- Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.

- Peel the English cucumber, then very thinly slice it into rounds. Put the slices on paper towel, lightly salt, and wait 20 minutes. This will draw out some of the liquid, make the cucumbers firmer, and bring out the delicate flavor of the cucumber. When the timer goes off, blot the cucumbers to take off excess moisture and salt.
- Wash and pat dry the fresh dill. Chop it up and place it in a bowl along with the softened cream cheese. Stir with a spoon until well combined.
- Lay 12 slices of bread on a large cutting board. Lightly butter half of them with unsalted butter since there will be enough salt in the cucumber rounds. Spread the cream cheese with dill on 6 slices of bread.
- Squeeze the juice from one lemon into a small bowl, then quickly dip the cucumber slices into the lemon juice one at a time. Carefully place ten or twelve overlapping cucumber rounds in two rows on top of the slice with the cream cheese. Sprinkle with white pepper.
- Place the other bread slice on top of the sandwich. Using your hand, press down on the bread as you cut the crusts off, then slice the sandwiches into fingers, squares, or triangles. For the picture, I cut each sandwich into four triangles.
- Serve immediately for best freshness.

- 1. Blend together, in medium bowl, cream cheese and mayonaise.
- 2. Divide mixture into four separate portions and put into individual bowls.
- 3. Into one bowl, combine pineapple along with the 4oz. portion cream cheese, set aside.
- 4. Into the next bowl, place the chopped green olives and mix with the cream cheese, set aside.
- 5. Combine the cucumbers into the third bowl along with the cream cheese, combine and set aside.

- 7. To assemble sandwiches, spread one of the fillings on top of the white bread slices and top with slices of wheat bread. Cut each sandwich into triangle, squares or circles. Arrange the cut sandwiches on to a large platter by type of sandwich filling. Garnish with parsley, bacon pieces, poppy seeds or pecans.

- For each filling, remove the crusts from the bread and lightly butter. Spread the filling (see below) over half the bread slices and top with the remaining ones. Cut each one into 3 finger sandwiches.
- For the egg mayonnaise and pancetta filling: Bring a large pan of water to the boil, lower in five of the eggs and simmer for 8 minutes. Beat the cream cheese with a squeeze of lemon juice in a bowl to loosen. Add the garlic and onion seeds, then season with black pepper. Thickly spread your sandwiches with the cream cheese mixture and layer the cucumbers on top.
- For the tea-smoked salmon filling: You will need a deep roasting tin with a rack that fits comfortably inside and comes about halfway up the side of the tin (you could use chicken wire and a wok instead). Put the tea leaves into the tin and put the rack on top.
