A very delicious rice dish. I like it because it taste really good and I don't even like cream of mushroom, but it's good like this. I got it from my mother-in-law

cream of mushroom soup
rice
canned peas (optional)

Steps:

  • First start cooking your rice.
  • Add butter into your rice as it is cooking.
  • Do not add salt.
  • if you do only add a pinch of salt.
  • Then cook your cream of mushroom soup, add little to no milk or water.
  • You want your cream of mushroom soup to be like gravy and not soup.
  • Use Cambell's soup as it's the best for this.
  • When it's all done mix the rice and soup together.
  • You can also mix in canned peas, but that is optional.
  • Now you can dish it up and eat, but be careful dish is very hot and may burn your mouth.

3 cups chicken broth
1/3 cup wild rice
1/2 cup sliced green onion
1 cup half-and-half or 1 cup light cream
2 tablespoons all-purpose flour
1 teaspoon snipped fresh thyme
1/8 teaspoon pepper
1/2 cup sliced fresh mushrooms
1 tablespoon dry sherry

Steps:

  • In a medium saucepan, combine chicken broth and uncooked wild rice.
  • Bring to a boil.
  • Reduce heat and gently simmer, covered, for about 40 minutes.
  • Stir in green onions and cook an additional 5 - 10 minutes or until the rice is tender.
  • Combine half and half or light cream, flour, thyme and pepper.
  • Stir into the rice mixture along with the mushrooms.
  • Cook and stir until thickened and bubbly.
  • Cook and stir for one minute more.
  • Stir in sherry and heat through.
  • Test for seasonings. Add a little more sherry if desired.
  • Serve in heated bowls.
  • Note: You can use 1/4 teaspoon dried thyme if you don't have fresh thyme.

I used a recipe for a creamy mushroom soup as the base, and spruced it up a little. The result is a creamy, rich, hearty soup that is surprisingly low in calories.

4 cups water
2 vegetable bouillon cubes
2 teaspoons olive oil
1 garlic clove, minced
1/2 teaspoon butter
3 tablespoons cornstarch
2 cups cooked brown rice
8 ounces mixed mushrooms, sliced
1 stalk celery, cut into large pieces

Steps:

  • Place 1/2 cup cold water and the corn starch in a bowl with a well-fitting lid. Shake vigorously until combined. (You can also combine them in a blender.).
  • In medium soup pot, heat garlic and olive oil. Add mushrooms; saute until soft.
  • Add remaining ingredients, except rice. Cover and simmer about 20 minutes.
  • Remove about half the mushrooms. Use an immersion blender to fully puree soup. (You can also put half the mushrooms, the celery, and 1 cup of liquid into a blender and blend until smooth.).
  • Return the rest of the mushrooms to the pot, and add cooked rice. Cook until heated through, about 5 minutes.

  • Add 2 tablespoons butter to a Dutch oven and place over MEDIUM-HIGH heat. Add the mushrooms and cook, stirring, occasionally, until they are tender and browned and have absorbed most of the liquid they've let off, about 5 to 6 minutes. Add Worcestershire and cook until it is absorbed by the mushrooms, 1 to 2 minutes more. Remove from heat and transfer the mushrooms to a plate and set aside.
  • Melt the remaining butter in the same Dutch oven over MEDIUM-HIGH HEAT. Add the onion, celery, and carrot and cook, stirring occasionally for about 5 minutes, or until veggies have softened. Add the garlic, thyme leaves, rubbed sage, smoked paprika, salt and pepper, and cook for another minute or two, stirring the mixture well to coat the veggies with the spices.
  • Reduce the heat under the Dutch oven to MEDIUM and sprinkle the flour over the vegetables. Cook, stirring for 2 to 3 minutes. Slowly pour in the chicken broth, stirring as you add it to ensure the mixture is smooth. Add the uncooked rice and return the mushrooms to the pot. Increase the heat as needed to bring the soup to a boil, stirring occasionally. Cover, turn the heat down to LOW and simmer for 45 to 50 minutes or until the rice is tender.
  • Add the half and half or whole milk. Stir until it is well incorporated and remove from the heat. Taste and season with additional salt and pepper, if needed. Garnish with additional thyme leaves and serve.
