GRAMMY'S CRANBERRY JELLO SALAD
This is a holiday staple for my family. My Grammy got this recipe from her mother. Grammy passed it down to my aunt who has now passed the torch to me. :)

Steps:
- Drain pineapple, reserving juice.
- Add water to make 1 cup.
- Boil; add Jello, stirring to dissolve.
- Stir in ginger ale.
- Blend pineapple and cranberry sauce.
- Fold into Jello.
- Chill in 9x9 inch dish.
- Make Dream Whip according to package directions.
- Beat in cream cheese.
- Spread over Jello and top with pecans.
- May add 1/4 to 1/3 cup powdered sugar to topping, if desired.
- Skip the nuts if you don't like them. Also, I tend to buy two of the smaller cans of cranberry sauce, one jellied, one chunky -- I like the extra texture. AND -- make this the night before or your frosting will be runny!

I got this recipe from an issue of Taste of Home and it has become a huge family hit. Requested all year round. Quickly fixes in one dish. Cranberry Jello-o can be used and so can sugar free, tastes great no matter.

Steps:
- Open and drain all liquid from pineapple.
- In casserole dish fix Jell-o with hot water only, stir until dissolved.
- Add can of cranberry sauce (I use a whisk to help break it up and remove from can).
- Gently stir until thoroughly mixed.
- Add pineapple, stir.
- Cut whole strawberries into halves or quarters, gently stir berries into jell-o mixture.
- Cover and refrigerate until set, usually a few hours.
- As salad sets out some watering effect will occur, but not harmful.
- Cooking time is refrigeration time.

- In a bowl, combine the cranberries and sugar; cover and refrigerate for 8 hours or overnight., In a large saucepan, combine the cranberry mixture and gelatin. Cook and stir until gelatin is completely dissolved; cool. Fold in the yogurt and whipped topping. Pour into a 2-qt. serving bowl. Sprinkle with pecans. Refrigerate for 2 hours or until firm.

- Mash jellied cranberry sauce in a 3-quart bowl. Stir gelatin mix thoroughly into cranberry sauce. Pour boiling water into mixture and stir until gelatin has dissolved completely, about 3 minutes.
- Chill in refrigerator until softly set, 2 to 3 hours. Gently fold sour cream into gelatin mixture, leaving marbled streaks of sour cream and gelatin mix. Return to refrigerator until firmly set, 4 hours to overnight. Store leftovers in refrigerator.

- Process cranberries in blender or food processor; pour sugar over cranberries and stir to dissolve.
- Bring 3/4 cup of water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries, and add pineapple, orange juice, apple and pecans. Mix well, cover and refrigerate overnight.
- Whip cream and beat in cream cheese.
- In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture.
