- Preheat oven to 375 degrees F.
- Add the frozen chicken wings (or drumettes if you prefer) to a large gallon-sized zippered bag with the baking powder. Shake the wings to coat.
- Line a sheet pan with parchment paper (or foil). Place an oven-safe baking rack on top of the lined sheet pan. Lightly oil the rack.
- Place the baking powder coated frozen wings on the baking rack and bake for 80 minutes, or until the internal temperature of the wings is 165 degrees. If desired you can broil the chicken wings for the last two minutes of cooking time to get them even more browned.
- Whisk together the buffalo sauce, chili garlic sauce, maple syrup and salt. Add the baked chicken wings to a bowl and toss them with the sauce until they are evenly coated.
- Serve the wings with fresh carrots and celery and blue cheese dressing.

- If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
- Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
- Line the tray with foil. Spray the rack on the baking tray with oil.
- Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
- Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.
- Then move the tray up to the higher shelf and turn the oven up to 425°F / 220°C. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over.
- The wings are ready when they are dark golden brown and the skin is very crispy.
- Toss with Hot Sauce and serve immediately with Blue Cheese Dip and celery sticks. They can be served plain, with a dipping sauce or tossed in sauce. Wings also reheat crispy!
- Whisk together the Sauce ingredients. Keep warm or reheat just prior to using.
- Mash the blue cheese with sour cream until smooth (or to your taste).
- Add remaining ingredients and mix well until combined, using milk to get it to the consistency you want.
- Store in the fridge until required. Remove from the fridge 15 minutes before serving.

- Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. - Line a sheet tray with tin foil and pace a wire cooling/baking rack inside. Toss the wings with the baking powder, smoked paprika, cumin, and arrange the wings one single layer and place in fridge for at least 2-4 hours. If you need to do two sheet trays that's fine. The cold air will dry out the chicken skin and help make it really crispy in the oven.
- Pre-heat oven to 400 F. Season the wings with a good pinch of salt and spray some avocado oil over the skin. Place the sheet trays in the oven for 45 minutes, rotating the pans after 25 minutes, then turn the broiler to medium and cook another 5-7 minutes, or until the wings have are deep golden brown. Keep your eye on the wings or they will burn.
- While the wings are baking, make the buffalo sauce by adding everything to a small pot, bring to a gentle simmer, and cook for 5 minutes. Taste the sauce, it may need more maple syyup or monk fruit sweetener if you choose to use it. if you want to make the sauce incredibly velvety, blend it up. I like to use a hand blender for this. Remove from heat, but warm the sauce up right before tossing with the wings.
- Make the avocado dipping sauce by adding everything to blender or food processor and mixing well. Check for seasoning, you may need more lemon juice or salt. Sauce can be made ahead of time and stored in the fridge, it will not turn brown because of the lemon juice.
- Once the wings come out of the oven, place in a very large bowl and add enough buffalo sauce to coat, mix and shake well. Add more sauce if needed. Serve wings with leftover buffalo sauce and the avocado dipping sauce, enjoy!
