These are absolutely divine!! I am always asked to bring these for our school's bake sale and they are always the first to go! If there are any leftovers (which is doubtful) I prefer to keep the in the refrigerator.

1 (19.5 ounce) package brownie mix
½ cup vegetable oil
¼ cup water
2 eggs
1 (7 ounce) jar marshmallow creme
1 (12 ounce) bag milk chocolate chips
1 cup peanut butter
3 cups crispy rice cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place brownie mix into a mixing bowl and stir in vegetable oil, water, and eggs; beat 50 strokes with a spoon. Spread the batter into the prepared baking dish.
  • Bake brownies in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 25 to 30 minutes. Check after 25 minutes. Let the brownies cool while you complete remaining steps.
  • Spread marshmallow creme over the warm brownies. Place milk chocolate chips and peanut butter in a large saucepan over low heat and stir until the mixture is warm, completely melted, and smoothly combined. Stir in the crispy rice cereal until thoroughly coated and spread over the marshmallow creme layer, pressing and filling any voids. Refrigerate until set, 20 to 30 minutes. Cut into bars to serve.

1-2/3 cups granulated sugar
¾ cup butter, melted
2 tablespoons water
2 PA Preferred large eggs
2 teaspoons vanilla extract
1-1/3 cups flour
¾ cup dark chocolate baking cocoa
½ teaspoon baking powder
¼ teaspoon salt
1 cup rich and creamy vanilla frosting
½ cup salted peanuts, coarsely chopped
2 cups crisp rice cereal
⅔ cup creamy peanut butter
1-1/3 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350ºF. Grease a 13x9 baking dish.
  • In a large bowl, combine the sugar, butter and water. Stir in the eggs and vanilla.
  • In a medium bowl, combine the flour, cocoa, baking powder and salt. Add to the sugar mixture and stir.
  • Spread the batter into the prepared baking dish. Bake for 18 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  • Spread the frosting over the cooled brownies, then sprinkle with the peanuts. Refrigerate while making the cereal mixture.
  • Place the cereal in a medium bowl and set aside. In a one-quart saucepan, melt the peanut butter and chocolate chips over low heat, stirring constantly. Pour over the cereal and stir until evenly coated.
  • Spread the coated cereal over the frosted brownies. Refrigerate for 1 hour before cutting.

3 cups mimi marshmallows
3 tablesoons butter
1 package chocolate chips
1 cup peanut butter
2 cups rice krispies

Steps:

  • 1. Mix and bake brownies according to package directions. When brownies are done, sprinkle marshmallows over top and return to oven for 3 minutes.
  • 2. Remove from oven and spread marshmallows over brownies using knife dipped in cold water, cool. For topping melt butter, chocolate chips and peanut butter in saucepan. Stir in Rice Krispies.
  • 3. Spread topping over cooled marshmallows. Let stand until cooled and topping has set.

3 ounces toasted slivered almonds, approximately 3/4 cup
1 1/2 ounces coarsely chopped dried cranberries, approximately 1/3 cup
1 1/2 ounces coarsely chopped dried cherries, approximately 1/3 cup
1-ounce dried blueberries, approximately 1/3 cup

Steps:

  • Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil and set aside. Preheat the oven to 425 degrees F.
  • Spread the brown puffed rice evenly on a sheet pan. Toast in the oven for 4 minutes, stirring occasionally. While the rice is toasting, prepare the marshmallow mixture.
  • Place the oil, honey, and marshmallows in a large mixing bowl set over a pot of gently simmering water. Stir until the marshmallows are melted, approximately 4 to 5 minutes. Once the marshmallows are melted, quickly add the toasted brown rice, almonds, and fruit and stir to combine. Coat your hands or a spatula with oil and spread the mixture evenly into the pan. Once the mixture has cooled completely, cut into squares and store in an airtight container for 1 to 2 days.

This is an adaptation of a "Brownie Goody Bar" recipe I found on the back of a Better Crocker brownie box a few years ago. We also call them Scotcharoo Brownies, because they have a butterscotch, peanut butter, rice crispy layer on top of a fuggy brownie. This is my family's favorite sweet treat! They are sooo good. I usually wrap them individually in suran wrap and store in the refrigerator so that they do not all get eaten at once. This slows the guys down a little.

1 (12 ounce) bag butterscotch chips
1 cup creamy peanut butter
3 1/2 cups crisp rice cereal (use 4 cups for a thicker rice crispy layer)

Steps:

  • Heat oven to 350. Make brownies as directed for a 9 x 13-inch pan. Cool completely.
  • Melt butterscotch chips and peanut butter in a 1-quart saucepan or in a glass bowl in microwave (1 1/2 minutes on high) stirring frequently.
  • Stir cereal into peanut putter butterscotch mixture.

1 (10 3/4 ounce) bag mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1 cup peanut butter

2 cups crisp rice cereal

Steps:

  • Preheat oven to 350 degrees F.
  • Grease the bottom of a 9" x 13" baking dish.
  • Prepare and bake the brownies according to box directions.
  • Remove from oven and immediately sprinkle with the mini marshmallows. Return to oven for another 3 minutes or until marshmallows just start to puff up.
  • Remove from oven and set aside, allow to cool off a little bit.
  • Place chocolate chips, peanut butter and butter in medium saucepan. Melt over low heat, stirring constantly to avoid burning.
  • Remove from heat and add the crispie cereal, mix well.
  • Drop spoonfulls of chocolate crispie mix over the marshmallows and spread across to cover the top.
  • Allow to cool completely before cutting into bars.
  • Might want to refrigerate if it's warm in the house.

Steps:

  • In a bowl, combine the cake mix, oil and egg until crumbly. Set aside 1 cup for topping.
  • Firmly press remaining mixture into a greased 13" x 9" baking pan; set aside.
  • In a bowl, combine the milk, chocolate, peanut butter and vanilla until smooth. Spread over crust.
  • Sprinkle with reserved crumb mixture.
  • Bake at 350 for 25-30 minutes or until brownies pull away from the pan.

In the original recipe, it has 3/4 cup chopped peanuts that you add to the top of the frosting layer, but I despise nuts and so these are optional if you like them! I am not including the chill times, just in preparing in each step.

1/2 cup oil
1/3 cup water
3 eggs
1 lb vanilla frosting
3 cups crisp rice cereal

Steps:

  • Make the brownies by combining the brownie mix, oil, water, and eggs. Stir well. Pour the batter into a large baking dish and bake at 375 degrees for about 18-20 minutes and they are cooked through.
  • Cool completely for about an hour. Frost the brownies and refrigerate for about 20 minutes.
  • While the brownies are chilling again, melt the peanut butter and the chocolate chips in a large pan on the stove. Add the crispy rice cereal and stir well. 1 box betty crocker fudge brownie mix
4 c mini marshmallows
1 c creamy peanut butter
1 1/3 c semi-sweet chocolate chips
3 Tbsp butter, unsalted
2 c rice krispies cereal

Steps:

  • 1. Preheat oven to 350 degrees. Line a 13×9 inch pan with parchment paper.
  • 2. Prepare brownies using amount of oil, eggs, water called for on box. Two minutes before they are supposed to be done, pull brownies from the oven and sprinkle marshmallows across top. Return to oven for 2 minutes to soften marshmallows. Remove from oven and spread soft marshmallows over top of brownies. Let cool completely on a wire rack.
  • 3. Prepare topping. In a microwave-safe bowl, combine chocolate chips, peanut butter and butter. Heat on high for 30 seconds. Stir and repeat until chocolate is melted and mixture is smooth. Add cereal and stir to coat. Drop spoonfuls of chocolate mixture over marshmallow layer, spreading as evenly as possible. Things will look gooey at this point, so don't even think about cutting. Put the brownies in the refrigerator for a few hours to chill.
  • 4. Lift from pan and score into squares (about 16 or 20).
