15 MINUTE CRISPY AIR FRYER BREADED CHICKEN BREAST
This Crispy Air-Fryer Chicken Breast is such an easy meal you can have ready in 15 minutes. Tender, protein-rich chicken breast coated in an incredibly flavorful parmesan breadcrumb mixture, then air-fried to crispy, juicy perfection with no oil at all. A healthy chicken recipe you must try!

- Prep the chicken. Dry the chicken by patting it dry with a clean paper towel then slice it in half lengthwise. This is easy to do with a sharp kitchen knife.
- Make the coating mixture. Crack the eggs into a medium shallow bowl, sprinkle with salt and pepper and lightly whisk until the yolks are broken down and the mixture is nice and bright yellow. Pour the breadcrumbs into a separate shallow bowl and add more flavor by mixing in 1/4 cup of shredded parmesan cheese and some dried parsley, which is optional but will add more flavor to the chicken. You can also buy parmesan and herb breadcrumbs that are already seasoned.
- Coat the chicken breast. Dredge each piece of chicken in the egg mixture then in the breadcrumbs mixture, pressing the breadcrumbs into the chicken to get it all nice and coated. Place the breaded chicken breasts onto a clean plate.
- Preheat the air-fryer and cook. Preheat the air-fryer to 390 degrees F. Once it is ready, spray the basket with olive oil spray. Generously spray each piece of chicken as well. Place two pieces of chicken at a time (or however many you can fit in your air fryer in a single layer.) into the air-fryer basket, close and cook for 11 minutes, turning the chicken over halfway through the cooking time. Continue until all of the chicken is cooked. Air-fryers may vary. See notes section for what brand I used for this recipe
- Slice and serve. Let the chicken rest for a few minutes after cooking then sprinkle it with salt and pepper and a squeeze of lemon for more flavor. Slice it on a bias and serve with your favorite salad or healthy side dish.

- Preheat your air fryer to 400 degrees.
- Place the chicken breast between two layers of parchment paper. Use a rolling pin or meat mallet to gentle press the chicken so it's an even width throughout. Dry the chicken breasts off with paper towel.
- Pour the oil onto the chicken (I do this right on the parchment) and rub all over, coating it equally. Sprinkle with a pinch of salt.
- Combine the rest of the ingredients in a small bowl, shaking together. Pour onto a large rimmed plate.
- Cover each of the chicken breasts well with the panko mixture, and then place onto the mesh basket of your air fryer, making sure to leave room between the breasts - they would not be touching.
- Spray the tops of the chicken with cooking spray and cook 8 minutes. Gently flip and cook another 6-8 minutes until the chicken is crispy and golden and an instant read thermometer reads 165 degrees Fahrenheit inserted into the chicken

CRISPIEST AIR FRYER BREADED CHICKEN BREASTS

- Remove the chicken breasts from the packaging and pound them into an even thickness. If your air fryer has a metal rack, set it in the tray. Cooking the chicken on the rack promotes crispy chicken.
- Whisk together flour, 1/2 teaspoon of the salt, and 1/2 teaspoon of the pepper. Pour it out onto a plate.
- Add the egg to a bowl.
- Whisk the Panko breadcrumbs together with the remaining salt and pepper. Pour that out onto an additional plate.
- Dip the chicken breasts into the flour mixture, then the egg, and then the Panko mixture until all of the pieces are coated.
- Lay the chicken on the rack in your air fryer if you're using one.
- Slide the tray into the air fryer, and turn the dial to 350°F. Set the timer for 22 minutes.
- The chicken should have an internal temperature of 165°F before serving and it will be golden brown and delicious.

- Coat the chicken in the oil and set aside. In a bowl, combine the salt, garlic, paprika and mixed herbs with a good grinding of black pepper, then scatter onto a plate.
- Roll each oiled chicken breast in the seasoning and put in your air fryer basket. Cook at 180C for 18-20 mins, turning after 10 mins. To check it is cooked, pierce the chicken with a knife at the thickest part to see if the juices run clear. Or insert a temperature thermometer and it should read 70C. Serve with rice and greens or a salad.
