CREAMY STOVETOP MACARONI AND CHEESE

Creamy Stovetop Macaroni and Cheese image

No need for a flour-and-butter roux in this easy stovetop version of an old favorite: The cream cheese adds body and richness. If your mac and cheese gets a little stiff as it cools, just stir in some warm water to smooth it out - it works like a charm!

Provided by Food Network Kitchen

Categories     side-dish

Time 45m

Yield 8 to 10 servings (about 8 cups)

Number Of Ingredients 7

Kosher salt
1 pound elbow macaroni
2 1/2 cups half-and-half
1/8 to 1/4 teaspoon cayenne pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)

Steps:

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 cup of the pasta water. Set aside.
  • Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni to the saucepan and stir to combine. Stir in some of the reserved pasta water to thin the sauce if needed. Season to taste with salt if needed. Serve hot.

CREAMY STOVETOP MAC AND CHEESE

Creamy Stovetop Mac and Cheese image

Here's our family favorite simple macaroni and cheese! Yummy creamy goodness and an easy one pan dish made quick and simple on the stovetop; score! Almost identical to the recipe on the Velveeta box. We like ours sprinkled with grated Parmesan cheese, at the table. Yummy add-ins are: veggies (Fordhook limas are my favorite and DH likes extra pepper and cottage cheese in his), some leftover ham, a can of tuna, or even some sliced hotdogs. Be as creative as you like! Perfect for those busy week-night dinners. Enjoy!

Provided by BecR2400

Categories     Potato

Time 20m

Yield 4 serving(s)

Number Of Ingredients 5

2 cups elbow macaroni, uncooked
3/4 lb kraft Velveeta cheese, cut up

  • Add remaining ingredients; mix well. Cook on low heat until Velveeta is melted, stirring frequently.
  • Serve topped with grated Parmesan cheese, at the table.

  • Some good add-ins are: frozen veggies (Fordhook limas or mixed veggies--add frozen veggies to the boiling water and cook them before adding the macaroni), leftover cubed ham, sliced hotdogs, canned tuna, or boneless/skinless canned salmon for a quick and easy one-pot comfort meal.

CREAMY STOVE-TOP ROTINI AND CHEESE

Creamy Stove-Top Rotini and Cheese image

CREAMY STOVETOP BACON MAC AND CHEESE

Creamy Stovetop Bacon Mac and Cheese image

Provided by Kelsey Nixon

Categories     side-dish

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 10

Kosher salt
1 pound elbow macaroni
6 strips thick-cut smoked bacon, cut in 1/4-inch pieces
1/4 cup all-purpose flour
4 cups hot whole milk
Freshly cracked black pepper
1 teaspoon dry mustard, or more as needed
8 ounces sharp Cheddar, shredded (2 cups)
8 ounces Muenster cheese, shredded (2 cups)
1 tablespoon hot sauce

Steps:

  • In a pot of boiling salted water, cook the pasta until al dente; drain.
  • Set an extra-large skillet, or a large heavy saucepan, over medium-low heat and cook the bacon until crispy and the fat renders out, 10 to 12 minutes. Set the bacon aside, reserving the fat to build your sauce. At this point you should have about 1/4 cup of reserved fat. If needed, add some olive oil or butter to make sure you have a 1/4 cup of fat in the pan.
  • Add the flour and cook, whisking constantly, until the paste bubbles a bit, about 2 minutes (make sure it doesn't brown). Continuing to whisk, add 3 cups of the hot milk and cook until the sauce thickens, about 5 minutes. Season with salt and pepper. Bring the sauce to a boil, reduce the heat to low and cook for 2 to 3 more minutes. Stir in the dry mustard, and then gradually add the Cheddar and Muenster cheeses, stirring constantly until all of the cheese has melted into the sauce. Stir in the hot sauce and the remaining 1 cup milk. Add the cooked pasta to the sauce and stir to coat. Stir in the crispy bacon and season with salt and pepper.

CREAMY MAC AND CHEESE GLUTEN FREE, DAIRY FREE (STOVE-TOP RECIPE)

Creamy Mac and Cheese Gluten Free, Dairy Free (Stove-Top Recipe) image

I could not believe how unbelievable this macaroni and cheese recipe is! It looked just like mac and cheese out of a box (which is what my dd knew and loved) and tasted great. As someone who eats dairy regularly, nothing beats the original. But I have to admit that I would be willing to eat this stuff on its own, it tastes that good, but only if I acknowledge it as pasta in sauce, not as mac and cheese per se. But my dd hasn't had cheese in over a year, and she thinks this stuff is manna from heaven. Takes only about 20 minutes to prepare--and all on the stove! Gluten free, soy free, dairy free, casein free, etc. Heck, it's even a vegan recipe if you get the right noodles! Please leave feedback and advice on any variations. Thanks!

Provided by LawyerMom

Categories     Cheese

Time 23m

Yield 6 , 6 serving(s)

Number Of Ingredients 10

1 (8 ounce) box gluten free macaroni noodles (preferably corn-quinoa blend)
3/4 cup mimiccreme brand non-dairy coffee creamer
3/4 cup almond milk (or rice milk)
1 -2 cup of daiya brand gfcf cheddar cheese
3 tablespoons gfcf margarine (Earth Balance can work too)
3 tablespoons potato starch (or corn or tapioca starch)
1 tablespoon nutritional yeast
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/8 teaspoon mustard powder

Steps:

  • Prepare pasta according to box directions. (I prefer Ancient Quinoa Harvest gluten free pasta--that stuff tastes better than real wheat pasta.).
  • Either in a separate pot, or in the same pot (once you remove and drain the pasta), make a roux by melting the margarine and then whisking in the potato/corn/tapioca starch until well blended and you have a thick paste. Use a medium-low flame and work quickly.
  • Add the non-dairy creamer and the almond/rice milk. Continue to whisk to blend well on medium heat. You should have a nice white sauce.
  • Add the Daiya cheese. Stir until completely melted (no lumps). This may take longer than expected--Daiya cheese takes much longer to melt entirely than real cheese.
  • Add the rest of the spices and stir. If you have any other mac & cheese variations, add those ingredients now. If the sauce is too thick, add more milk or creamer; if it's too thin, add more starch (slowly and sparingly).
  • When the sauce is at the desired consistency, pour in your pasta and coat with the sauce. Serve hot! To reheat leftovers, you may need to add more liquid and reheat on the stove since the "cheese sauce" tends to congeal thickly when cooled.
  • Enjoy!

COOKING LIGHT'S CREAMY STOVE-TOP MACARONI AND CHEESE

Cooking Light's Creamy Stove-Top Macaroni and Cheese image

From the June 2006 issue of Cooking Light magazine and featured in their Dinner Tonight section. This is a simple and quick main dish that is recommended to be served with a 7-Layer salad for a full meal. They suggest assembling the salad while the water comes to a boil for the pasta and making the sauce while the pasta cooks. Quick and easy for a weeknight meal.

CREAMY STOVE TOP MACARONI AND CHEESE

Creamy Stove Top Macaroni and Cheese image

My family's favorite macaroni and cheese - cooked on top of the stove rather than baked! It's flavor is enhanced by the addition of prepared mustard. Little children love it because it's so creamy and cheese-y. For potlucks, make ahead and reheat in microwave, stirring, just before carrying to dinner.

1 teaspoon (5ml) Frank's RedHot or other hot sauce

8 tablespoons (1 stick; 113g) unsalted butter, cut into 4 chunks

STOVETOP MAC AND CHEESE

Stovetop Mac and Cheese image

This easy homemade stovetop mac and cheese recipe is super creamy, rich, and delicious. It's quick and simple to make in about 30 minutes!

Provided by Natasha Bull

Categories     Main Course     Side Dish

Time 30m

Number Of Ingredients 10

1 pound uncooked macaroni
1/4 cup butter (1/2 stick)
1/4 cup flour
2 (12 ounce) cans evaporated milk (see note)
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder
1/2 teaspoon salt
2 cups freshly grated cheddar
1/2 cup freshly grated parmesan cheese
Pepper (to taste)

Steps:

  • Cook the macaroni al dente according to package instructions.
  • Meanwhile, in another pot, melt the butter over medium heat. Stir in the flour and cook it, stirring often, until golden (about 3-5 minutes).
  • Slowly whisk in the evaporated milk, then whisk in the seasonings. Cook for a few minutes until the sauce starts to thicken up (this happens quite fast, so be careful not to let it get too thick).
  • Take the pot off the heat and stir in the cheeses.
  • Stir in the drained macaroni and toss to coat in the cheese sauce. Add pepper to taste (and more salt if needed). It's best enjoyed immediately.
