Olive oil, for the grill grates
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup grated Parmesan, plus more for serving
1/4 cup sour cream
1 tablespoon fresh lemon juice
1/4 teaspoon finely grated garlic
8 ounces skirt steak (about 1/2 inch thick)
8 ounces penne or cavatelli
1 cup shredded carrots
1/2 cup thinly sliced celery
1/4 cup finely chopped red onion

Steps:

  • Heat a grill or grill pan over medium-high heat until hot; brush the grates with the oil. Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, Parmesan, sour cream, lemon juice, garlic, 1/2 teaspoon salt and a few grinds of pepper in a large mixing bowl.
  • Season the steak generously with salt and pepper. Grill the steak, turning once, 3 to 4 minutes per side for medium rare. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch slices.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the mixing bowl.
  • Add the steak, carrots, celery and onion to the mixing bowl and toss to combine. Season with salt and pepper. Serve sprinkled with more Parmesan and black pepper.

1/2 teaspoon kosher salt
1/8 teaspoon fresh cracked black pepper

Steps:

  • In a small bowl, whisk together greek yogurt, buttermilk, and mayonnaise until well combined.
  • Add parmesan cheese and combine well.
  • Add remaining ingredients and whisk until smooth. Add more buttermilk if needed to get your desired consistency.
  • Transfer to a glass container and allow to chill for at least one hour, preferably overnight.
  • Store in a glass container in the refrigerator for up to 5 days.

4 garlic cloves, minced
2 tablespoons butter
3 cups chicken broth, or more as needed
½ teaspoon ground black pepper

½ pound spaghetti
1 cup grated Parmesan cheese
¾ cup heavy cream
1 ½ tablespoons dried parsley

Steps:

  • Heat olive in a medium pan over medium heat. Add garlic and stir until fragrant, 1 to 2 minutes. Add butter and stir constantly until melted. Pour in chicken broth; add pepper and salt. Bring to a boil. Add spaghetti and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Add more chicken broth if pasta starts to stick to the pan.
  • Stir Parmesan cheese, cream, and parsley into the pasta and mix thoroughly. Serve immediately.

1 tsp each:
Paprika
Garlic Powder
onion powder
Salt
oregano
1 hard boiled egg (peeled and diced)
1 small red pepper (diced)
1/4 small onion (diced)
1 celery stalk (diced)
10 pepperoni slices (quartered)
1/2 c grated parmesan cheese (as fresh as possible)
1 piece fresh parsley or 1 tsp. dried

Steps:

  • Boil noodles. Combine mayonnaise, seasonings and egg. Mix until creamy. Add the diced vegetables, pasta, pepperoni and grated parmesan. Mix well. Add salt to taste. Top with chopped fresh parsley.
  • Can store covered in refrigerator for 2-3 days.

Plus, I love the fact that I have something which everyone can eat in my summer gatherings. Even anyone with egg/fish allergy will not have to stay away from this Caesar Pasta Salad because I dress it in homemade vegetarian Cesar dressing!Honestly, I love to bring something to potlucks which everyone can enjoy. With lots of my friends shifting to vegetarian diet in summers. So, such all-veggie salads fill the gap. Also, there is only that much cooked on grill at a time.. while burgers are grilling, filling salads such as this pasta salad are something everyone like to snack on.So, what do you say? Let's make summers gathering more exciting one bowl at a time! Let's make some Caesar Pasta Salad! Remember, Vegetarian Caesar Salad dressing recipe that I shared a few weeks ago? This Caesar salad uses that as a base. Since Pasta Salads need more creamy base dressing than leafy salads.. I replaced two things in this recipe for more creamy texture. Don't worry both are vegetarian and don't get watery when on potluck buffet table for long. 1) I replaced butter milk from earlier recipe with thick Greek non-fat yogurt. Greek yogurt is healthier and easy way to brighten up creamy dressings without much fat or eggs.2) I also added 1/2 of cup of olive oil veganaise (an egg free alternative to regular mayo). You can also use mayo if you prefer. The above two made a creamy dreamy Caesar salad dressing which works perfect in pasta Caesar salad.To make Caesar Pasta Salad, I start by boiling some water to cook pasta. Different pasta cooks in different time. It is always good to read directions on Pasta Package to ensure it is cooked al-dente. For pasta salads, I like to cook pasta al-dente which means it still has some bite. This way it does not get mushy while cooling down or while sitting in the dressing.Note: Pasta or pasta salad, it is important to season cooking water with generous amount of salt. As pasta cooks, it absorbs water and gets seasoned. If water is well seasoned, cooked pasta will taste delicious own it's own in pasta salad or otherwise it will be bland.So, while pasta cooks, I mix a batch of Caesar dressing. Like I said, for today's recipe, I used all plant-based ingredients which makes this pasta salad fully vegetarian. It does not mean that you can't make chicken Caesar pasta salad with it. Just add some grilled chicken/rotisserie chicken. You can also use this easy all-purpose baked chicken recipe.That's it. Once pasta has cooked and cooled, and dressing is ready. I mix pasta into dressing with tomatoes, cucumber, romaine lettuce, green onions, and some more parmesan cheese. If packing for potluck, I don't mix in croutons and leave those for last minute. Even though croutons stay good and soak in some dressing like a Panzanella Bread Salad.. I still prefer add'em at last for that extra crunch. Speaking of crunch, even though this is a pasta salad.. this salad has lots of crunch. Cucumber, croutons, romaine lettuce! Pure yumm! Isn't it great to update classics? Honestly, Caesar Pasta salad is not an upgrade.. Pasta and Caesar Salad are made for each other. Don't just believe my words. Try it! You will fall in love, how creamy nutty Caesar dressing brings pasta, romaine lettuce and croutons together. I added cherry tomatoes since they are in season and give nice color to pasta salad.. plus cucumber because I love crunch of fresh cucumber in salads. 2 Lettuce, romaine hearts, chopped
1 and 1/2 Cup Cherry Tomatoes, or heirloom cherry tomatoes, whole not halved
1 Cucumber, hot house, sliced into half moons
3-4 Green Onion, only green parts, thin sliced
1-2 Cup Croutons
1 tbsp Capers
1 tsp Soy Sauce
1/2 Cup Vegenaise, olive oil vegenaise or regular mayonaise
1/3 Cup Yogurt, greek plain low-fat yogurt
3 tbsp Olive Oil, 2 tsp and rest divided
2 tsp Mustard, dijon mustard
2 tbsp Lemon, juice
1 tsp Garlic, 2 cloves, grated
1/2 tsp Black Pepper, freshly cracked
1 tbsp Capers, rough chopped
1/3 Cup Parmesan Cheese, more for serving

Steps:

  • Cook pasta according to package directions. Once pasta has cooked, run it through cold water, drain well, then transfer it to a wide salad bowl, add 2 tsp oil, toss well and set aside to cool completely.
  • To make dressing, in a wide salad bowl, add all dressing ingredients i.e. capers, soy sauce, yogurt, olive oil, vegenaise (or mayo if using), mustard, lemon juice, garlic, and black pepper with 1/3 cup parmesan cheese. Mix well with whisk and set aside.

16 ounces small pasta (like farfalle or rotini)
1 cup small broccoli florets
1 cup diced cucumber
1 pint grape tomatoes (halved or quartered)

1/2 cup plain Greek yogurt (or sour cream)
1/2 cup grated Parmesan cheese
3 tablespoons lemon juice
1 teaspoon lemon zest

  • Heat a tablespoon of olive oil in a large skillet over medium heat. Season chicken with salt and pepper and add to the skillet.   • Cook pasta in a stock pot according to package directions.
  • In a saucepan melt the butter over medium heat.
  • Add in minced garlic and flour. Cook and whisk until it's combined and starts to thicken.
  • Add in cream, chicken broth, salt and pepper.
  • Continue to cook and stir until the mixture thickens up. Reduce the heat to low and stir constantly as it thickens.
  • Remove pan from heat and add in the Parmesan cheese and parsley. The cheese will begin to melt, so stir until all combined well.
  • Drain the cooked pasta. Add the cheese mixture to the hot pasta.
  • Stir until mixed together well.
  • Sprinkle with additional cheese and parsley for serving.

Creamy Parmesan Pasta Salad with White Beans and Sun-dried Tomatoes image

Cannellini beans and sun-dried tomatoes mingle with farfalle in a creamy Parmesan and oregano dressing.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup grated Parmesan
1/4 cup sour cream
1 tablespoon fresh lemon juice
1 teaspoon chopped fresh oregano
1/4 teaspoon finely grated garlic
8 ounces dried farfalle
One 15-ounce can cannellini beans, rinsed and drained
3/4 cup oil-packed sun-dried tomatoes, drained and chopped
1/2 cup thinly sliced celery

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, Parmesan, sour cream, lemon juice, oregano, garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the cannellini beans, sun-dried tomatoes and celery to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.
