This quick and easy side dish can be made with ingredients you probably already have on hand. It's great served with chicken, pork chops or fish. -Angela McArthur, Snover, Michigan

Number Of Ingredients 6

2 cans (14-1/2 ounces each) chicken broth
1 cup uncooked long grain rice
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/4 cup grated Parmesan cheese
2 teaspoons minced fresh parsley

Steps:

  • In a large saucepan, heat 2 cups broth, reserving remainder, over medium heat. Bring to a boil; stir in rice, salt and garlic powder. Reduce heat; simmer, covered, until most of the liquid is absorbed, about 20 minutes., Stir in Parmesan cheese. Add reserved broth, 2 tablespoons at a time, stirring constantly, until liquid is absorbed after each addition. Cook just until creamy and rice is almost tender, 5-10 minutes. Stir in parsley. Serve immediately.

2/3 cup brown rice
5 g butter
1 egg
1/4 cup grated parmesan cheese
1 lemon, juice of
pepper
1/4 cup fresh parsley, chopped

Steps:

  • Cook the rice for 30 minutes, until tender.
  • Beat the egg and stir in the parmesan, lemon juice and pepper.
  • Stir the rice into the egg and cheese mixture.
  • Simmer for 5 minutes.
  • Stir in chopped parsley and serve.

Creamy Parmesan Garlic Rice image

A simple side dish recipe for creamy rice with garlic, butter and parmesan cheese. Like risotto but easy!

4 tablespoons butter
2-3 cloves garlic, minced
1 cup uncooked white rice
1 cup water
1 1/3 cups milk
1/2 teaspoon salt
1/3 cup fresh grated parmesan cheese
1 tablespoon fresh chopped parsley (or 1/2 tsp dried)
Additional milk or cream, if desired

Steps:

  • Sauté garlic and rice in butter in a medium-sized saucepan over medium heat until garlic is fragrant (about 3-4 minutes).
  • Add water, milk and salt then bring to a boil. Reduce heat to low (or maybe a little higher depending on your stove - you want to keep it at a slight simmer), cover and cook for 20-25 minutes or until rice is tender, stirring occasionally. Don't mess around with your rice too much - just stir occasionally with a fork to make sure it's not sticking to the bottom.
  • Stir in parmesan cheese and parsley. Taste for salt then add more if necessary. If you would like yours to be creamier, stir in a little more milk or cream.
  • Cover, turn off heat and let rest for 5 minutes. Enjoy!

4 quarts water
2 cups arborio rice or medium-grain rice (12 to 13 ounces)
1 cup chopped onion
1/2 cup chopped fresh parsley
6 tablespoons (3/4 stick) butter, cut into small pieces, room temperature
1/4 cup chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon grated lemon peel
1 cup (packed) plus 2 tablespoons grated Parmesan cheese (about 3 ounces)
Fresh basil sprigs

Steps:

  • Bring 4 quarts water to boil in large pot over high heat. Add rice and onion. Boil until rice is just tender, about 16 minutes. Drain, reserving 1/2 cup cooking liquid.
  • Mix parsley, butter, basil, lemon juice, and lemon peel in large bowl. Add hot rice mixture; stir to melt butter. Add reserved 1/2 cup cooking liquid and 1 cup cheese; stir. Season with salt and pepper. Sprinkle with 2 tablespoons cheese. Garnish with basil sprigs and serve.

3 tablespoons unsalted margarine or 3 tablespoons extra virgin olive oil
2 shallots, chopped
1 garlic clove, minced
1/2 cup fresh button mushroom, sliced
2 tablespoons scallions, chopped
1/4 teaspoon dried dill or 1 teaspoon fresh dill, chopped
1 cup short-grain brown rice
salt, to taste, if needed
fresh coarse ground black pepper, to taste, if needed
2 cups stock or 2 cups water
1/3 cup grated parmesan cheese
chopped fresh Italian parsley, garnish

Steps:

  • Melt butter or margarine in heavy non-stick saucepan over medium heat.
  • Saute shallots, mushrooms and garlic, about 3-4 minutes, until tender.
  • Stir in scallions and dill.
  • Saute another 1-2 minutes.
  • Add rice and saute stirring frquently, until rice begins to crackle.
  • Add seasoning, if using.
  • Stir in liquids, increase heat to high and bring to a boil.
  • Reduce heat to low and cover tightly.
  • Simmer for 45 minutes.(DON'T REMOVE COVER).
  • Remove from heat and stir in Parmesan until melted.
  • Sprinkle with chopped parsley before serving.

This is creamy and delicious, you may also add in some frozen thawed peas or canned drained sliced mushrooms or fresh sauteed, if you are not a garlic lover then omit the fresh garlic or you may use 1/2 teaspoon or more of garlic powder --- if you love risotto then you will love this rice!

3 tablespoons oil (or as needed to cover bottom of the saucepan can use butter or half of each)
1 medium onion, finely chopped
3 garlic cloves, chopped (can use more)
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 1/2 cups water
1 cup milk
1/2 cup grated parmesan cheese (more to mix in after cooking if desired)
1 cup uncooked long grain white rice
1/2 teaspoon fresh ground black pepper (or to taste)
salt (optional and to taste)

Steps:

  • Set oven to 400 degrees F (or 350 degrees F for air-convection oven).
  • Set oven rack to second-lowest position.
  • Heat oil in a medium oven-proof saucepan over medium-high heat; add in onion and saute until softened (about 4 minutes).
  • Add in garlic; cook stirring for about 2-3 minutes.
  • Add in the next 5 ingredients; stir over medium heat until smooth and bubbly.
  • Mix in the rice, then season with black pepper and salt.
  • Cover with a tight-fitting lid.
  • Bake for 30 minutes.
  • Remove from oven and stir the mixture ( the saucepan will be hot so handle carefully holding with a tea towel).
  • Return to oven and continue baking uncovered for another 10-15 minutes or until the rice is soft.
  • You may mix in more Parmesan cheese if desired.
  • The rice is best if served immediately.

  • Heat the oven to 350°F or 180°C.
  • Put the rice, stock, cream, garlic and parmesan into an ovenproof casserole dish.
  • Cover with foil and put in the oven to cook for 40-45 minutes.
  • Check on the rice at 35 minutes- stir it gently and lay knobs of butter over the top. Re-cover and put back in the oven to finish cooking.
  • When the rice is done- stir, serve immediately and enjoy!
