Creamy Herbed Chicken and Broccoli Pasta Salad image

Stir grilled chicken into this creamy pasta salad with broccoli and roasted red pepper.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1/2 tablespoon olive oil
One 8-ounce boneless skinless chicken breast
2 cups bite-sized broccoli florets
8 ounces dried penne
1/2 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. Grill the chicken, turning once, until well-marked and just cooked through, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Meanwhile, cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the chicken and red peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1 lb (450g) Fusilli pasta: any short pasta would work for this recipe
1 cup diced Red pepper (I used a large red bell pepper)
⅓ cup chopped celery (from 1 celery stalk)
½ cup feta cheese crumbled: substitute with good old cheddar cheese or mozzarella pearls.
1 cup cherry tomatoes halved
⅓ cup diced red onions
1 cup cucumber chopped
1 teaspoon dried dill (substitute for fresh dill)
Salt and freshly ground pepper to taste
Green onions to garnish
1 cup light mayonnaise
1 tablespoon Lemon juice or as needed

Steps:

  • Cook the pasta in salted water according to the directions on the packet. Pasta should still be firm to bite. Drain and rinse the pasta under cold water, set aside and leave until completely cool. Make sure you drain any excess water.
  • Add the cooled pasta to a large bowl, add chopped celery, diced red bell pepper, chopped cucumber, cherry tomatoes, crumbled feta cheese.
  • Then add the juice of one medium lemon on top of the pasta and vegetables. Add mayonnaise, dill, salt and pepper and mix until combined. Place the pasta salad in the fridge for at least 30 minutes to build flavour. Serve and enjoy.

1 cup mayonnaise (, whole egg best (Hellmann's, Best Foods, S&W or other whole egg mayonnaise))
1 cup sour cream (, full fat (low fat ok too))
3 tbsp cider vinegar
1 tbsp Dijon mustard
4 tsp sugar
1 1/2 tsp garlic powder
2 tsp salt

Steps:

  • Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.
  • Dressing: Mix Dressing ingredients in a bowl. Set aside 10 minutes+.
  • Cook bacon: Place bacon in a cold non-stick skillet (Note X). Turn stove on to medium high, then cook bacon until golden. Drain on paper towels.
  • Toss! Place cooked pasta in a large bowl along with all the Pasta Salad ingredients, reserving some bacon for garnish. Pour over Dressing, then toss well.
  • Set aside for 20 minutes. Transfer to serving bowl, sprinkle with remaining bacon. Serve!

salt and pepper (to taste)
16 ounces small pasta (like farfalle or rotini)
1 cup small broccoli florets
1 cup diced cucumber
1 pint grape tomatoes (halved or quartered)
1/2 cup mayonnaise
1/2 cup plain Greek yogurt (or sour cream)
1/2 cup grated Parmesan cheese
3 tablespoons lemon juice
1 teaspoon lemon zest
1 tablespoon olive oil
1 garlic clove (minced)
½ teaspoon black pepper
½ teaspoon kosher salt

Steps:

  • Heat a tablespoon of olive oil in a large skillet over medium heat. Season chicken with salt and pepper and add to the skillet. Cook for about 4 minutes per side (2-3 for tenders), or until no longer pink. Steps:

  • Cook pasta al dente. Drain and rinse with cold water. Toss with olive oil.
  • While the pasta is cooking, season and cook the chicken.Slice the chicken breasts horizontally into thin halves. Mix chili powder, paprika, garlic powder, lemon juice and salt. Rub the chicken with the spice mix. Keep it aside for 10 minutes.
  • Heat oil in a non-stick pan and sear the chicken breasts on medium-high heat. Cook covered for 3 to 4 minutes on one side, flip and cook the other side for 3 minutes. (note 2)

2 1/2 Cups Chicken Broth
1/3 Cup Mayonnaise
1/3 Cup Sour Cream
1 Tbs Dijon Mustard
1 Tbs Seasoned Salt
6 Slices Bacon (Cooked)
1 Bunch Green Onion (Diced)
1/2 Cup Cheddar Cheese (Grated)
Salt and Pepper (To Taste)

Steps:

  • Place Chicken Broth in Instant Pot or Pressure Cooker and add Pasta
  • Set Instant Pot to Manual/Pressure Cook for 4 minutes with a 4 minute Natural Pressure Release
  • Remove Pasta and rinse under cold water. Drain and place in bowl. Set aside.

1 tsp salt
2 stalks celery
1/2 red capsicum
1 carrot (approximately 80 grams)
2 spring onions (both the white tip and half of the stem)
1/2 cup mayonnaise (110 grams)
1/2 cup greek style natural yoghurt (120 grams)
2 tsp dijon mustard
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Place a large saucepan which has been half filled with water onto your stove and bring to the boil.
  • Add the salt and macaroni and cook for 8 - 10 minutes or until the pasta is cooked al dente. Carefully drain and seta side to cool.
  • In the meantime, finely dice the red capsicum, celery and spring onions. Grate the carrot and set aside until needed.
  • In a small bowl, add all of the dressing ingredients and mix well to combine.
  • Place the cooled pasta into a large serving bowl and add the diced/grated vegetables plus the dressing. Gently fold with a large spoon to combine all of the ingredients.
  • Cover the bowl with cling wrap (or a beeswax wrap) and place the pasta salad into the fridge for 2 hours to chill.

1/4 lb rotelle pasta or 1/4 lb other spiral-shaped pasta, cooked and drained
3/4 lb cooked chicken breast, cut into bite-sized pieces (about 1 1/2 cups)
5 cherry tomatoes, quartered
2 scallions, sliced thin
1 tablespoon finely chopped fresh basil leaf
1 tablespoon unsalted butter
1/2 teaspoon minced garlic
1 teaspoon minced ginger
1/4 cup heavy cream
1 tablespoon white wine vinegar
3/4 teaspoon curry powder
dried red pepper flakes, to taste
2 tablespoons mango chutney (or to taste)

Steps:

  • In a large bowl combine the pasta, chicken, tomatoes, scallions, and basil. Set aside.
  • In a skillet, melt the butter over low heat. Add the garlic and ginger and cook until the garlic is softened.

1 (16 ounce) package Ditalini pasta (or whatever pasta you have on hand)
1 cup broccoli florets (chopped)
1/2 red onion (minced)
1 red bell pepper (minced)
1 cucumber (diced)
1 (3.8 ounce) can sliced olives (drained)
1 cup block Colby Jack cheese (cubed)
1 cup Mayonnaise
2 teaspoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Cook pasta according to package directions for al dente. Rinse well with cold water until pasta is cold.
  • Place cooked and cooled pasta in a large mixing or serving bowl.
  • Mix in broccoli florets, red onion, red bell pepper, cucumber, sliced olives and cheese.
  • Whisk together all dressing ingredients and pour over pasta and other ingredients.
  • Gently fold in dressing until all ingredients are evenly coated.
  • Cover with plastic wrap and store in the refrigerator for at least 1 hour before serving.

8 ounces tubetti or other small tube-shaped pasta
1 1/4 cups 2% percent Greek yogurt
1/2 cup mayonnaise
2 teaspoons apple cider vinegar
1 teaspoon dijon mustard
1/3 cup chopped fresh dill
1 tablespoon chopped fresh chives
1 rotisserie chicken
2 stalks celery, chopped
1 Kirby cucumber, peeled, halved lengthwise, seeded and chopped
Freshly ground pepper
8 cups mesclun greens

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and rinse under cold water to stop the cooking.
  • Meanwhile, whisk the yogurt, mayonnaise, 1/4 cup water, the vinegar, mustard, dill, chives and 2 teaspoons salt in a medium bowl. Remove the skin from the chicken and shred the meat into large pieces. Add the chicken, celery and cucumber to the dressing and gently stir to combine.
  • Shake the excess water from the pasta and add it to the chicken salad. Season with pepper and toss. Serve over the greens.

  • Cook the pasta following pack instructions. Meanwhile, mix the red pepper with the cherry tomatoes and chicken. Mix the pesto and crème fraîche. Drain the pasta, then stir it through. Toss through the veg and chicken and eat immediately, or pack into a container for lunch.
