My Crispy Beef Flautas are made with shredded beef chuck roast thats been simmered with spices, chiles and tomatillos, then rolled inside a flour tortilla that is deep fried to a crispy snack. Melt cheese on top, serve with sour cream, dip it in guacamole or salsa, either way, these are one great lunch or snack.

2 lbs chuck roast
1 tbsp adobo seasoning
2 tbsp olive oil
1 lb tomatillos (husked and quartered)
1 yellow onion (peeled and quartered)
6 cloves garlic
4 jalapeños (sliced lengthwise)
2 tbsp ground cumin
1 tbsp salt
1 tbsp black pepper
12 flour tortillas
Vegetable oil or lard (for frying)

Steps:

  • Season both sides of the chuck roast with the adobo seasoning. Add the oil to a Dutch oven or large pot with lid over medium high heat. Sear the roast on all sides until browned, about 8-10 minutes. Remove and cut into quarters. A
  • Add beef back to the pot and along with the tomatillos, onion, garlic, jalapeños, cumin, salt and pepper and enough water to cover by an inch (about 4+ cups).
  • Bring to a boil, lower heat to simmer and cover. Cook for 2 hours and meat is fork tender. Remove beef from the pot, shred in a bowl and add 1/4 cup of braising liquid, and some of the vegetables (optional), tossing to coat and mix in. Discard remaining.
  • Heat tortillas in microwave for a minute or in a 350°F oven (5 minutes) wrapped in a moistened paper towel until soft.
  • Place 2-3 tablespoons of the shredded beef into each tortilla and roll tightly. Secure closed with a toothpick. I often times will press two rolled flautas side by side, flap ends touching, and skewer in the middle with a tooth pick (as pictured), keeping two secured (optional).
  • Heat vegetable oil or lard in a large cast iron skillet or deep fryer until oil reaches 350°F. Carefully lower 2-4 flautas into the hot oil and cook on each side until crisp, 1-2 minutes.
  • Serve immediately with cheese sprinkled and melted on top or with condiments of choice like guacamole, Mexican crema, sour cream, crumbled Cotija cheese or salsa.

2-1/2 teaspoons canola oil
2 pounds fresh beef brisket
2 medium onions, chopped
2 medium green peppers, chopped
2 cups water
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried marjoram
1 teaspoon pepper
20 corn tortillas (6 inches), warmed
Oil for deep-fat frying
Optional toppings: guacamole, sour cream and salsa

Steps:

  • In a Dutch oven, heat oil over medium heat. Brown brisket on all sides. Add onions, peppers, water and seasonings. Bring to a boil. Reduce heat; simmer, covered, 1 to 1-1/2 hours or until meat is tender., Remove meat; cool slightly. Shred meat with 2 forks. Drain onion mixture; add to meat. Spoon 1/4 cup beef mixture down the center of each tortilla. Roll up and secure with toothpicks. In a cast-iron or electric skillet, heat oil to 375°. Fry flautas, in batches, for 1 minute on each side or until golden brown., Drain on paper towels. Remove toothpicks. If desired, serve with toppings.

I always order flautas at restaurants but have yet to see a recipe anywhere that makes them the way I like them - crispy. Instead of baking them, this recipe uses a deep fryer. It melds the flavors together and makes them extra crunchy. Serve with rice, salad, or whatever side dish you desire.

1 teaspoon vegetable oil
½ green bell pepper, chopped
½ onion, finely diced
1 pound skinless, boneless chicken breast, cut into 1-inch pieces
1 (1 ounce) package taco seasoning mix
¾ cup water
1 (10 ounce) package corn tortillas (such as Ortega®)
½ cup shredded Cheddar cheese
1 cup salsa
24 toothpicks
2 cups vegetable oil for frying

Steps:

  • Heat 1 teaspoon vegetable oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Increase heat to medium-high and stir in the chicken breast. Cook and stir until the chicken breast is no longer pink in the center, about 10 minutes. Shred the chicken using two forks. Stir in the taco seasoning and water. Simmer until the liquid has evaporated, stirring occasionally, about 10 minutes. Stir in the Cheddar cheese, then remove from heat, and set aside.
  • Lightly brush each corn tortilla will a layer of salsa. Spread about 2 tablespoons of the chicken mixture in a line along the bottom edge of the tortilla. Tightly roll the tortilla into a cylinder, and secure the ends with one or two toothpicks. Repeat with remaining tortillas.
  • Heat 2 cups vegetable oil in a large skillet to 375 degrees F (190 degrees C).
  • Fry the flautas in the preheated oil, no more than 4 at a time, until golden and crisp, about 4 minutes. Drain the flautas on a paper towel-lined plate. Discard toothpicks and top finished flautas with remaining salsa.

For the filling:
2 pounds boneless beef chuck, cut into 2-inch pieces
2 onions
3 garlic cloves
1 teaspoon salt
2 tablespoons olive oil
1/2 cup tomato sauce
1 fresh or pickled jalapeño chili, or to taste seeded and chopped (wear rubber gloves)
3/4 teaspoon ground cumin
twelve 7-inch tortillas, warmed (procedure follows)
vegetable oil for frying flautas
3 cups shredded romaine or iceberg lettuce
guacamole and sour cream as accompaniments

Steps:

  • Make the filling:
  • In a large saucepan combine the beef, 1 of the onions, sliced, 1 of the garlic cloves, the salt, and water to cover, bring the water to a boil, and simmer the mixture, covered partially, for 1 1/2 to 2 hours, or until the beef is tender. Let the beef cool in the broth, drain it, reserving 1/3 cup of the broth, and with forks shred it. In a large skillet cook the remaining onion, minced, and the remaining 2 garlic cloves, minced, in the oil over moderately low heat, stirring, until the onion is softened, add the shredded beef, the tomato sauce, the chili, the cumin, the reserved broth, and salt and pepper to taste, and simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened. Let the filling cool.
  • Working with 1 warmed tortilla at a time and keeping the others covered, spread about 2 rounded tablespoons of the filling down the center of each tortilla, roll up the tortillas, enclosing the filling, and secure the ends closed with wooden picks. Keep the rolled tortillas covered with plastic wrap. The flautas may be prepared up to this point 2 hours in advance and kept covered tightly with plastic wrap and chilled.
  • In a large skillet heat 1/2 inch of the oil over moderately high heat until it is hot but not smoking, in it fry the flautas in batches, turning them, for 1 to 2 minutes, or until they are crisp, and transfer them with tongs as they are fried to paper towels to drain. Spread the lettuce on a platter or divide it among 6 plates, arrange the flautas on it, and top them with the guacamole and the sour cream.
  • To warm tortillas:
  • In the oven: Stack 6 tortillas at a time wrap each stack in foil, and heat the tortillas in the middle of a preheated 325°F. oven for 5 minutes for corn tortillas and 15 minutes for flour tortillas. (If the tortillas are very dry to begin with, pat each tortilla between dampened hands before stacking them.)
  • In the microwave: Stack 6 tortillas at a time, wrap each stack in a microwave-safe plastic bag, and heat the tortillas in a microwave oven at high power (100%) for 30 seconds to 1 minute, or until they are heated through and pliable.

I learned how to make these from my mom who very rarely cooked. They are very cheap to make and I usually have the ingredients on hand so when the cupboard is bare I can usually whip these up. Make sure to serve these with plenty of guacamole and sour cream.

1 (12 ounce) can roast beef brisket (fully cooked)
25 corn tortillas
vegetable oil
guacamole
sour cream
salsa
shredded cabbage

Steps:

  • Empty can of roast beef and broth in small saucepan and heat over medium high heat. Break up the chunks of meat until shredded and stir to incorporate the broth until heated through.
  • Meanwhile wrap a stack of 12 tortillas in a damp paper towel and microwave on high for 2 minutes.
  • Heat about 1 inch oil in a large skillet over medium high heat.
  • Pull tortillas out one at a time making sure to keep the rest covered. Using a fork, place aproximately 2 teaspoons of beef in a horizontal line about 2 inches from the edge of the tortilla. Roll up the tortilla away from you and secure with a toothpick. (Similar to how you would use a safety pin). Make sure to roll the flautas fairly tightly to keep the contents inside and avoid splatters. Also, don't overload the flautas with meat, they don't get as crispy.
  • As you complete rolling each flauta place it in the hot oil (should be about 365 degrees). Using tongs, turn occasionally until golden brown. Drain and then place on a plate lined with paper towels. Remove toothpick.
  • As you are finishing rolling the first set of tortillas, heat the second set and roll and fry in the same manner.
  • Place a few flautas on a plate and top with sour cream, guacamole, salsa and shredded cabbage. Now sit back and enjoy the smiles.

1 pound ground chicken, preferably dark meat

2 teaspoons chopped chipotle in adobo, plus 2 teaspoons sauce
1/4 cup chopped cilantro leaves and tender stems, plus more for serving
2 teaspoons fresh lime juice
6 ounces Monterey Jack, shredded (1 1/2 cups)
6 flour tortillas (each 8 inches)
Pico de gallo, for serving

Steps:

  • Preheat oven to 425°. Heat oil in a large skillet over medium-high. Add chicken; season with salt and pepper and cook, breaking up with a spoon, until browned, 3 to 4 minutes.
  • Stir in tomato paste, chipotle and sauce, and 1/2 cup water. Bring to a simmer, then reduce heat and cook until most of liquid has evaporated, about 2 minutes. Stir in cilantro and lime juice.

Seasoned beef, Anaheim chiles, and cheese rolled up in a crispy tortilla. Killer game day food. Traditionally pan-fried, which is very simple to do as well, but they just came out too perfect in the old air fryer.

7 peppers Anaheim chile peppers
2 pounds ground chuck
⅓ pound bulk chorizo sausage
¼ cup canola oil, or as needed
2 ½ (12 fluid ounce) cans or bottles light beer
¾ cup salsa
2 tablespoons ground ancho chile powder
2 tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon onion powder
1 tablespoon sea salt
1 teaspoon dried marjoram
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
24 (8 inch) flour tortillas
2 cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Place peppers, cut-sides down, onto the prepared baking sheet.
  • Roast peppers in the preheated oven until the skins are brown and crispy, about 15 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins. Dice flesh and set aside.
  • Combine ground chuck and chorizo in a bowl, kneading together as evenly as possible.
  • Heat 1 tablespoon oil in a pot over medium heat. Add meat and cook and stir until browned and crumbly, about 10 minutes. Strain out 90% of the grease.
  • Stir beer, salsa, chile powder, garlic powder, cumin, onion powder, salt, marjoram, black pepper, and cayenne into the meat. Stir in 1/2 of the diced chile peppers. Crank up the heat and bring to a boil. Reduce heat to low and simmer until most of the liquid has disappeared, about 2 hours; don't let all the liquid evaporate or you'll have dry meat.
  • Brush one side of a tortilla with some of the remaining canola oil. On the dry side, about 1/2 inch from one side of the tortilla, spoon a line of beef and chorizo, sprinkle with Colby-Jack cheese, and top with some diced chile peppers. Roll the loaded side over multiple times until the tortilla is in a tight roll. Make sure it is tight by tucking the first rotation up under the meat. Set rolled tortilla seam-side down on the wire rack of an air fryer. Repeat with remaining tortillas.
  • Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions.
  • Fry in the preheated air fryer for 6 minutes. Serve immediately.

1 lb extra lean ground beef
1 medium onion
1 teaspoon minced garlic
1 1/2 teaspoons chili powder
1 teaspoon dry oregano
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon pepper
2 teaspoons Worcestershire sauce
1/2 cup mild chili sauce or 1/2 cup canned tomato sauce
12 corn tortillas
cooking spray

Steps:

  • Heat oven to 400 degrees.
  • Place ground beef, onion, and garlic in a large skillet that has been sprayed with cooking spray and brown over medium-high heat.
  • Using a spatula crumble beef into small pieces as it cooks.
  • Add the chili powder, oregano, paprika, cumin, pepper, Worcestershire sauce and chile sauce to the pan and mix well.
  • Wrap 6 of the corn tortillas at a time in a damp kitchen towel and warm briefly in the microwave- just enough to soften.
  • For each flauta, spray both sides of 2 tortillas with cooking spray.
  • Lay the tortillas down so they overlap by 4 inches.
  • Spoon 1/4 cup or so of filling down the side of the paired tortillas and roll up tightly, the beef mixture should be in the center.
  • Place on a heavy cookie sheet.
  • Repeat with the others.
  • Bake flautas, at 400 degrees until the tortillas are crisp, about 15 minutes.
  • Serve with salsa, sour cream and guacamole.

  • Transfer roast to a plate to cool. Save liquid and vegetables in the pan. Once roast is cool enough to handle, shred meat into bite-sized pieces. Return to cooking liquid. Add zucchini and cilantro and stir to combine.
