Watermelon Salad Recipe image

Fresh sweet watermelon is mixed with thinly sliced onion and snips of fresh basil for a refreshing and very different taste.

4 cups watermelon (seeded & cubed)
1 onion (medium sliced very thinly & quartered)
2 tablespoons basil (fresh, snipped)
1/4 cup raspberry vinegar
salt & pepper to taste
lettuce leaves for serving (optional)

Steps:

  • In a medium bowl, combine the watermelon, onion and basil. Pour the vinegar over the watermelon mixture and toss gently to combine. Season to taste with salt and pepper.
  • To serve this fabulous summer salad, line a platter with lettuce leaves. Spoon the watermelon mixture on top just when you are ready to serve it. Of course, you can also simply spoon it into a serving bowl.

My DBF(the truck driver) came home with extra watermelons from his delivery so I had to do somthing with them. This is very tasty, colorful and refreshing on a warm day.

1 watermelon (seedless is so much easier)
1 honeydew melon
1 cantaloupe
1 fresh pineapple
2 cups strawberries
2 cups blueberries
2 cups raspberries
2 teaspoons lemon juice
2 tablespoons lime juice
2 tablespoons orange juice
1/3 cup water
2/3 cup sugar

Steps:

  • Slice the watermelon lengthwise about 1/3 of the way from the top.
  • This will be your bowl so you may have to slice a small portion off the bottom in order for it to sit flat.
  • Either ball or chunk the watermelon flesh.
  • Hollow out the watermelon shell completely.
  • Ball or chunk the remaining melons.
  • Chunk the pineapple.
  • Mix all the fruits in the melon bowl.
  • Combine the juices, water and sugar together.
  • Pour over the fruits and toss lightly.
  • Chill if desired or serve immediately.

  • Dice avocados if using and place in a large bowl. Squeeze lime juice over avocado and stir.
  • Add watermelon, olive oil, cider vinegar, mint, salt & pepper to taste. Toss to combine.
  • Top with feta cheese and serve.

Recipe from a restaurant called Iron Barley here in St. Louis. They say this recipe is for 2 dinner size entree portions. If you are going to serve it as a side dish it will serve 4, but they recommend you cut the watermelon in smaller pieces if doing smaller salads. Cooking time is actually marinating time. NOTE: I served just the marinated watermelon as a side dish (didn't put it atop greens nor did I use onions) and it was great with BBQ meat!!!

1/2 cup red wine vinegar
1/3 cup honey
2 tablespoons brown sugar
1 1/2 teaspoons black pepper
1 tablespoon orange juice
1 pinch salt
1 cup olive oil
4 -5 cups of ripe watermelon, cut in 2-inch-square chunks
1/4 large red onion, sliced vertically into 1/4-inch slivers
4 cups mixed baby greens (include some bitter greens in the mix)

Steps:

  • Mix first six ingredients in a deep-sided bowl. Drizzle and whisk the olive oil into the mixture to emulsify. Set aside.
  • Mix the watermelon and red onion together in a large bowl.
  • Pour the dressing over the melon, turning to coat all sides. Return it to the refrigerator and let the melon marinate for 20 minutes or less. NOTE: I cut my melon very small and it was best after about 5 minutes in the marinade!
  • Layer the field greens on a small dinner plate.
  • Place the chunks of watermelon (allowing some of the dressing to transfer to the lettuce) and the onion in the center of the greens.
  • Grind pepper to taste over the salad.
