This flavorful sausage and shrimp gumbo is a Creole-style recipe, the perfect New Orleans dish to make for your family or special dinner guests.

1 pound andouille sausage (or another smoked sausage ), sliced
1/2 cup plus 5 teaspoons vegetable oil, divided
6 cups chicken broth
2 (14 1/2-ounce) cans diced tomatoes
1/2 cup all-purpose flour
1 large onion, chopped
1 cup chopped celery
1 red bell pepper, chopped
1 yellow bell pepper (or green bell pepper), chopped
1 1/2 cups sliced okra, fresh or frozen and thawed
1 teaspoon Creole or Cajun seasoning
1 bay leaf
1 to 1 1/2 pounds medium shrimp, peeled and deveined
Salt, to taste
Freshly ground black pepper, to taste
1 teaspoon file powder, optional
2 cups cooked hot rice, for serving
Chopped fresh parsley or green onion tops, optional

Steps:

  • Gather the ingredients.
  • In a skillet over medium heat, brown the sliced sausage in 2 to 3 teaspoons of vegetable oil; remove the sausage to a plate and set aside.
  • In a large stockpot or Dutch oven, combine the chicken broth and tomatoes. Place the pot over medium heat to bring to a simmer.
  • Meanwhile, in a large skillet over medium heat, combine the 1/2 cup of oil and the flour. Cook, whisking constantly, until the roux is medium to deep brown . This will take about 10 to 20 minutes. Keep stirring to keep the mixture from burning.
  • To the skillet with the roux, add the chopped onion, celery, and bell peppers. Cook, stirring constantly with a spoon, until the vegetables are softened.
  • Stir the vegetable and roux mixture into the simmering tomato and broth mixture.
  • Put the skillet back over medium heat and add 2 more teaspoons of oil. Add the okra and cook, stirring, until lightly browned and not stringy or sticky.
  • Transfer the cooked okra to the simmering pot along with the Creole or Cajun seasoning, bay leaf, and cooked sausage. Cover and cook over medium-low heat, stirring occasionally, for 1 hour.
  • Add the prepared shrimp and cook for about 5 minutes longer, until the shrimp is cooked through.
  • Taste and add salt and pepper, as needed. If desired, add file powder or serve on the side.
  • Serve the gumbo over a mound of hot boiled long-grain white rice. Sprinkle with chopped fresh parsley or green onions.

This recipe was a culmination of several recipes that I ran across through the years. It is time consuming but it is worth it. Note: The roux is probably the most important part of making a gumbo, take your time and you will be rewarded (To quote Alton Brown). The darker the color, the richer it will be. I like mine very dark.

1 lb kielbasa, sliced into 1/2 inch thick medallions
1 lb andouille sausage, sliced into 1/2 inch thick medallions
2 lbs boneless skinless chicken thighs, cut into bite size pieces
2 lbs shrimp, peeled and deveined (save the shells to make a stock)
2 cups cold water
1/4 cup creole seasoning, divided (I use Tony Cacheres)
3/4 cup vegetable oil
1 cup all-purpose flour
1 1/2 cups onions, small dice
1 cup green bell pepper, small dice
1 cup celery, small dice
2 tablespoons garlic, minced (or to taste)
8 ounces tomato paste
3 bay leaves
96 ounces chicken broth
1 -2 teaspoon cayenne (more or less to taste)
1 bunch scallion, small dice
cooked long-grain rice (as much as you think you'll need)
file powder (served on the side)

Steps:

  • In large skillet brown both sausages on medium-low heat. Set aside till later. You may need to do this in batches.
  • In small sauce pan add water and shrimp shells and simmer for 20 minutes covered. Remove from heat and let sit for another 20 minutes, covered. Strain stock and reserve for later.
  • Season chicken and shrimp with 2-3 tablespoons of creole seasoning and set aside.
  • To make the roux:.
  • In 12 quart heavy bottom stock pot, heat oil over medium/medium low heat. Add the flour all at once and stir constantly with wooden spoon until it turns to a dark chocolate color. (approximately 20-30 min.) Do not rush this by turning up the heat, It will burn very quickly, not to mention it might splatter and this stuff is like napalm if it gets on your skin.
  • Add the onion, green bell pepper, celery, garlic and continue the constant stirring. Cook until they soften (5-10 minutes). This will look like a very thick paste.
  • Add the bay leaves, and stir in the tomato paste and cook for a couple of minutes.
  • Pour the chicken stock and reserved shrimp stock in and stir till the paste (roux) is combined.
  • Put the sausage, the rest of the creole seasoning,and the cayenne in and raise the heat to bring to a soft boil. For about 10 Minutes.
  • Reduce heat to a simmer, add uncooked chicken and cover. Simmer for 30 minutes.
  • Now check the consistency. You can always add a little water or broth if necessary.
  • Simmer for another 15-20 minutes.
  • Add the shrimp and stir. The shrimp will cook very quickly. As soon as they turn pink you're ready to serve.
  • To serve:.
  • Place a pressed scoop of rice in the middle of your bowl (I like to use an ice cream type scoop, that way it stays rounded and centered in the bowl) and ladle the gumbo around and over the top of the rice.
  • Sprinkle some scallions on top and serve with the file powder on the side.
  • Enjoy!

This is a really tasty gumbo that is also easy to make. For more authentic taste you can add 1/4 cup of Gumbo Filé Powder spice before you serve. I hope you get to enjoy this as much as we do! Note: If this is too mild for your taste you can add some hot sauce as you serve. I made this for my 1 year old and I had to cut down on the spice.

4 tablespoons vegetable oil
4 tablespoons flour
1 large chopped onion
1 cup chopped celery
6 garlic cloves, chopped
1 cup of chopped green pepper
6 ounces tomato paste
14 ounces fire-roasted tomatoes
2 lbs frozen sliced okra
1 lb peeled shrimp
1 lb shrimp, head on
1 lb smoked sausage (casing peeled and sliced into bite size)
2 cups water
2 cups shrimp stock or 2 cups bouillon
1 tablespoon creole seasoning (such as Slap ya Mama)
1 teaspoon sugar
3 tablespoons of chopped parsley
2 bay leaves

Steps:

  • Slowly stir the flour into heated oil in a heavy cast iron skillet. Continue to stir until the flour is dark brown. Add the next 4 ingredients; stir until onions are clear. Add tomato paste and a cup of water. Add okra and tomatoes. Cook slowly, adding all the water and shrimp stock -a little at a time. Stir in sugar & creole seasoning. Cook for about an hour on a low fire, stirring occasionally to prevent sticking to the bottom of pot; adding water if necessary.
  • Add the shrimp ,sausage, parsley and the bay leaves. Cook another 30 minutes to an hour, adding seasoning to taste. Serve over boiled or steamed rice.

6 slices bacon, diced
1/2 lb Italian sausage, cut into 1/2-inch slices
1/2 lb smoked sausage, cut into 1/2-inch slices
1/2 cup flour
1 onion, chopped
1 green bell pepper, chopped
2 celery ribs, chopped
4 garlic cloves, minced
1 tablespoon creole seasoning
1 quart chicken stock
2 bay leaves
1 (24 ounce) Ragú® Pasta Sauce (old world style marinara sauce)
2 cups frozen cut okra, thawed
2 lbs raw shrimp, peeled and deveined
1 cup cooked rice
2 green onions, chopped
1/4 cup cilantro, chopped

Steps:

  • In a large pot over medium-high heat, cook the bacon until crisp. With a slotted spoon, remove the cooked bacon and set aside. Add the Italian sausage and smoked sausage. Cook for 2 minutes, until lightly browned. Remove the sausages and set aside.
  • Whisk the flour into the bacon grease. Cook for 5 minutes, stirring constantly, until the roux is golden brown. Add onion, green bell pepper, celery, and garlic. Cook for 4-5 minutes, until the vegetables are softened.
  • Add the creole seasoning, chicken stock, bay leaves, and Ragu Old World Style Marinara sauce. Bring to a boil, then reduce the heat to simmer. Add the cooked bacon, Italian sausage, and smoked sausage. Cover and simmer for 20 minutes, stirring occasionally.
  • Add the okra and shrimp. Cook for 10 minutes, until the shrimp is fully cooked.
  • Ladle the gumbo into bowls. Top each bowl with cooked rice, and garnish with green onions and cilantro.

I came up with this one after looking around for something to make for dinner. I found a few recipes that I didn't have all of the ingredients to make so I fudged it and made this little gem instead. It has a little bit of heat, so add more Creole seasoning to taste. It kind of reminds me of a different take on jambalaya. Enjoy!

1 (5 1/3 ounce) bag success 10 minute boil-in-bag whole grain brown rice
2 sweet Italian sausage links, casings removed
2 hot Italian sausage links, casings removed
1 lb baby shrimp, thawed and cooked (if necessary. They're usually precooked.)
2 teaspoons creole seasoning (divided. I prefer Tony Chachare's)
1 1/2 teaspoons garlic, minced
1 small sweet red pepper, seeded and chopped
1 small orange sweet bell pepper, seeded and chopped
1 small green sweet pepper, seeded and chopped
1 small sweet onion, chopped
1/2 cup carrot, shredded
4 green onions, thinly sliced (tops only) or 1 tablespoon dried green onion
1/2 teaspoon dried dill
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/4 teaspoon garlic powder
2 teaspoons olive oil
2 (14 1/2 ounce) cans petite diced tomatoes, no salt added, lightly drained (Del Monte makes them)
1/2 cup white wine

Steps:

  • Begin by cooking rice according to package directions.
  • While rice is cooking, heat a sauce pan to Medium-High. Add sausage and cook until no longer pink, taking care to crumble as you go.
  • While sausage is cooking, sprinkle shrimp with 1 tsp Creole seasoning and set aside.
  • Remove sausage from the saucepan, but do not remove the grease. Set aside. Return pan to heat.
  • In the sausage pan, add garlic. Saute 30 seconds.
  • Add peppers, sweet onions, green onions, carrots, 1 tsp Creole seasoning, dill, rosemary, thyme and garlic powder. Saute in sausage grease for 5 minutes.
  • Add olive oil and saute another 5 minutes until almost tender.
  • Add diced tomatoes and white wine. Stir to combine. Allow to simmer for 5 minutes.
  • Stir in sausage. Allow to simmer, uncovered for 20 minutes.
  • If it is not "saucy" enough for you, add a bit more wine (or chicken broth) to get it to your preferred consistency.
  • Stir in shrimp. Allow to cook for about 2 minutes until shrimp is heated through.
  • Serve over rice.

  • In a medium sauce pot, combine reserved shrimp shells and tails with 1 quart water, and place over medium-high heat. Bring to a boil, then reduce the heat to medium-low to maintain a simmer for 20 minutes. Remove from the heat and strain. Discard the shells and tails. Combine the shrimp stock with the clam juice and 1 quart cold water. Set aside.
  • Add 1/2 cup vegetable oil to a large Dutch oven or sauce pan, and heat on medium-high for about 2 minutes. Reduce heat to medium, and stir in the flour with a wooden spoon, stirring constantly to work out any lumps. Continue stirring constantly, until the mixture turns a deep shade of brown (a mix between the colors of milk and dark chocolate) and gives off a toasty aroma, about 20 minutes. Add the onion, pepper, celery, okra, garlic, thyme, cayenne, a good pinch of salt and a few good grinds of pepper. Cook on medium, stirring occasionally, until vegetables are tender, about 10-15 minutes.
  • Slowly add half of the stock mixture and stir vigorously to combine. Add the rest of the shrimp stock mixture. Bring to a simmer. Decrease heat to medium-low and simmer, uncovered for 30 minutes. (You may need to skim the surface from time to time, to remove any scum that collects on top.)
  • As the soup simmers, heat a large sauté pan over medium-high heat for two minutes. Add 1 tablespoon oil to the pan and heat one minute more. Add sliced andouille sausage to the pan in an even single layer and sauté until crisp and golden brown on the bottoms, about three minutes. Flip over the slices and sauté the other sides, about two more minutes. Remove from the pan and set aside. (If you have too much sausage to fit in a single layer in the sauté pan, do this in two steps.) Once all the sausage is sautéed, add a quarter cup water to the empty sauté pan and bring to a simmer, scraping up any bits and pieces sticking to the bottom of the pan. Simmer about two minutes, then pour these juices into the simmering soup.
