CHEESY HAM CASSEROLE
This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

Steps:
- Preheat oven to 400°F. Mix together topping ingredients, set aside.
- Cook shells al dente according to package directions. Drain well.
- Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
- Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
- Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
- Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
- Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
- Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

- Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. MACARONI WITH HAM AND CHEESE

- Preheat the oven to 425 degrees.
- Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.
- Meanwhile, cut the ham into 1/2-inch cubes and set aside. There should be about 2 cups.
- Slice the mushrooms. There should be about 2 cups.
- Cut the Cheddar into slices about 1/4 inch thick. Stack the slices and cut them into 1/4-inch-wide strips. Cut the strips into 1/4-inch cubes. There should be about 2 cups.
- Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste.
- Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute. Add the cheese sauce, the cayenne and cream. Cook, stirring, about 1 minute.
- Pour and scrape the mixture into the macaroni and mix well. Transfer to a buttered 10-cup baking dish. Sprinkle the top with Parmesan cheese and place in the oven. Bake 10 minutes. Turn the broiler to high.
- Brown the macaroni and cheese under the broiler until the top is nicely browned, 2 to 3 minutes.

- Preheat oven to 450 degrees.
- Make a white roux by melting the butter and adding flour. Gradually add the milk to the pan, whisking away any lumps. Bring the sauce to a full boil; reduce to a simmer, stirring frequently. Simmer until sauce is smooth and flour is cooked out (about 20 minutes). Season with salt, pepper and nutmeg.
- Warm the béchamel. Add half of the Gruyère. Remove immediately from the heat. The cheese should just lightly melt into the béchamel.
- Add the cooked macaroni and ham to the béchamel cheese mixture. The consistency should be fairly loose but not soupy. Add milk if needed to loosen. Season to taste with fine sea salt and freshly ground pepper.
- Place mixture in a greased casserole. Top with the rest of the Gruyère cheese and the bread crumbs.
- Place in oven until the cheese is bubbly and crisp (about 4 to 6 minutes). Do not overcook. It should still be quite moist. Serve immediately.
- Note: For the bread crumbs, use day-old sourdough bread slices and let them dry out. Grind in processor or crush in a zippered bag until super-fine. Pass through a fine-mesh tami (sieve) so the bread crumbs are like dust.
