets, with skin
Kosher salt
3 tbsp olive oil
1 tsp minced garlic
2 tbsp diced shallot
1 large leek, white part only, washed well and diced
1-1/2 cups shelled fresh cannellini beans, cooked
2 cups white wine
1 tsp unsalted butter

Steps:

  • 1. Season the fish on both sides with salt and pepper. Heat 3 tablespoons of the olive oil in a saute pan. Place the salmon, skin-side down, in the pan and cook (without moving the fish) until the skin is crispy, about 4 to 5 minutes. Reduce the heat, turn the salmon, and continue to cook for another 3 to 4 minutes.
  • 2. Meanwhile, heat the remaining tablespoon oil in another saute pan over medium heat. Add the garlic, shallots, and leek; saute for 3 to 5 minutes until the leak begins to soften.
  • 3. Add the cannellini beans and the wine; bring to a gentle simmer. Add the butter. Season to taste with salt and pepper.

3/4 teaspoon paprika
1/2 teaspoon pepper, onion powder, garlic powder, thyme
2 salmon fillets
1 tablespoon olive oil
1 red bell pepper, sliced
1 orange bell pepper, sliced
3/4 cup heavy cream
1 tablespoon butter

Steps:

  • In a small bowl, combine the salt, paprika, freshly ground black pepper, onion powder, garlic powder, thyme powder, and cayenne pepper together to make the Creole seasoning blend.
  • Pat the salmon fillets dry with a paper towel and season with 1 teaspoon of the seasoning blend.
  • Heat a large skillet to medium-high and coat with the olive oil. Sear the salmon flesh-side down for 4 to 5 minutes or until crispy, and dark golden in color. Flip the salmon skin-side down and sear an additional 4 minutes, and remove from heat. Set the salmon aside.
  • Reduce the skillet heat to medium. Add the bell peppers and sauté for 5 minutes or until slightly softened. Add remaining seasoning blend to pepper mixtures and cook for 1 minute.
  • Pour in the heavy cream and bring the mixture to a simmer. Reduce the heat to low and simmer for 4-5 minutes or until the cream mixture has thickened. Melt in the butter and stir to combine. Add the salmon back to the skillet to simmer in the sauce for 3 to 5 minutes.

CRISPY-SKIN SALMON WITH CURRIED YOGURT SAUCE

Nailing perfectly crispy skin on salmon is easier than you think. The secret is prepping the fish before cooking it. Scraping the residual moisture will guarantee a crisp skin. You can also scrape it a few hours or days before cooking.

Two 6-ounce salmon fillets, skin on, scales and pin bones removed
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1/2 cup whole-milk Greek yogurt
1/2 cup chopped fresh cilantro
Grated zest of 1 lemon
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/2 teaspoon garam masala
1/2 teaspoon curry powder
Kosher salt and freshly ground pepper

Steps:

  • For the salmon: Pat the fillets dry with paper towels. With the sharp edge of a knife, scrape the skin back and forth the length of a fillet over and over with light pressure. You will see moisture build up on your knife edge; wipe it away. Continue for about 1 minute, until there's almost nothing to wipe away. Cut a few 2- to 3-inch slits across the middle of the salmon skin. Repeat with the remaining fillet.
  • Season the salmon with salt and pepper on both sides. Drizzle with the oil and set aside until ready to cook.
  • For the yogurt sauce: Combine the yogurt, cilantro, lemon zest and juice, oil, garlic, garam masala and curry powder in a small bowl. Mix with a fork until well combined. Season with salt and pepper to taste. Set aside.
  • Heat a 9- to 11-inch cast-iron skillet over medium-high heat for 3 to 4 minutes. There is no need to oil the pan, because you oiled the fish. Add the fillets skin-side down, laying them away from you. Cook for about 3 minutes, or until golden brown. Shake the pan until the salmon releases from the bottom of the pan by itself.
  • Carefully turn the salmon over and reduce the heat to medium-low so the flesh side cooks more slowly. Cook until a thin-bladed knife inserted into the flesh meets with just a little resistance or an instant-read thermometer inserted into the thickest part of a fillet registers 125 degrees F, 2 to 3 minutes (thinner pieces will be done quicker than the thicker ones).
  • Serve the fillets topped with some of the yogurt sauce.

  • Mix together all of the Spice Rub ingredients in a medium bowl. Remove 2 tablespoons and rub evenly all over salmon. Reserve remaining spice rub for the sauce.
  • In a large heavy bottom skillet, heat 1 tablespoon olive oil over medium-high heat (medium if your stove runs hot). Once hot, add fillets, turn heat down to medium and cook approximately 4 minutes, until crispy and blackened. Flip salmon over and cook an additional 3-6 minutes to your liking (will depend on thickness). If salmon is is browning too quickly, then turn down the heat. Remove salmon to a plate and tent with foil.
  • To the oil left in the skillet (don’t wipe out), add enough oil to equal 1 tablespoon if needed. Heat over medium-high heat. Once hot, add onions, and cook 3 minutes; then add bell peppers, garlic and reserved spice mix and cook 2 minutes.
