No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
½ teaspoon lemon zest
½ teaspoon salt
1 pinch ground black pepper
½ cup milk
1 cup sour cream
½ cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.
  • Melt the butter in a large skillet over medium heat. Add the onion and parsley; cook and stir until onion is tender. Whisk in flour until blended, then mix in the lemon zest, salt, and pepper. Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.
  • Remove from the heat and toss briefly with some of the Cheddar cheese and French fried onions, saving some of each to sprinkle over the top. Spoon into a 1 1/2 quart casserole dish and top with the reserved onions and cheese.
  • Bake in the preheated oven until the cheese melts, about 15 minutes.

Creamy, comforting green bean casserole made completely from scratch. This undeniably rich side dish will put that thanksgiving turkey to shame! For make-ahead option and freezing instructions, see recipe note.

1 large onion
1/2 cup (62g) all-purpose flour (spoon & leveled)
3/4 cup (45g) Panko breadcrumbs*
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large egg
1 Tablespoon (15ml) milk
1 Tablespoon + 1 teaspoon salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 Tablespoons (30g) unsalted butter
8 ounces mushrooms, sliced into halves or quarters*
1/2 teaspoon ground black pepper
2 cloves garlic, minced (minced roasted garlic is great here)
2 Tablespoons (15g) all-purpose flour
3/4 cup (180ml) chicken or vegetable broth
1 and 1/4 cups (300ml) half-and-half*

Steps:

  • Preheat the oven to 475°F (246°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • (while the onions bake, you can blanch the green beans- step 4.) Thinly slice the onion. Pour flour in one small bowl, Panko + salt + pepper into a medium bowl, and whisk the egg and milk together in another small bowl. To bread the onion slices, you'll want to use one hand for dry and one hand for wet. It helps things move a little quicker and easier. First, dip a few slices into the flour. Then into the egg mixture. And finally, give them a nice dunk into the Panko and coat them well. Place onto baking sheet. Repeat with the rest of the onions. Bake onions until golden brown, about 25 minutes. Flip them twice during this time. Set them aside.
  • Reduce oven to 400°F (204°C).
  • Bring a gallon of water and 1 Tablespoon of salt to a boil in a large saucepan. Add the beans and blanch for 5 minutes. Drain and immediately place into a large bowl filled with ice water to stop the cooking process. Drain again and set aside.
  • Over medium-high heat, melt the butter in a large 10 - 12 inch ovenproof skillet. Add the mushrooms, 1 teaspoon salt, and the pepper. Cook, stirring occasionally, until the mushrooms begin to give off some of their moisture- about 5 minutes. Add the garlic, stir, and cook for another 2 minutes. Sprinkle the flour on top and stir until combined. The flour will soak up all the moisture. Add the chicken broth and simmer for 3 minutes. Decrease the heat to medium-low and add the half-and-half. Stirring occasionally, cook until the mixture is thick- about 10 minutes or maybe more if you prefer a thicker sauce.
  • Remove from the heat and add 1/4 of the onions and all of the green beans. Give it a nice stir, combining the sauce and beans. Top with remaining onions and bake until bubbly, about 10-15 minutes. Remove from the oven and enjoy! Leftovers keep well in an airtight container in the refrigerator for up to 4 days. Reheat as desired.

This is my own version of Green Bean Casserole, It uses a different ingredient, but I think it's the best. I hope You will like it too :) This recipe is what I make for holidays, but you can certainly scale it down to suit the amount you want to make. It does make less than it seems though, especially if you use the French style green beans (not to mention how good left overs are). Exact measurements aren't really neccesary though so don't be afraid to make less or more. For one can beans I'd use 2oz cream cheese and 1/3 can of cream of chicken.

3 (11 ounce) cans French style green beans (the ones sliced the long way)
4 ounces cream cheese, softened to room temp
1 cup French-fried onions
1 (10 1/2 ounce) can cream of chicken soup
salt and pepper
1 pinch garlic powder

Steps:

  • Heat over to 350°F and grease a 9x9 or whatever sized dish you want to use. I don't suggest a 9X13 but anything smaller will do.
  • Drain green beans VERY well, and mix with softened cream cheese, the soup, a pinch of garlic powder and salt and pepper to your liking.
  • Add 1/2 cup of the french friend onions.
  • Pour into greased pan and cover loosely with foil. Bake for about 25 minutes Then remove cover and stir.
  • Add remaining french fried onions to the top and bake uncovered for another 20 to 30 minutes Until it's bubbly and looks done.
  • Cool for at least 5 minutes and enjoy! :).

You can make a delicious, homemade green bean casserole using fresh ingredients and no cans for your holiday meal. It's so much better made from scratch.

1 ½ pounds (650g) green beans
2.8-ounce pack (79g) French's crispy fried onions
2 tablespoons butter
12 ounces (340g) mushrooms (thinly sliced)
1 teaspoon salt
¼ teaspoon ground black pepper
2 cloves garlic (minced)
3 tablespoons all purpose flour (I used GF and it worked fine)
1 ½ cups (350ml) vegetable stock
½ cup heavy whipping cream
⅛ teaspoon ground nutmeg

Steps:

  • Wash the fresh green beans, remove the ends, and cut them in half. Partially cook the green beans by blanching them for 5 minutes and then shocking them in ice water for 5 minutes. You can also steam them in the microwave (Place the green beans in the microwave with 2 tablespoons of water, cover with a microwave-safe plate and cook for 5 minutes).
  • Preheat the oven to 400°F/200°C.
  • To make the mushroom sauce, in a saucepan or pan melt the butter over medium heat.
  • Add the mushrooms, season with salt and pepper and cook until they start to soften.
  • Add garlic, and cook for 30 seconds then add the flour and cook for 30 more seconds. Add the flour, and cook for 30 seconds to 1 minute.
  • Gradually add the stock, about ½ a cup at a time and keep stirring until all the stock is in. Stir in the heavy cream, and simmer for 1 more minute. Stir in the nutmeg, taste the sauce, and adjust the salt and pepper to your preference. Remove from heat.
  • Assemble. In a casserole dish, mix the green beans with the sauce and bake for 15 minutes or until bubbly.
  • Remove from the oven, top with the crispy onions, and bake for 5 more minutes (the onions will change their color a little to golden brown, and become even more crispy).
