- Place pastry sheets on cutting board. Cut out 22 circles from each pastry sheet, using a 2-inch round cutter. Beat egg and milk with wire whisk until well blended.
- Spoon 1 tsp. of the turkey mixture onto center of each pastry circle. Brush edge of pastry with egg mixture. Fold pastry in half to completely enclose filling; press edges together to seal. Place on baking sheet; brush tops with remaining egg mixture.
- Bake 12 to 15 minutes or until golden brown. Serve immediately.

- Preheat oven to 400°. For filling, in a large skillet, heat butter over medium heat. Add mushrooms and onion; cook and stir until tender, 3-5 minutes. Add garlic and pepper; cook 1 minute longer. Stir in cream cheese until melted; remove from heat., Unfold one pastry sheet; cut into 9 squares. Cut each square diagonally in half. Place a scant teaspoon of filling on one half of each triangle. Brush edges of pastry with water; fold over to form a triangle. Seal edges with a fork; place 1 in. apart on parchment-lined baking sheets. Repeat with second pastry sheet and remaining filling., Bake until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm. Freeze option: Cover and freeze unbaked triangles on parchment-lined baking sheets until firm. Transfer to a freezer conatiner; return to freezer. To use, bake as directed.

SAUSAGE STUFFING CREAM CHEESE BITES
Steps:
- Heat oven to 400°F.
- Remove puff pastry from the freezer and allow it to thaw for about 15 min. until you can unfold it without breaking. (Make sure you don't let it get too warm.)
- Prepare the STOVE TOP Stuffing according to instructions on box and set aside. In a skillet on stove top, cook sausage until browned and crumbled, set aside.
- In a large bowl with a hand mixer or stand mixer fitted with paddle attachment, mix together cream cheese and 1 egg until creamed together and smooth. Stir in cooked sausage until fully incorporated. Gently fold in stuffing with a spatula.
- Unfold the puff pastry sheets, roll out each sheet and cut into 12 squares. (The squares don't have to be perfect but each should be about 3-1/2-inch square.) Press 1 square on bottom and up side of each of 24 nonstick muffin pan cups. In a small bowl, whisk the remaining egg with a fork to create an egg wash. Brush the egg wash over the puff pastry, especially the edges. (This will give the pastry a darker golden finish. If you don't use an egg wash that is fine, you'll just get a paler finish.)
- Using a cookie scoop, divide the sausage-cream cheese mixture among the puff pastry cups, using 2 heaping teaspoons of filling per cup. Bake for 12 to 15 min. or until the puff pastry is golden brown. Top with a dollop of cranberry sauce, or serve it on the side. Serve immediately.

- Preheat oven to 400. Line 2 large cookie sheets with parchment paper.
- Place the first sheet of puff pastry on a cutting board and use a rolling pin to roll it out so it is a couple inches longer. Use a pizza cutter to cut into 12 equal squares. Repeat with the second sheet of puff pastry.
- In a medium bowl, mix the cream cheese, imitation crab, green onions, lemon juice, salt and pepper.
- Place the crab mixture by tablespoon-fulls into the center of each puff pastry square. Pull opposite corners of the puff pastry square up and press together, leaving the other two corners down (see video). Place the bites onto the cookie sheets.

- Place a rack in the center of the oven. Preheat the oven to 350 degrees F. With a paper towel, wipe off the outsides of mushrooms. Remove and finely chop the stems. Set the caps aside.
- Heat the oil in a large nonstick skillet over medium. Brown the sausage until cooked through, using a sturdy spoon to break apart the meat into small pieces (sausage is kind of a pain to break into small pieces-once I have the pieces fairly small, sometimes I use a potato masher to split them further). This will take about 8 minutes.
- To the skillet, add the mushroom stems, vinegar, salt, and pepper. Cook until the stems are softened, about 4 minutes.
- Stir in the green onion, garlic, and Italian breadcrumbs. Set aside to cool.
- In a large bowl, stir together the cream cheese, egg yolk, and Parmesan with a fork until smoothly combined.
- Fold in the sausage mixture.
- With a spoon, generously fill each mushroom cap so that you create a mound on top. Arrange in a baking dish large enough to hold them snugly in a single layer (they will touch at the edges).
- Bake the stuffed mushrooms until browned and the filling is cooked through, about 20 minutes. Some liquid may seep out; simply leave it behind in the pan.
- Transfer to a serving plate and let cool at least 5 minutes. Sprinkle with fresh parsley. Enjoy warm or at room temperature.

- Slice the steaks into 1/2-inch wide strips. Pound the strips to about half their original thickness. Place the steak in a bowl; pour the Italian dressing over the meat; allow to marinate at least 2 hours.

Stir in the garlic, mushrooms and season with nutritional yeast and salt and pepper. Cook the mushroom mixture on medium heat, stirring often until the mushrooms are tender but the moisture in the pan has evaporated completely (this may take up to 10-1 5 minutes). Stir this often to avoid burning. If needed reduce heat to low-medium and cook a bit longer. Now, stir in thyme and honey and cook for 2 minutes or until the mixture is well combined and well coated. Taste test for salt and flavour.
- Transfer the mushroom mixture to a food processor along with the feta cheese and pulse for 10-15 seconds. Transfer mixture to a large bowl.
- Let’s prep our phyllo now! Have your 4 tbsp. melted butter ready with a brush to gently coat your phyllo. I had my phyllo on a cutting board and a water spray bottle right beside it – see notes.

Coat the whole thing with melted butter, using your brush then repeat that step with two more sheets. Using a very sharp knife cut through the phyllo lengthwise, four times. You should be able to see where you are going to place your filling now (at either ends of the cut phyllo).
