This healthy alternative to french fries is coated in coarse Panko-style bread crumbs and baked until crispy, crunchy, and totally addictive.

1 pound fresh green beans (ends trimmed)
2 cups Panko bread crumbs
1/3 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper
2 eggs
2 tablespoons olive oil
The juice from one small lemon (optional)

Steps:

  • Heat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper or a silicone mat.
  • In a small baking dish (room for the beans to roll around), stir together the Panko bread crumbs, parmesan cheese, garlic powder, salt, and pepper. Crack eggs into a shallow dish and whisk along with 2 tablespoons water.
  • Working with three or four beans at a time, dip the beans into the egg, then roll in the crumbs, turning and rolling to coat. Gently lay beans on the baking sheet in a single layer.
  • Evenly drizzle olive oil on top of fries.
  • Bake for 15-20 minutes, until tender and golden brown.
  • Squeeze a little lemon juice over the beans if you'd like and sprinkle with additional salt, if desired. Serve immediately.

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the egg in a shallow dish with 1 tablespoon water. In another shallow dish, stir together the Parmesan, garlic powder and some salt and pepper. Dip the green beans first in the egg mixture, rolling them to fully coat.   • Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.

I always sprinkle them with a little extra sea salt when they come out of the oven, and enjoy them warm with low sugar ketchup! I can almost gaurantee that you can get even the pickiest of eaters to not only eat but to love their veggies!

14 ounces Green Beans (fresh or frozen)
1/4 cup Parmesan cheese finely grated
1/2 teaspoon garlic powder
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 425(F) degrees. Line a baking sheet with foil, and spray with non-stick cooking spray. If using frozen green beans, pop the bag of green beans in the microwave for 3-4 minutes, or until just de-thawed (or you could leave them out at room temperature for a few hours). If using fresh green beans, wash and snip off the ends. Place green beans on prepared baking pan, making sure they are evenly spread out, and none are laying on top of each other, (this will ensure even crispiness!) 1 egg, beaten
1 cup milk
4 cups vegetable broth or 4 cups chicken broth
6 -8 ounces fresh green beans
1 cup flour
1 cup plain breadcrumbs or 1 cup seasoned dry bread crumb
3/4 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
vegetable shortening (for frying) or vegetable oil (for frying)

Steps:

  • Place beans in the broth. Bring to a boil and cook 15 minutes, then drain and place in cold water to stop cooking process.
  • Mix beaten egg with milk in a shallow bowl. Measure 1 cup of flour into another shallow bowl. Combine bread crumbs, 3/4 teaspoons salt, black pepper, onion powder and garlic powder into a third bowl.
  • Take a handful of beans out of the water and shake off excess liquid. Coat the beans with the flour, shaking to remove excess flour. Dip the beans, one at a time, into egg/milk mixture, then dip in breadcrumb mixture. Place the beans on a plate until all are coated.
  • Heat the shortening or oil to 350 degrees F in a heavy skillet (or use deep fryer). Use enough to cover the beans, about 1 1/2 inches. Fry until golden brown, about 1 1/2 minutes. Drain on paper towels.
