SMOKED APPLE COBBLER

Who says you need an oven to make a cobbler? This quintessential fall dessert is even better with the touch of smoke you get from baking it on the grill.

Number Of Ingredients 9

8 apples (about 4 pounds), peeled, cored and sliced (try a mix of Granny Smith and Gala)
1 teaspoon pure vanilla extract
1/3 cup plus 3 tablespoons granulated sugar, plus more for sprinkling
8 tablespoons cold unsalted butter, cubed
Kosher salt
1 1/2 cups all-purpose flour (see Cook's Note)
1 tablespoon baking powder
1/2 cup buttermilk
Vanilla ice cream and caramel sauce, for serving

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. If using gas, add soaked wood chips for additional smoky flavor (be sure to consult the grill manufacturer's guide for best results). If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.
  • Put the apples, vanilla, 1/3 cup of the sugar, 2 tablespoons of the butter and a pinch of salt in a large bowl and toss to combine. Transfer to a 10-inch cast-iron skillet. Set aside.
  • Combine the flour, baking powder, the remaining 3 tablespoons sugar, and a pinch of salt in a food processor and pulse to combine. Add the remaining 6 tablespoons butter and pulse until the butter pieces are no larger than peas. Add the buttermilk and pulse until the dough just starts to come together in a ball.
  • Drop rounded tablespoons of the dough all over the apples. Sprinkle generously with sugar. Transfer the skillet to the direct heat side of the grill, cover the grill and cook, rotating the skillet halfway through, until the apples on the sides of the pan are bubbling and golden brown, 15 to 20 minutes. Move the skillet to the indirect side of the grill, cover the grill and cook until the dough is cooked through and golden on top, about 15 minutes more.
  • Remove the skillet from the grill and let cool for 10 minutes. Serve the cobbler topped with ice cream and caramel sauce.

Topping:
• 2 tablespoons butter softened
• 1/2 cup self-rising flour
• 1/2 cup sugar
• Pinch salt
• Pinch ground ginger
• 1 egg beaten

Steps:

  • Directions Preheat oven to 375 degrees F. Lightly butter a 9 by 9-inch baking dish. In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish. Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream. Ginger Whipped Cream • 1 cup whipping cream, chilled • 1/4 cup confectioners' sugar • 1/4 cup candy ginger, minced Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.

2 1/2 cups peeled, cored and sliced Granny Smith apples
2 1/2 cups peeled, cored and sliced Bosc pears
3/4 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon table salt
4 tablespoons unsalted butter, softened, divided
1/2 cup self-rising flour
1/2 cup sugar
1/4 teaspoon salt
1 egg, beaten
2 tablespoons unsalted butter, softened
Ice cream, for serving
Whipped Cream, for serving, recipe follows
1 cup heavy whipping cream
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F. Butter or spray a 9 by 9-inch baking dish.
  • Toss the apples, pears, sugar, flour, vanilla, cinnamon, allspice, salt, and 2 tablespoons of the butter together in a large bowl. Add to the prepared baking dish and dot with the remaining 2 tablespoons of butter.
  • In another bowl, combine the self-rising flour, sugar, salt, and egg. With a spoon, drop the topping onto the apples and top with pats of butter. Bake until the crust is golden and the fruit is tender the cobbler for 40 to 45 minutes. Serve with vanilla ice cream and Whipped Cream.
  • In a large bowl, add the heavy cream and using a hand mixer beat it for 1 minute. Add the sugar, cinnamon, and nutmeg. Whip until the cream mixture holds soft peaks.

RIBS WITH BIG DADDY RUB



Ribs with Big Daddy Rub image

5 pounds St. Louis style ribs
2 cups Big Daddy Rub, recipe follows
2 liters cola (recommended: Coca-Cola)
4 cups water
Apple Cider Buttermilk Dipping Sauce, recipe follows
3 cups brown sugar
1/4 cup kosher salt
1/4 cup smoked paprika
2 tablespoons ground cumin
2 tablespoons hot chili powder
2 tablespoons cayenne
2 tablespoons freshly ground black pepper
2 tablespoons red pepper flakes
2 cups apple cider
1/4 cup granulated sugar
1 tablespoon red pepper flakes
2 tablespoons buttermilk
1 teaspoon lemon juice
1 teaspoon lemon zest

Steps:

  • Preheat oven to 350 degrees F.
  • Rub ribs with 1 cup Big Daddy Rub until evenly coated on both sides. Allow ribs to marinate at room temperature for 30 minutes.
  • Place ribs in 2 large roasting pans and cover with the cola and water. Cover with foil and cook in oven for 1 1/2 hours. Remove ribs from oven and allow to cool. Slice ribs into individual-size pieces.
  • Preheat grill over medium-high heat.
  • Place ribs on the grill. Brush on apple cider-buttermilk sauce. Cook for additional 5 minutes.
  • In a large bowl, toss ribs with another 1 cup of rub until well coated. Spread ribs out on a sheet tray and bake in the oven for an additional 20 minutes until caramelized.
  • Serve alongside Apple Cider Buttermilk Sauce, chipotle aioli, or harissa rouille.
  • In a medium sized bowl, mix all ingredients until well combined.
  • In a medium pot add apple cider, sugar and red pepper on medium high heat. Reduce by half. Pour mixture into a separate bowl. Add buttermilk. Mix thoroughly and add lemon juice and zest.

10 mint sandwich cookies, broken into pieces
1 cup chocolate covered mint candies
1 cup marshmallow sauce
1 cup chocolate sauce
Whipped cream, for garnish
Fresh mint leaves, for garnish

Steps:

  • Place 2 scoops ice cream into 4 bowls. Sprinkle the cookie pieces and mint candies around the ice cream in the bowls and drizzle each sundae with marshmallow and chocolate sauces. Garnish with whipped cream and mint leaves. Serve immediately.

8 cups apples, peeled, cored and sliced thin (Granny Smith works great)
1/2 cup sugar
1 tablespoon lemon juice
2 ounces unsalted butter, cut into small pieces
1 cup all-purpose flour
3 tablespoons sugar
Pinch salt
2 teaspoons baking powder
2 ounces unsalted butter
8 tablespoons light cream
1 teaspoon vanilla extract

Steps:

  • Heat oven to 400 degrees
  • Combine apples, sugar and lemon juice. Dot with butter. Set aside.
  • Toss to mix well. Pour into 3- to 4-inch deep baking dish. Dot with butter. Set aside.
  • Combine flour, sugar, salt and baking powder in mixing bowl. Using your fingers, cut in butter until mixture looks crumbly and butter is the size of small peas. While stirring slowly, add cream and vanilla. Mix just until batter comes together. Drop batter in mounds on top apple mixture. Drizzle top with a little additional melted butter and sprinkle with sugar. Bake 35 to 45 minutes, until golden.

1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.
