CRISPY FRIED CALAMARI RECIPE (KALAMARAKIA TIGANITA)

- To prepare this super easy fried calamari recipe, clean the calamari and wash thoroughly. Using a sharp knife cut the calamari in slices, approx. 1 cm each. This will create the rings, as seen in the picture below. Place the calamari rings on some paper towel to get ride of the excessive water.
- Prepare the seasoning for the fried calamari. In a blender add the seasoning and pulse until powdered. (Alternatively you can use a pestle.)
- In a large sandwich bag or tupperware add the flour and seasoning. Place in the sliced calamari and shake well to coat (you will need to do this in batches). Remove the calamari onto a plate, shaking of any excess flour.
- Into a medium sized frying pan pour enough vegetable oil to deep fry the calamari. Heat the oil to medium high heat until it begins to bubble. Test if the oil is hot enough by dipping one of the calamari rings in; if it sizzles the oil is ready. Fry the calamari in batches for about 2-3 minutes, until nicely golden.
- Remove the fried calamari using a slotted spoon and place on some paper towel to dry for 1-2 minutes. Have a taste and sprinkle with some more salt.

- Preheat oil to 370 degrees F (185 degrees C) in a deep fryer, deep frying pan, or pot.
- Coat squid with garlic powder, onion powder, salt, oregano, basil, parsley, paprika, cayenne, and white pepper in a medium bowl. Mix thoroughly. Add flour and toss to dredge.
- Fry squid in the hot oil, in batches if needed, until light brown, 2 to 3 minutes. Do not overcook, or squid will be tough and chewy. Drain on paper towels. Serve with lemon wedges and marinara sauce.

- Stir flour, 2 teaspoons salt, paprika, and black pepper together in a shallow bowl.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Press calamari rings into the flour mixture until evenly coated, shaking off excess flour.
- Working in batches, fry calamari rings in the hot oil until golden brown, 3 to 4 minutes. Transfer cooked calamari to a paper towel-lined plate; sprinkle with salt. Serve calamari with cocktail and lemon wedges.

I threw this together tonight when another appy I planned to make fell through. SO fattening, but oh, my goodness, so worth it!! I served this with Mean Chef's Aioli (#54833).

Steps:
- Mix together flour, cayenne and salt in a medium-sized bowl.
- Feel free to add other ingredients to the flour mix if you want--any herbs or zests (like lemon) would be great.
- Put 3 eggs in a bowl (cracked, of course!) and beat lightly.
- Place panko on a plate.
- Start heating oil to med-high heat in medium-large pan on stovetop.
- Dip a few thawed calamari rings into the flour.
- Toss till coated.
- Dip flour-coated rings into the egg mixture.
- Toss flour- and egg-coated rings with Panko.
- (An easy way to do this is to have the panko in a plastic ziploc bag--and toss.) Shake off excess panko and put in preheated oil on stovetop.
- Don't crowd the pan!
- Allowing enough space between rings will ensure that they all cook evenly.
- Pan fry till panko is golden and calamari is tender.
- Don't overcook---overcooked calamari tastes like rubber!
- Serve with dipping sauces of your choice; I like Mean's Aioli (#54833).
- Enjoy.
- And then go for a run or take a nap.
- (This makes 4 servings for an appetizer, if you are looking for a substantial appy, or maybe 2-3 servings for a full meal. This is a FILLING dish).
CRISPY FRIED CALAMARI & AïOLI

- Cut the tentacles off the squid and put in a bowl. Slice the squid tubes into roughly 1cm thick rings and add to the bowl. Heat the oil in a large heavy-based pan over a low heat, ensuring it is no more than two-thirds full.
- For the aïoli, mix the mayonnaise, garlic, saffron and lemon juice in a small bowl. Set aside.
- Toss the squid with the flour, cornflour, baking powder, cayenne and ½ tsp salt. When the oil has reached 170C on a thermometer, or when a cube of bread is dropped in and turns golden brown in 30 seconds, deep-fry the squid in batches for 2 mins, or until lightly golden and crisp. Set aside on a tray lined with kitchen paper. Serve the fried squid with the aïoli on the side for dipping.

TENDER FRIED CALAMARI
I've been on a mission to duplicate the calamari at Ruths Chris Steakhouse without much success. Come to find out that they keep the squid alive in tanks until ordered on the menu... no wonder! I've done a lot of research, and came up with this recipe... they turned out awesome! Very tender. Ruths Chris serves the fried calimari in a sweet and spicy clear asian sauce, there are several brands in asian markets to choose from. Okay... Here is the best tip ever when frying calamari... after dredging the rings in flour, turn the rings inside out... this way they stay wide open for mor even frying!:) Came up with that one myself.

Steps:
- Slice squid into rings. Cut any hard parts off of tentacle sections. I trim the long tentacles.
- Rinse and drain squid and dry between papaer towels. (excess moisture makes squid rubbery)
- Mix flour, cornmeal and seasonings in a LARGE bowl.
- Put oil into a small deep pan, and heat to 350° using a thermometer.
- Place squid pieces in bowl with flour mixture and swirl around coating all pieces well.
- Place about 6 or 7 calamari at a time into the hot oil. Cook for only about 1 minute. will be a vary pale barely golden color. Don't overcook, or it will be tough! Remove from oil and drain on paper towels. Repeat until all squid is cooked.
- Serve immediately with your favorite sauce.
CRISPY SQUID WITH CAPERS

- Cut the squid into rings about ½cm thick. Tip the flour into a freezer bag and season well. Add the capers, then give everything a good shake to mix together. Tip the squid into the bag, then shake again until all the rings are well coated. Mix together the garlic and mayonnaise, then place in a serving bowl.
- Pour some oil into a large pan until it comes about 7cm up the sides, but the pan is no more than a third full. Place over a medium heat and let the oil warm up. To test that the oil is ready, place a small piece of bread in the pan - it should sizzle when it touches the oil.
- Remove a handful of squid from the flour and shake off any excess. Gently drop into the oil, then cook for about 3 mins until crisp. Remove with a slotted spoon and place on kitchen paper. Repeat with the remaining squid. Serve straight away with the mayonnaise and lemon wedges.
