CREAMY TOMATO SLOW-COOKER CHICKEN
Spend ten minutes assembling these ingredients in the morning, and come home to a ready-to-eat chicken dinner. It's delicious served over pasta, rice or quinoa.

Steps:
- Spray 3- to 4-quart slow cooker with cooking spray. Arrange chicken in bottom of slow cooker. Top with garlic, basil, oregano and pepper.
- In separate bowl, stir together Alfredo sauce, tomatoes and tomato sauce until well combined. Pour mixture over chicken.
- Cover; cook on Low heat setting 5 to 6 hours.
- Ten to 15 minutes before serving time, cook pasta as directed on package. In small bowl, stir together cornstarch and water; stir into mixture in slow cooker. Increase heat setting to High; cook uncovered 5 to 10 minutes longer.
- Serve chicken with pasta; top with cheese.

- Heat olive oil in a medium skillet over medium-high heat. Add onions and garlic. Cook, stirring often until fragrant, about 30 seconds. Place in the bottom of a slow cooker.
- Add plum tomatoes, vegetable broth, tomato sauce, parsley sprigs, salt, and sugar to the slow cooker. Cover and cook on High until tomatoes are stewed, 3 to 4 hours. Remove parsley sprigs.
- Puree the soup using an immersion blender.
- Stir half-and-half into pureed soup. Cover and cook until heated through, 20 to 30 minutes.

CROCK POT CHICKEN WITH TOMATO AND CREAM OF CHICKEN SOUP
Okay, so I'm looking at my pantry which is all but bare and my wallet which looks a helluva lot like my pantry and thinking, "Okay... how the hell am I gonna pull this one off?" Well, this is how. Since this recipe is based on "whatever the hell I got in the pantry", be flexible with it, play around.

- Saute onions and garlic with oregano in 1 tablespoons butter in a wide pan. When onions have browned, remove and set aside.
- Rinse and pat chicken dry. Split the quarters and salt and pepper each side.
- Brown the halved chicken quarters in same pan. It'll probably take two batches, use 2 tablespoons butter per batch.
- Leaving the excess butter in the pan, put the onions and garlic back in the pan, along with the soups, milk, water and 1 tablespoons dry sherry and bring to a rapid simmer (I dunno what to call it, but it's the time just before a slow boil, when all the bubbles are rolling around but not popping out of the pan like if it's boiling). Whisk a lot while it's heating up, getting all those yummy bits from the bottom of the pan.
- Reduce heat to medium or medium-low and start adding your hot sauce 1 teaspoons at a time until it tastes just right (5 shakes = roughly a tsp.). Salt and pepper to taste, keeping in mind that most hot sauces have a lot of salt in them already.
- Put chicken and sauce in crockpot on Low for 6 to 7 hours.

SLOW COOKER CHICKEN TORTELLINI TOMATO SOUP
This satisfying soup is an excellent one-pot dinner to come home to after a long day. It takes only 10 minutes to throw it together in the morning and 10 minutes to finish it in the evening. If you plan to be away for eight hours or more, set the cook time for four hours, then set the slow cooker to auto-switch to warm for the remaining time. (This prevents overcooking.) If you'll be home when the soup is done and can remove it from the heat, it's best to cook the chicken for five to six hours. Add only the tortellini you will eat right away. Leftover tortellini will get mushy.

- In a 6- to 8-quart slow cooker, whisk together the stock, wine and tomato paste until the paste dissolves. Stir in the tomatoes, vinegar, garlic, oregano, onion powder, red-pepper flakes and salt. (If you are using unsalted stock, add an additional 1/2 teaspoon salt.) Add the chicken and stir to combine. Cook on low until the chicken is very tender and the flavors are blended, 5 to 6 hours.
- Increase the heat to high for 10 minutes. Coarsely shred the chicken with two forks, pressing pieces of chicken against the side of the slow cooker to break the thighs apart. Stir in the spinach so that it wilts into the soup.
- Stir in the tortellini, cover the slow cooker, and cook until the tortellini are al dente and warmed through, about 3 minutes. Taste the soup and add salt if it tastes flat. Ladle the soup into bowls and serve with Parmesan, basil and black pepper.
CREAMY CROCKPOT TOMATO SOUP
I came up with this recipe for my family as an alternate to canned tomato soup. It is rich and creamy and just perfect on a winters night! It's a big favorite in our house and I hope you enjoy it as much as we do! Makes a fantastic soup to dip those yummy grilled cheese sammies in! ;o)

- Combine the undrained tomatoes & chicken broth; still well and add oregano & basil.
- Cook on high for 4-6 hours. Strain tomato chunks and place in blender; puree until no bits remain.
- Add cream to the tomato/broth mix in the crock pot and stir well.
- Add the tomato puree back to the broth mix and heat through.
- Serve in crocks or bowls and top with pats of butter, croutons, sour cream, shredded cheese, or whatever you like!
