Layered with graham crumbs, sweetened cream cheese, apples and caramel topping, these cheesecake parfaits are almost too pretty to eat. (Almost!)

Steps:
- Mix cream cheese and 2 Tbsp. sugar until blended; stir in yogurt.
- Melt butter in large skillet on medium heat. Add apples, remaining sugar and cinnamon; cook 2 to 3 min. or until apples are tender, stirring frequently.
- Microwave caramel topping in microwaveable bowl on HIGH 30 sec. or until warmed; stir in salt.
- Layer half each of the graham crumbs, cream cheese mixture, apples and caramel topping in 4 parfait glasses. Repeat layers.

Steps:
- Preheat oven to 350°F
- Spray 9-inch springform pan with nonstick cooking spray.
- Combine crumbs and butter in small bowl. Press into bottom of prepared pan. Bake 9 minutes; cool.
- Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended. Add eggs and beat well.
- Pour cream cheese mixture over crust. Bake 40-50 minutes or until center is almost set. Refrigerate at least 3 hours. Carefully run knife around edge to loosen pan. Remove side of pan.
- Spread apple filling over top of cake. Sprinkle peanuts over apple filling and drizzle with caramel topping. Serve immediately.

- Heat oven to 350°F. In 8-inch skillet, melt butter over low heat. Add apple, cranberries, brown sugar, pistachios and brandy; cook 3 minutes or just until apples are tender, stirring frequently.
- Cut Brie round in half horizontally; place bottom half in ungreased 9-inch pie pan. Spoon half of fruit mixture over cheese; place top half of cheese over fruit. Top with remaining fruit mixture. Secure with 3 toothpicks.

- Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
- Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.

- Cook cranberries, 1/2 cup sugar, 1/4 cup (4 Tbsp.) orange juice and spices in saucepan on medium heat until cranberries begin to pop and mixture is thickened, stirring occasionally. Cool slightly.

- Preheat the oven to 400°F (200°C). Line an 8-inch round baking pan with parchment paper.
- Using a sharp knife, remove the top layer of wax from the Brie wheels. Scoop out the cheese and transfer to a large bowl. Discard the wax.
- To the bowl with the Brie, add the sugar and pancake mix and beat with an electric hand mixer on low speed for 60 seconds, or until smooth.
- Add the egg, heavy cream, vanilla, and baking powder and mix on low speed until incorporated, about 30 seconds.
- Pour the batter into the prepared pan and smooth the top.
- Bake the cheesecake for 20 minutes, or until set around the edges but slightly jiggly in the center. Remove from the oven and let cool at room temperature for 20 minutes, then chill in the refrigerator for 1 hour.
