CREAMY CHICKEN FLORENTINE



Creamy Chicken Florentine image

Creamy Chicken Florentine is an amazingly flavorful weeknight dinner made in just 30 minutes! Made with mushrooms, spinach, and Parmesan!

Number Of Ingredients 12

4 boneless, skinless chicken breasts
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 cup button mushrooms (sliced)
2 cloves garlic (minced)
2 cups baby spinach
1/2 cup dry white wine ((pinot grigio or sauvignon blanc))
2 cups whole milk ((or heavy cream))
1/2 cup Parmesan cheese (fresh grated)
1/2 teaspoon salt
Pepper (to taste)

Steps:

  • Place a large skillet over medium heat. Melt 1 tablespoon butter and olive oil together. Cook chicken for 5 minutes per side until golden brown and no longer pink.
  • Remove chicken from pan, transfer to a plate, and cover to keep warm.
  • To the same pan, add mushrooms and a pinch of salt and saute until tender. Remove from pan. Wipe out the pan.
  • Return skillet to heat. Melt remaining butter and garlic. Cook for 30 seconds to 1 minute until fragrant. Stir in flour and cook for 1 minute to remove the raw flour taste.
  • Add wine to the skillet to deglaze and simmer for 3 minutes until the sauce begins to thicken.
  • Add milk and cook, stirring frequently, until sauce thickens. Add Parmesan cheese. Continue to stir until cheese is melted. Add salt and pepper to taste.
  • Add spinach to the sauce and cook until wilted Add mushrooms back in and stir into sauce.
  • Return chicken to pan. Spoon sauce over chicken. Serve warm.

4 boneless skinless chicken breasts
Salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons (3/4 stick) unsalted butter
2 tablespoons shallots, sliced
1 tablespoon chopped garlic
1 1/2 cups dry white wine
1 cup whipping cream
1 tablespoon chopped fresh Italian parsley
2 (10-ounce) packages frozen cut-leaf spinach, thawed, drained

Steps:

  • Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
  • Melt 2 tablespoons of butter in the same skillet over medium heat. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute. Add the wine. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes. Stir in the parsley. Season the sauce, to taste, with salt and pepper. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce.
  • Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 (14 ounce) can artichoke hearts, drained and chopped
3 cloves garlic, minced
½ cup mayonnaise
2 (8 ounce) packages cream cheese, softened
2 tablespoons lemon juice
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a medium bowl, mix together the cream cheese and mayonnaise until smooth. Mix in the artichoke hearts, spinach and Parmesan cheese. Season with garlic and lemon juice. Spread evenly into the prepared baking dish.
  • Bake covered for 20 minutes. Remove the cover, and let the dish bake uncovered for 5 more minutes, or until the surface is lightly browned.

Studded with capers, garlic and anchovies, the dip comes together quickly, then sits in the refrigerator, ready to buy you time should your guests arrive early while the rest of the meal runs late.

3 ounces cream cheese, at room temperature
2 tablespoons mashed or finely chopped anchovies
1 cup sour cream
1/4 cup chopped flat-leaf parsley
3 tablespoons chopped chives
2 teaspoons chopped capers
1 tablespoon lemon juice
1/2 garlic clove, minced
Salt and black pepper to taste
Sliced vegetables or sturdy potato chips, or both, for serving

Steps:

  • Using a wooden spoon, blend the cream cheese and anchovy paste together in a medium bowl. Add the sour cream, parsley, chives, capers, lemon juice and garlic, season with salt and pepper, then stir until well blended. Place in the refrigerator for several hours to season.
  • Spoon the dip into a bowl and serve with sliced vegetables or potato chips, or both.

3 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 cup diced mushrooms
1 teaspoon Italian seasoning
¼ teaspoon salt, or more to taste
⅛ teaspoon ground black pepper
½ cup oil-packed sun-dried tomatoes, drained and finely chopped
1 cup cooked spinach, squeezed dry and finely chopped
5 ounces cream cheese, diced
2 large eggs
1 cup milk
1 ½ cups shredded mozzarella cheese, or more to taste
1 tablespoon grated Parmesan cheese
½ pound cooked chicken breast, diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over medium-high heat. Add onion and saute until tender, about 5 minutes. Add mushrooms and continue to cook until they begin to wilt, about 3 minutes.
  • Stir in Italian seasoning, salt, and pepper; cook until moisture from the mushrooms has evaporated, 3 to 5 minutes. Add sun-dried tomatoes and stir thoroughly. Add spinach and stir until incorporated. Remove from the heat and gently stir in cream cheese until melted and creamy.
  • Beat eggs with a whisk in a large glass measuring cup. Whisk in milk. Pour mixture into the skillet and mix until thoroughly combined. Stir in mozzarella and Parmesan cheeses; it's okay it they do not melt. Stir in chicken. Spread mixture in a 2-quart glass baking dish and sprinkle with up to 1/2 cup mozzarella, if desired.
  • Bake in the preheated oven until beginning to bubble near the middle, 20 to 30 minutes. Remove from the oven and transfer the hot dip to a serving dish.

2 (10-ounce) packages spinach chopped, thawed and drained
1 tablespoon onion minced
2 cloves garlic minced
1 teaspoon salt
1/2 teaspoon allspice ground
1 cup mayonnaise real
1 cup plain yogurt
2 sourdough bread round (7" each)

Steps:

  • Place spinach, onion, garlic, salt and allspice in a food processor bowl cover and process until smooth. Transfer to a medium bowl. Stir in mayonnaise and yogurt. Cover and chill.To serve, cut off top of one loaf of bread. Remove bite-size pieces of bread from inside of loaf leaving about a 1/2 -inch shell. Tear top and second loaf into bite-size pieces. Spoon spinach mixture into bread shell. Place on a round serving plate and surround with bread pieces.
