1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3 Tbsp. sugar, divided
1/2 cup vanilla nonfat Greek-style yogurt
1 Tbsp. butter
1 Fuji apple, sliced
1/4 tsp. ground cinnamon
8 graham crackers, crushed
1/2 cup caramel ice cream topping
1/2 tsp. sea salt

Steps:

  • Mix cream cheese and 2 Tbsp. sugar until blended; stir in yogurt.
  • Melt butter in large skillet on medium heat. Add apples, remaining sugar and cinnamon; cook 2 to 3 min. or until apples are tender, stirring frequently.
  • Microwave caramel topping in microwaveable bowl on HIGH 30 sec. or until warmed; stir in salt.
  • Layer half each of the graham crumbs, cream cheese mixture, apples and caramel topping in 4 parfait glasses. Repeat layers.

1 1/4 cups graham cracker crumbs
1/4 cup butter, melted
3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 1/2 teaspoons vanilla
3 eggs
1 1/4 cups apple pie filling
1 -2 tablespoon chopped peanuts
1/4 cup caramel ice cream topping

Steps:

  • Preheat oven to 350°F
  • Spray 9-inch springform pan with nonstick cooking spray.
  • Combine crumbs and butter in small bowl. Press into bottom of prepared pan. Bake 9 minutes; cool.
  • Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended. Add eggs and beat well.
  • Pour cream cheese mixture over crust. Bake 40-50 minutes or until center is almost set. Refrigerate at least 3 hours. Carefully run knife around edge to loosen pan. Remove side of pan.
  • Spread apple filling over top of cake. Sprinkle peanuts over apple filling and drizzle with caramel topping. Serve immediately.

12 ounces wedge brie cheese (remove outer layer)
6 -8 ounces caramel sauce, in the ice cream supply area of supermarket (I use smucker's)
1 cup pecans, chopped

Steps:

  • trim brie cheese of the outer layer.
  • Place on plate. Pour caramel sauce over top.
  • Sprinkle with chopped pecans.
  • (Note: quantities are approximate -- this is foolproof -- pour/drizzle sauce and pecans on to your like)
  • Serve room temperature with crackers,apple slices or anything you like.

1 tablespoon butter
1/2 cup chopped peeled firm apple (Braeburn, Gala or Granny Smith)
1/4 cup sweetened dried cranberries
1/4 cup packed brown sugar
2 tablespoons chopped shelled pistachios or pecans
2 tablespoons brandy or apple juice
1 round (8 oz) Brie cheese
Baguette French bread slices, assorted crackers or fresh apple slices

Steps:

  • Heat oven to 350°F. In 8-inch skillet, melt butter over low heat. Add apple, cranberries, brown sugar, pistachios and brandy; cook 3 minutes or just until apples are tender, stirring frequently.
  • Cut Brie round in half horizontally; place bottom half in ungreased 9-inch pie pan. Spoon half of fruit mixture over cheese; place top half of cheese over fruit. Top with remaining fruit mixture. Secure with 3 toothpicks.
  • Bake 15 to 20 minutes or until cheese is soft. With broad spatula, slide Brie from pie pan onto serving platter. Spoon any syrup and fruit from pan over top. Serve warm with baguette bread slices.

1/3 cup caramel ice cream topping

Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
  • Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.

1-1/2 cups finely crushed gingersnaps (about 32)
3 Tbsp. butter, melted

Steps:

  • Heat oven to 325°F.
  • Cook cranberries, 1/2 cup sugar, 1/4 cup (4 Tbsp.) orange juice and spices in saucepan on medium heat until cranberries begin to pop and mixture is thickened, stirring occasionally. Cool slightly.
  • Process cranberry mixture in food processor until smooth; transfer to bowl. Stir in 1 Tbsp. vanilla. Refrigerate until ready to use.
  • Mix cookie crumbs and butter; press 1 Tbsp. onto bottom of each of 24 paper-lined muffin cups.
  • Beat cream cheese and remaining sugar in large bowl with mixer until blended. Add sour cream, orange zest, remaining orange juice and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Add 2/3 cup cranberry mixture; swirl gently. Spoon 1/3 cup batter over crust in each muffin cup.
  • Bake 25 min. or until centers are almost set. Cool. Refrigerate 2 hours.

8 oz brie cheese, room temperature
⅓ cup granulated sugar
1 tablespoon pancake mix
1 large egg
½ cup heavy cream
1 teaspoon vanilla extract
¼ teaspoon baking powder
6 fresh strawberries , stemmed and sliced
2 tablespoons caramel sauce

Steps:

  • Preheat the oven to 400°F (200°C). Line an 8-inch round baking pan with parchment paper.
  • Using a sharp knife, remove the top layer of wax from the Brie wheels. Scoop out the cheese and transfer to a large bowl. Discard the wax.
  • To the bowl with the Brie, add the sugar and pancake mix and beat with an electric hand mixer on low speed for 60 seconds, or until smooth.
  • Add the egg, heavy cream, vanilla, and baking powder and mix on low speed until incorporated, about 30 seconds.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake the cheesecake for 20 minutes, or until set around the edges but slightly jiggly in the center. Remove from the oven and let cool at room temperature for 20 minutes, then chill in the refrigerator for 1 hour.
  • Transfer the cheesecake to a serving platter. Garnish with the sliced strawberries and finish with a drizzle of caramel sauce.
  • Slice and serve. Leftovers will keep in an airtight container in the refrigerator for up to 5 days.
