These are not the flimsy, thin lemon bars you see all over the internet! My recipe makes the best lemon bars ever - thick shortbread crust with that creamy tart lemon filling! If you've been disappointed with other recipes you have to give my recipe a try - I know you will love it.

Provided by Dorothy Kern

Categories     Dessert

Time 1h5m

Number Of Ingredients 10

1/2 cup powdered sugar
2 cups all purpose flour
1/4 teaspoon salt
4 large eggs
1 1/2 cups sugar
Zest of 1 medium lemon
Pinch of salt
1/2 cup fresh lemon juice (from about 4 medium lemons)
Powdered sugar (for topping)

Steps:

  • Preheat oven to 350°F. Line a 9x9 or an 8x8 pan with foil and spray with nonstick cooking spray.

Add powdered sugar, flour, and salt and mix slowly until the mixture is crumbly but sticks together when you press it between your fingers. Press the crust into the bottom of the prepared pan. Bake for about 13 minutes, or until it just starts to get a light golden brown around the edges.
  • While the crust is baking, whisk the eggs until beaten. Whisk in the sugar, lemon zest, salt, and lemon juice. Pour over hot crust, then continue to bake for 15-18 minutes, or until the mixture is no longer liquid in the center and it's lightly golden brown on top.

CREAMY LEMON SQUARES

Creamy Lemon Squares image

These sunny lemon squares have a sweet lemon taste and amazing lemon flavor. For me, it's like lemonade squares.

Provided by 100krecipes

Categories     Dessert

Time 45m

Number Of Ingredients 6

- 4 tbsp unsalted butter, melted;
- 24 squares graham crackers;
- ¼ cup of sugar.
- 2 egg yolks;
- 1 can (14oz) sweetened condensed milk;
- ½ cup of lemon juice.

Steps:

  • Preheat oven to 350°F.
  • Butter and line an 8-inch square baking pan with parchment paper (leave some paper hanging on two sides, it will help to remove the creamy lemon squares).
  • Break up the graham crackers. Then, add them to a food processor. Pulse until crumbled. Add sugar and melted butter. Pulse one more time until combined.
  • Add this crumble mixture to the prepared pan. Then, press this mixture firmly into the bottom and 1 inch up the sides of the pan to create a crust.
  • Bake in the preheated oven for 10-12 minutes, or until lightly browned. Let the crust cool completely in the pan.
  • Make the creamy filling while the crust is cooling. Add condensed milk and egg yolk to a bowl. Whisk until smooth. You can use an electric mixer or use a whisker. Then, add fresh lemon juice and whisk until well combined.
  • When the graham cracker crust has cooled, pour this creamy lemon filling into it. Bake in the preheated oven for 15-20 minutes, or until the filling is set and the crust is browned. Let the creamy square completely cool in the pan on a cooling rack. You can also refrigerate the lemon squares after cooling to room temperature; it makes the creamy lemon squares firmer. Then, remove the lemon square from the pan using the hanging parchment paper, and place it on a cutting board. Cut the lemon square into 16 mini squares or 9 bigger squares.

CREAMY LEMON BAR RECIPE

Creamy Lemon Bar Recipe image

Easy lemon bars made from scratch, with a buttery shortbread crust and sweet/tangy lemon filling!

Provided by The Chunky Chef

Categories     Dessert

Time 37m

Number Of Ingredients 13

1/2 cup salted butter (melted and cooled slightly)
1 cup plus 2 Tbsp all purpose flour
3 Tbsp powdered sugar
1 Tbsp cornstarch
3 large eggs (at room temperature)
1 1/2 cups granulated sugar
zest of 1 lemon
1/2 cup lemon juice (fresh is absolutely best)
6 Tbsp all purpose flour
1 1/2 Tbsp buttermilk
1/2 tsp baking powder
powdered sugar
lemon slices (optional)

Steps:

  • Preheat oven to 350 degrees F. Line an 8x8" baking pan with aluminum foil or parchment paper, lightly sprayed with cooking spray. Set aside.
  • Combine crust ingredients (melted butter, flour, powdered sugar and cornstarch) in a mixing bowl, then press into bottom of prepared pan. Keep crust in an even layer, as much as possible. Bake 10 minutes, then set aside.
  • While crust is baking, combine filling ingredients (eggs, sugar, zest, juice, flour, buttermilk, and baking powder), and whisk to combine. Try not to whisk too vigorously, as you don't want to incorporate a lot of air into the filling.
  • Pour over baked crust and bake (still at 350 degrees F), for 22-25 minutes, until filling has set and edges are lightly golden brown.
  • Cool completely on a wire rack for at least 1-2 hours, cover with foil, then refrigerate.
  • To slice bars, I find it easiest to lift up on the foiling lining in the pan, to remove the bars from the pan. Slice into 12 bars. Before serving, dust bars with powdered sugar and garnish with a lemon slice if desired.

  • Add oats, almonds, sea salt, and coconut sugar to a high speed blender and mix on high until a fine meal is achieved.
  • Transfer to a medium mixing bowl and add maple syrup and melted coconut oil, starting with lesser end of range (4 Tbsp or 60 g as original recipe is written // adjust if altering batch size) and adding more if it's too dry. Stir with a spoon to combine until a loose dough is formed. You should be able to squeeze the mixture between two fingers and form a dough instead of it crumbling. If too dry, add a bit more melted coconut oil.
