APPLE AND CELERY SLAW

4 stalks celery, julienned
2 green apples, julienned
1 jalapeno, halved lengthwise and thinly sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup olive oil
1/2 tablespoon Dijon mustard
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon celery salt
2 cups fresh cilantro leaves, barely chopped

Steps:

  • Combine the celery, apples, jalapeno and green and purple cabbage in a bowl. In a separate bowl, mix the olive oil, mustard, sugar, vinegar, cayenne, salt and celery salt. Pour over the cabbage mix and toss to combine. Cover and refrigerate for 2 hours.
  • Before serving, toss in the cilantro leaves.

This recipe can also be used for other kinds of fish. It's lowfat, and I got it from Cooking Light Magazine several years ago.

2 tablespoons light ranch salad dressing
2 egg whites
6 tablespoons cornmeal
1/4 cup grated parmesan cheese
2 tablespoons all-purpose flour
1/4 teaspoon ground red pepper
1/8 teaspoon salt
4 -6 ounces catfish fillets
cooking spray
lemon wedge

Steps:

  • Preheat oven to 425°F.
  • Combine dressing and egg whites, whisk well.
  • Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
  • Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.
  • Place fish on a baking sheet coated with cooking spray.
  • Bake 8-12 minutes each side until lightly browned and fish flakes easily.
  • Serve with lemon wedges.

1 cup milk
1 cup crisp rice cereal, crushed
1/4 cup cornmeal
1 cup flour
1 1/2 teaspoons lemon-pepper seasoning
1/4 teaspoon seasoning salt
1/8 teaspoon onion salt
1/8 teaspoon garlic salt
2 lbs catfish fillets
oil (for frying)

Steps:

  • In a shallow bowl, whick together the egg and milk.
  • In a large resealable plastic bag, combine the cereal, flour, cornmeal and seasonings.
  • Dip the fish fillets into egg mixture, then coat with cereal mixture.
  • In a large skillet, heat 1/4-inch of oil over medium-high heat.
  • Fry the fillets for 5-7 minutes on each side.

1 Granny Smith apple, thinly sliced
1 cup shredded red cabbage
1 pounds catfish fillets

1/3 cup yellow cornmeal
1 teaspoon chili powder
2 tablespoons oil

Steps:

  • Cut one lemon half into slices or wedges; set aside. Juice the remaining lemon half into a large bowl. For slaw, combine mayonnaise and honey with juice; reserve 2 tablespoons juice mixture. Stir celery, apple, and cabbage into juice mixture in bowl; set aside. Sprinkle catfish fillets with salt and brush with reserved juice mixture. In a shallow dish combine cornmeal and chili powder; coat fish with mixture. In a 12-inch skillet heat oil over medium heat. Cook fish in hot oil 3 to 4 minutes per side or until golden and fish flakes easily when tested with a fork. Serve fish with slaw and the lemon slices or wedges.
