9 oz dry bowtie pasta
1 medium cucumber ((chopped))
½ medium bell pepper ((sliced))
½ cup red onion ((sliced))
1½ cups grape tomatoes ((sliced in half))
1 6 oz can whole black olives
1½ cups crumbled feta
½ cup spicy chili peppers
¼ cup balsamic vinegar
¼ cup olive oil
½ cup ranch dressing
½ tsp dried oregano
½ tsp sea salt
¼ tsp black pepper
1 Tbsp sea salt ( (to salt boiling water))

Steps:

  • Add water and 1 tablespoon of salt to a six-quart Dutch oven. Bring to a boil, then add pasta.
  • Stir the pasta to keep it from sticking together and cook for ten minutes, or according to package directions. Drain the pasta in a strainer and rinse with cold water.
  • Add cucumber, bell pepper, red onion, tomatoes, black olives, and hot chili peppers to a medium-sized bowl. Add pasta to the bowl and mix to combine.
  • Whisk dressing ingredients together in a measuring cup. Pour dressing over the pasta salad and gently mix to combine.
  • Sprinkle feta cheese over the pasta salad and fold in until completely incorporated. Chill and serve as a side or appetizer.

1 pound fusilli pasta, you can also use penne, rigatoni, farfalle or elbow macaroni pasta
2 large tomatoes, diced
2 small Persian cucumbers, diced (or about 1 cup chopped English cucumber).
1/2 red onion, finely chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 cup sliced olives
7 oz (200 grams) feta cheese, cubed or crumbled
1 cup corn kernels (I buy them frozen and cook them in boiling water for 2 minutes)
1 cup strained Greek yogurt 2% fat (you can also use full fat)
1/2 cup parsley, chopped
1-2 teaspoons dried oregano
2-3 tablespoons e.v. olive oil
Salt and pepper to taste

Steps:

  • Take care to chop all the vegetables about the same size.
  • Cook the pasta according to the directions on the package, drain well using a colander and rinse with cold water until no longer warm. Set aside to drain.
  • Transfer all the ingredients to a large bowl and mix gently with a spatula until everything is combined. Taste and adjust salt.
  • Serve immediately or refrigerate for 1 hour to chill.
  • Eat!

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

1 cup broccoli florets (chopped)
1/2 red onion (minced)
1 red bell pepper (minced)
1 cucumber (diced)
1 (3.8 ounce) can sliced olives (drained)
1 cup block Colby Jack cheese (cubed)
1 cup Mayonnaise
2 teaspoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Cook pasta according to package directions for al dente. Rinse well with cold water until pasta is cold.

1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1 -2 garlic clove, minced fine (depending on how strong you want your dressing)
1 teaspoon dried oregano (mediterranean)
1 tablespoon chopped fresh dill
salt & freshly ground black pepper
3/4 cup feta cheese, crumbled
3/4 cup buttermilk (or milk, but buttermilk is best, use 1/2 a cup if you want to use this as a dip)

Steps:

  • In a blender or food processor, whirl all the ingredients except the buttermilk for one minute.
  • With the blender running, slowly pour in the buttermilk and blend until thick and creamy (turn off the blender as soon as the dressing thickens or it may curdle).
  • Chill at least 1 hour so the flavours meld.
  • Refrigerate, tightly covered.
  • This makes nearly 2 cups of dressing and stays fresh for 3-4 days.
  • If the dressing separates, just give it a whizz in the blender again.

250 grams dried macaroni pasta
1 tsp salt
2 stalks celery
1/2 red capsicum
1 carrot (approximately 80 grams)
2 spring onions (both the white tip and half of the stem)
1/2 cup mayonnaise (110 grams)
1/2 cup greek style natural yoghurt (120 grams)
2 tsp dijon mustard
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Place a large saucepan which has been half filled with water onto your stove and bring to the boil.
  • Add the salt and macaroni and cook for 8 - 10 minutes or until the pasta is cooked al dente. Carefully drain and seta side to cool.
  • In the meantime, finely dice the red capsicum, celery and spring onions. Grate the carrot and set aside until needed.
  • In a small bowl, add all of the dressing ingredients and mix well to combine.
  • Place the cooled pasta into a large serving bowl and add the diced/grated vegetables plus the dressing. Gently fold with a large spoon to combine all of the ingredients.
  • Cover the bowl with cling wrap (or a beeswax wrap) and place the pasta salad into the fridge for 2 hours to chill.
