A savory Southern way to serve this lovely vegetable from an old cookbook. Make Creole Cauliflower au Gratin by sprinkling 1/2 cup of grated cheese on top and baking in the oven until melted and lightly browned.

- Melt butter in a saucepan; add onion and bell pepper, lightly brown
- Blend in flour; add tomatoes and salt
- Heat to boiling point and cook for approximately 3 minutes, stirring constantly
- Add cauliflower and heat through. Serve on buttered toast

- In a large 5.5-quart Dutch oven, melt the coconut oil over medium heat and sauté the onion, bell pepper, and celery until they start to soften, about 5 minutes. Add the garlic, jalapeño, tomatoes, paprika, garlic powder, cayenne, and oregano and sauté until the tomatoes release their juices and cook down, about 5 minutes more.
- While the veggies are cooking, pulse the cauliflower florets in a food processor until a ricelike texture is achieved. Add the cauliflower rice to the sautéed vegetables, along with the salt, tomato paste and tamari and sauté until tender, about 10 minutes more. Add the beans, if using. Stir occasionally while cooking to prevent sticking.
- Once all of the vegetables are tender and any added protein is cooked thoroughly, taste and adjust the seasonings. Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 days.

- In mini food processor, combine Creole spices and pulse into a fine powder. It can be stored in an airtight container at room temperature for up to 2 months.
- Preheat oven to 400 F (200 C). Line large baking sheet with parchment paper. Brush cauliflower steaks with oil and arrange on baking sheet in single layer. Dust steaks evenly with 2 Tbsp (30 mL) Creole spice blend. Bake steaks in centre of preheated oven for 25 to 30 minutes, or until golden and almost tender.
- Chop spinach very finely and place in large bowl. Add 1 tsp (5 mL) Creole spice blend, lemon juice, and salt. Toss together to evenly blend. Add a splash of oil if you wish.
- When cauliflower steaks are done as you like, remove from oven and arrange on platter. Scatter chopped spinach overtop, along with tomatoes, olives, goat cheese, and pine nuts. Add more seasonings, to taste.
