CRISPY COATED CAJUN FRIES

Crispy Coated Cajun Fries image

Potatoes are coated in a spicy mixture of corn flour and Cajun seasoning then deep fried until crispy. Very simple and really crunchy. I like mine extra spicy so I soak my cut potatoes in hot sauce for a few seconds before shaking them in the dry batter.

HOMEMADE CRISPY SEASONED FRENCH FRIES

Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Categories     Side Dish     Potato Side Dish Recipes

Time 25m

Yield 8

Number Of Ingredients 8

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

  • Soak you potatoes! If you can, soak your potatoes in a bowl of water overnight or at least an hour. If that isn't possible, even 15 minutes of soak time will help and is much better than not soaking them at all.
  • To prevent steamed, mushy potatoes, remove your potatoes from the water and pat them dry with a paper towel. This may take a few extra minutes but is definitely worth it!
  • Place the dried off potato strips in a large bowl and toss with olive oil, oregano, garlic powder, onion powder, paprika, salt, thyme and ground pepper until coated well. Add the cayenne pepper and red pepper flakes now or see notes on when to add them.

  • Heat oven to 425 degrees F (218 C) and use the convection setting if you have it. This will allow the fries to become more crispy on the edges and cook faster. If you don’t have a convection setting, no worries. You’ll just bake for slightly longer. Convection simply speeds up the process.
  • Line 1 large or 2 small baking sheet(s) with parchment paper or silicone baking mats and set aside (this is important or the fries will stick). (See notes for best way to cook large batches of fries.)
  • Wash and scrub your potatoes clean but leave the skin on. Add to a large saucepan or pot and cover with water by 1 inch. Add a pinch of salt.
  • Bring to a boil over high heat and cook until a knife slides in easily and is easily removed — ~25-35 minutes depending on the size of your potatoes. You don’t want them to be cracking or falling apart, but you do want them to be tender and pretty much cooked through. Remove from the water and allow to cool on a cutting board (~5-10 minutes).
